APPLE SUNDAES WITH CIDER CARAMEL SAUCE



Apple Sundaes with Cider Caramel Sauce image

The caramel apple takes a sophisticated turn in this dessert. Baked with butter, sugar, ginger, and cinnamon, the fruit goes soft and spicy before you finish it with a rich caramel sauce that's mostly made in the oven, plus vanilla ice cream and crushed store-bought amaretto cookies.

1/4 cup dark-brown sugar
1/4 cup granulated sugar
4 tablespoons unsalted butter, room temperature
1 tablespoon unfiltered apple-cider vinegar
4 to 5 firm red baking apples, such as Empire or Honeycrisp (2 pounds total)
1 teaspoon ground cinnamon
1 teaspoon grated fresh ginger (from a peeled 1-inch piece)
Pinch of kosher salt
1 tablespoon heavy cream
Vanilla ice cream and crushed amaretto cookies, for serving

Steps:

  • Preheat oven to 400 degrees. Stir together both sugars, butter, and vinegar until well combined. Spread mixture evenly in the bottom of a 9-by-13-inch baking dish.
  • Peel and core apples, then slice into 3/4-inch-thick rounds. Toss with cinnamon, ginger, and salt in a bowl. Place on top of sugar mixture in a single layer, overlapping slightly if needed. Cover with parchment-lined foil and bake until just beginning to soften and bubble, 20 to 25 minutes. Spoon sauce over apples, and increase heat to 450 degrees. Continue to bake, uncovered, until sauce thickens and apples are soft and brown, about 15 minutes more.
  • Divide apples evenly among 4 bowls. Whisk cream into liquid in baking dish to make a caramel sauce. Transfer to a bowl; let cool until thickened slightly, about 10 minutes. Top apples with ice cream, caramel sauce, and cookies; serve.

1 cup apple cider
½ cup heavy cream
½ cup granulated sugar
¼ cup light corn syrup
2 tbsp butter
½ tsp cinnamon
⅛ tsp nutmeg (ground)
⅛ tsp allspice (ground)
⅛ tsp ginger (ground)
1 ½ cups all-purpose flour
¼ cup granulated sugar
2 tsp baking powder
½ tsp salt
1 tsp dry milk powder
1 tsp cinnamon
¼ tsp nutmeg (ground)
1 large egg
½ cup milk
2 tbsp butter (melted)
oil for frying
3 tbsp sugar
1 tbsp cinnamon

Steps:

  • Make the apple cider caramel. Bring 1 cup apple cider to a boil over medium-high heat. Reduce heat to medium and continue to simmer until the cider has reduced to 2 tbsp.
  • Combine reduced apple cider with ½ cup heavy cream, ½ cup sugar, ¼ cup corn syrup, and 2 tbsp butter in a medium saucepot. Bring to a boil over high heat, then reduce to medium and continue to cook until a candy thermometer reads 230 degrees F. Remove from heat and stir in ½ tsp cinnamon, ⅛ tsp nutmeg, ⅛ tsp allspice, and ⅛ tsp ground ginger. Let cool.
  • Preheat frying oil to 350 degrees F.
  • Make the batter for the donut holes. Combine 1 ½ cups flour with ¼ cup sugar, 2 tsp baking powder, ½ tsp salt, 1 tsp dry milk powder, 1 tsp cinnamon, and ¼ tsp nutmeg. Beat 1 egg with ½ cup milk and add to the dry mixture along with 2 tbsp melted butter. The batter will be thick.
  • Combine 3 tbsp sugar with 1 tbsp cinnamon.
  • Scoop about 1-2 tbsp of the batter into the hot oil and fry until golden brown on all sides. Remove the donuts with a slotted spoon and drain the excess oil on a paper towel. Toss the donuts in the cinnamon sugar and repeat with the remaining batter.
  • Serve the donuts warm with apple cider caramel.

1 cup golden raisins
2/3 cup apple juice
2 tablespoons sugar
2 teaspoons ground cinnamon
1/8 teaspoon ground allspice
Vanilla ice cream
Granola or toasted wheat germ, optional

Steps:

  • In a large saucepan, combine the first six ingredients. Cover and cook over medium heat until the apples are tender. Remove from the heat; mash apples slightly. Let stand for 20 minutes. Serve over ice cream. Sprinkle with granola if desired.

  • Ina saucepan combine cider, sugar, cornstarch, lemon juice and cinnamon; stir until smooth.

  • Preheat the oven to 350°. In a food processor, combine the flour with 1/4 teaspoon of kosher salt. Coarsely grate the cold butter into the food processor. Pulse until the mixture resembles coarse meal. Add the shredded cheddar cheese and pulse twice. Add the cold water and cider vinegar and pulse just until the dough is evenly moistened. Turn the dough out onto a work surface and knead until it just comes together. Wrap the dough in plastic and refrigerate for at least 20 minutes or until chilled.
  • Line a baking sheet with parchment paper. On a lightly floured surface, roll out the dough to a 9-inch square and transfer to the baking sheet. Bake for about 40 minutes, until golden. Let cool.
  • In a large skillet, melt the butter. Add the apples and toss to coat. Add the granulated sugar, light brown sugar, cinnamon and nutmeg and season lightly with salt. Cook over moderately high heat, stirring frequently, until the apples are tender and translucent, about 15 minutes.
  • Add 1/2 cup of water to the skillet and bring to a boil. Remove from the heat. Transfer half of the apples to a blender or food processor and puree until smooth. Scrape the puree into a bowl and freeze until it is cold, about 30 minutes.
