A recent trip to New Orleans found me at Arnaud's French 75. It's where the French 75-a cocktail mixing Gin with Champagne-was first created. There have been many variations on this classic, and in honor of fall, I decided to try using sparkling apple cider to top it off. The apple cider worked beautifully, maintaining the effervescent qualities the French 75 is known for, while adding a little extra dimension in the flavor profile. The floral qualities from the Gin are somewhat subdued by this addition, but they are certainly not gone, especially with the remaining lemon juice to help the citrus notes come through. No need for the sugar syrup - the sparkling apple cider brings enough sugar to the party.

1.5 ounces Gin
½ ounce Lemon Juice
Top with Sparkling Apple Cider (approx. 2 ounces)
1 cup ice

Steps:

  • Fill shaker with gin, lemon juice and ice
  • Shake hard to chill and combine ingredients
  • Fine strain into coupe or flute
  • Top with sparkling apple cider
  • Garnish with apple fan

Here's what you need: gala apples, green apples, cinnamon sticks, ginger, whole clove, kosher salt, water, brown sugar

12 gala apples, or fuji apples, cored and cubed
2 green apples, cored and cubed
3 cinnamon sticks
1 ginger, thumb sized, peeled
2 teaspoons whole clove
1 pinch kosher salt
8 cups water
1 cup brown sugar

Steps:

  • Place the apples, cinnamon sticks, ginger, cloves, and salt in an 8-quart (7.5-liters) slow cooker. Pour the water over the apples.
  • Cover and cook on high for at least 8 hours, or overnight (up to 24 hours).
  • Remove the solids from the cider, pressing the pulp to extract as much liquid as possible.
  • Whisk in the brown sugar until dissolved.
  • Serve hot, or store in the refrigerator to serve later. Reheat before serving.
  • Enjoy!

10 apples, quartered
¾ cup white sugar
1 tablespoon ground cinnamon
1 tablespoon ground allspice

Steps:

  • Place apples in a large stockpot and add enough water cover by at least 2 inches. Stir in sugar, cinnamon, and allspice. Bring to a boil. Boil, uncovered, for 1 hour. Cover pot, reduce heat, and simmer for 2 hours.
  • Strain apple mixture though a fine mesh sieve. Discard solids. Drain cider again though a cheesecloth lined sieve. Refrigerate until cold.
