Steps:
- Place vinegar in a large soup pot and bring to a boil. Add potatoes and boil for 5 minutes. Remove from heat, cover, and let sit for 30 minutes.
- Line a baking sheet with paper towels. Drain potatoes but do not rinse. Arrange potato slices on the baking sheet, making sure none are overlapping. Cover the top of the potatoes with paper towels. Repeat layers until all potatoes have been dried.
- Preheat an air fryer oven to 400 degrees F (200 degrees C) according to manufacturer's instructions. Place the basket rack in the top slot. This will act as a shield so that the fan does not blow the chips around once they start to fry.
- Arrange potatoes slices on the remaining 3 racks and lightly sprinkle with salt. Place racks in the air fryer oven and cook for 10 minutes. Remove the top rack of chips and transfer chips to a plate. Set timer for 2 more minutes and then remove the next highest rack of chips. Set timer for 1 minute for the final rack of chips. Serve immediately.

SALT AND VINEGAR ROASTED POTATOES
This recipe turns the classic potato-chip flavor into a dinner party-worthy side dish. The potatoes get a double hit of vinegar: First, they are roasted in a simple vinaigrette, then are tossed with another smack of acidity just before serving. Use white-wine vinegar for a stronger vinegar flavor, or apple cider vinegar if you want a subtler flavor.

APPLE CIDER VINEGAR POTATO CHIPS
These will fix your salty/cruncy cravings...and go great with your favorite sandwich too! Just be patient enough to let the potatoes hang out in the vinegar a couple of hours - it is worth it! I like the fact you know what's in them and they are fresh and crispy.

- 1. Steam the potatoes until tender (this takes 20–30 minutes). When cooked, turn off the heat, pour off the water from the saucepan below the steam pan, and then sit the perforated pan on top of the empty, hot saucepan with the lid off to dry the potatoes.
- 2. Preheat the oven to 425°F. Pour the oil into a small, shallow roasting pan and heat it in the oven for 5 minutes.
- 3. Tip the potatoes out onto a plate, and crush with a fork, but not too thoroughly. You want some of them crumbling into small pieces, but mostly think of more-or- less halving, leaving rough edges, the better to crisp and brown in the oven.
- 4. Take the roasting pan out of the oven, carefully turn the potatoes in the oil, and then roast for 20 minutes, then turn them and cook for a further 10 minutes until they are a deep golden brown in parts and the rough edges are crisp; the smaller pieces will be dark and crunchy.

- Using a mandoline, thinly slice the unpeeled potatoes to a 1/8-inch (3-mm) thickness. Place the potato slices in a bowl, pour the 2/3 cup of cider vinegar over them, and stir to coat all the slices. Let the potatoes soak while you are preparing your frying pan or preheating the oven, which will probably take about 30 minutes or so.
- To fry your salt and vinegar potato chips, fill a deep fryer or a deep saucepan with about 6 inches (15 cm) of oil and heat to 350°F (175°C). In a colander set in the sink, drain the potato slices. Gently blot them completely dry with a clean towel. Carefully lower a few slices at a time into the oil and fry until golden brown, 3 to 5 minutes. Take care not to crowd the chips or they won’t cook evenly. Repeat with the remaining potatoes, ensuring that the oil maintains a steady temperature of 350°F (175°C). Remove the chips and place them on paper towels or a brown paper bag to drain and cool for a few minutes, then toss with 1 tablespoon cider vinegar and sprinkle with sea salt. To bake your salt and vinegar potato chips, preheat the oven to 400°F (200°C). Line 2 rimmed baking sheets with aluminum foil and lightly slick the foil with oil. In a colander set in the sink, drain the potato slices. Gently blot them completely dry with a clean towel. Place the potato slices in a single laye
- Devour immediately. (Seriously. These homemade salt and vinegar potato chips don’t keep particularly well so go ahead and demolish the entire batch in a single sitting.)
