This apple streusel cheesecake recipe is just the right amount of sweet and will have everyone wanting seconds. Our family has perfected it over the years and it's been a hit for all occasions.

1 ½ cups finely crushed graham cracker crumbs
¼ cup white sugar
6 tablespoons unsalted butter, melted
½ teaspoon ground cinnamon
2 medium Granny Smith apples - peeled, cored, and sliced
2 tablespoons brown sugar
1 teaspoon ground cinnamon
4 (8 ounce) packages cream cheese, softened
1 ½ cups white sugar
¾ cup whole milk
4 large eggs
1 cup sour cream
¼ cup all-purpose flour
1 tablespoon vanilla extract
¼ cup all-purpose flour
¼ cup packed brown sugar
2 tablespoons unsalted butter, melted

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 9-inch springform pan.
  • Combine graham cracker crumbs, sugar, melted butter, and cinnamon in a medium bowl. Press into the bottom of the prepared springform pan to form a crust.
  • Bake in the preheated oven until golden, 7 to 9 minutes. Cool to room temperature, 15 to 20 minutes.
  • While crust cools, mix apples, brown sugar, and cinnamon until coated and set aside.
  • Beat cream cheese and white sugar in a large bowl until smooth. Slowly add milk. Best in eggs one at a time. Stir in sour cream, flour, and vanilla extract on low speed or by hand until smooth. Do not overmix; you may have some small bits of cream cheese in the mix, but those will melt as the cheesecake cooks.
  • Pour 1/2 of the filling over the prepared crust. Arrange coated apples over the filling, leaving a 1/2-inch border. Top with remaining filling.
  • Bake in the preheated oven for 40 minutes.
  • While cheesecake is baking, combine flour, brown sugar, and melted butter in a bowl. Sprinkle quickly over the cheesecake. Continue baking until set, about 20 minutes more.
  • Turn the oven off but do not open the door, allowing the cheesecake to cool in the oven for at least 4 hours; this helps prevent cracking. Refrigerate to allow cake to fully set before serving, 2 to 4 hours more.

1/2 cup butter, softened
1/4 cup packed brown sugar
1/2 teaspoon ground cinnamon
1 cup all-purpose flour
1/4 cup quick-cooking oats
1/4 cup finely chopped walnuts
FILLING:
2 packages (8 ounces each) cream cheese, softened
1 can (14 ounces) sweetened condensed milk
1/2 cup thawed apple juice concentrate
3 large eggs, lightly beaten
TOPPING:
1 tablespoon butter
2 medium tart apples, peeled and sliced
1 teaspoon cornstarch
1/4 teaspoon ground cinnamon
1/4 cup thawed apple juice concentrate

Steps:

  • Preheat oven to 325°. In a bowl, beat butter, brown sugar and cinnamon until blended. Beat in flour, oats and walnuts until well blended. Press onto bottom and 1-1/2 in. up sides of a greased 9-in. springform pan. Place on a baking sheet. Bake 10 minutes. Cool on a wire rack., In a large bowl, beat cream cheese until fluffy. Gradually beat in milk and juice concentrate until smooth. Add eggs; beat on low speed just until blended (mixture will be thin). Pour into crust. Return pan to baking sheet. , Bake until center is almost set, 40-45 minutes. Cool on a wire rack 10 minutes. Loosen sides from pan with a knife. Cool 1 hour longer. Refrigerate overnight, covering when completely cooled., To serve, in a large skillet, melt butter over medium heat; saute apples until crisp-tender, about 5 minutes. Cool slightly., For glaze, in a small saucepan, mix cornstarch, cinnamon and juice concentrate until smooth; bring to a boil. Reduce heat; cook and stir until thickened, about 1 minute. Add 1 tablespoon glaze to sauteed apples; toss to coat., Remove rim from springform pan. Top cheesecake with apples. Drizzle with glaze. Serve immediately or refrigerate until serving.

1 (8-ounce) package cream cheese, softened
1/2 cup granulated sugar
2 tablespoons heavy cream
4 cups apples, diced
1/2 cup light brown sugar, packed
1 teaspoon cinnamon
2 teaspoon lemon juice
Powdered sugar for garnish
Caramel ice cream topping for garnish

Steps:

  • Thaw puff pastry on counter according to package directions (takes about 30-40 minutes). Heat oven to 400°F. Unfold pastry and cut along the two seems into 3 rectangles. Then cut horizontally, creating 6 pieces. Place on a parchment paper lined baking sheet and bake for 13-15 minutes until lightly browned. Remove from oven and cool completely. Once cooled, slice in half lengthwise through the center. Set aside or store in airtight container until ready to assemble. For the filling, beat cream cheese, sugar and cream together for 5 minutes, scraping down the sides of the bowl as necessary. Set aside, or refrigerate until ready to assemble. While thawing the puff pastry, peel and dice the apples until you have 4 cups. Place in a large saucepan with brown sugar, cinnamon and lemon juice. While stirring, bring mixture to a boil over medium high heat. Reduce to medium and cook for 5-8 minutes, until apples are fork tender. Remove from heat and cool. Once cooled, assemble napoleons or refrigerate apple mixture until ready to assemble. ASSEMBLY: Open all the puff pastries and evenly divide the cream cheese mixture on the bottom "bun". Top with caramel apple mixture. Place puff pastry tops on and sprinkle generously with powdered sugar. For added caramel flavor, drizzle with your favorite caramel sauce! Serve immediately after assembling!
