- Cut tenderloin crosswise into 12 slices; sprinkle with rosemary, thyme and celery salt. In a large nonstick skillet, heat oil over medium-high heat. Brown pork on both sides; remove from pan., In same skillet, combine apple, apple juice, cherries, honey and vinegar. Bring to a boil, stirring to loosen browned bits from pan. Reduce heat; simmer, uncovered, 3-4 minutes or just until apple is tender., Return pork to pan, turning to coat with sauce; cook, covered, 3-4 minutes or until pork is tender. Meanwhile, prepare rice according to package directions; serve with pork mixture.

- Combine first 3 ingredients in a heavy-duty, zip-top plastic bag. Add pork slices. Seal bag; shake well. Remove pork from bag, shake off excess flour.
- Combine apple juice and next 4 ingredients in a 2-cup glass measure; set aside.
- Coat a large nonstick skillet with cooking spray; place over medium-high heat until hot. Add pork; cook 1 minute on each side or until browned. Remove pork from pan.
- Add apple juice mixture to pan; bring to a boil, scrapping pan to loosen browned bits. Cook 5 minutes or until sauce is slightly thickened. Return pork to pan, reduce heat and cook 1 minute. Sprinkle with green onions.

- Puree the balsamic vinegar, garlic, and thyme in a blender until mixed. With the blender running, slowly pour in the olive oil until thickened and incorporated. Pour the marinade into a resealable plastic bag. Add the pork pieces, coat with the marinade, squeeze out excess air, and seal the bag. Marinate in the refrigerator for 30 minutes.
- Preheat an outdoor grill for medium heat, and lightly oil the grate. Remove the pork from the marinade, and shake off excess. Discard the remaining marinade.
- Cook the pork on the preheated grill until no longer pink in the center, about 10 minutes. An instant-read thermometer inserted into the center should read 145 degrees F (63 degrees C). Once cooked, remove from the grill, cover with aluminum foil, and allow to rest for 5 to 10 minutes before slicing.
- While the pork is cooking, melt the butter in a saucepan over medium heat. Stir in the brown sugar until it begins to simmer. Add the apples, cherries, ginger, cinnamon, and nutmeg. Cook and stir until the apple is tender, about 5 minutes. Serve the sliced pork topped with the apple compote.

- Flatten pork slices to 1/2 inch thickness.
- Combine the thyme, paprika, salt and pepper; sprinkle over both sides of pork.
- Broil 3-4 inches from the heat for 3-4 minutes on each side or until meat juices run clear; keep warm.
- In a nonstick skillet, saute onions and garlic in butter until tender.
- Add apples; cook and stir for 2 minutes or until apples are crisp-tender.
- Combine the cornstarch, broth and apple juice until smooth; stir into apple mixture.
- Bring to a boil; cook and stir for 1-2 minutes or until thickened.

- Trim any excess fat and remove the silver skin from the tenderloin. Slice into 3/4-inch thick slices, flatten slightly with the back of a spatula, then season on both sides with salt and pepper.
- Heat the oil in a large skillet over medium-high heat. Add the pork and cook until lightly browned, 2 minutes per side. Transfer to a plate and cover to keep warm.
- Reduce the heat to medium and add the butter to the pan. Add the onion and sauté until soft and translucent, 2 minutes. Add the garlic and continue cooking until fragrant, 1-1/2 to 2 minutes longer. Sprinkle with the curry powder and ground ginger and stir until blended. Add the apple and apple cider, combine well and simmer until the apple is tender but still chunky, 3 to 4 minutes. Season to taste with salt and pepper, then stir in the cream.
- Return the pork to the pan along with any juices that may have accumulated on the plate. Turn the medallions several times to coat with the sauce.

- I asked my butcher to give me two pieces of pork tenderloin that had the same thickness, cutting out the final parts, which are usually more slender.
- Wrap the pork tenderloin with lardo, aligned the lardo slices along the length of the tenderloin, until it is completely covered. Add also a few sprigs of thyme. Tie the pork tenderloin with the butcher's twine, leaving about a finger in between each piece of string.
- With a sharp knife, cut between each piece of string, so as to obtain medallions where the lardo is secured by a string.
- Pour two tablespoons of olive oil on the bottom of a large pan, add the sage leaves and the clove of garlic. Heat the olive oil until the garlic starts to sizzle, then add the medallions. Season with salt and pepper.
