1 whole wheat tortilla
½ cup sharp cheddar cheese
1 apple (thinly sliced)
cooking spray

Steps:

  • Sprinkle cheese over half of tortilla. Layer on apple slices, barely overlapping. Add more cheese. Fold over other half of tortilla.
  • Liberally spray cooking spray on a skillet over medium high. Add quesadilla. Cook 2-3 minutes per side.
  • Allow apple cheddar quesadilla to cool completely before cutting and storing. (This will prevent quesadilla from getting soggy!) Enjoy warm or cold!

Eight 7 1/2-inch whole-wheat tortillas
2 cups grated smoked Cheddar
2 cups baby spinach
8 slices bacon, cooked and crumbled
2 Granny Smith apples, cored and thinly sliced
Nonstick cooking spray, for cooking
Sour cream, for serving

Steps:

  • Sprinkle 1 tortilla with some cheese, a small handful of baby spinach, bacon and sliced apples. Press another tortilla on top to make a quesadilla. Heat a nonstick skillet over medium-high heat and spray with nonstick spray. Cook the quesadilla on each side for 2 to 3 minutes until golden. Repeat with the remaining tortillas and fillings. Slice into wedges and serve with sour cream.

These quick and easy quesadillas filled with apple pie filling and Cheddar cheese make a yummy lunch, snack or appetizer.

6 large whole wheat tortillas (10-inch/25 cm)
2 cups (500 mL) E.D.SMITH® Apple Pie Filling
2 cups (500 mL) shredded mild white Cheddar cheese
2 tbsp (30 mL) butter

Steps:

  • Spread 1/3 cup (75 mL) apple pie filling over half of each tortilla leaving 1-inch border. Sprinkle with 1/3 cup (75 mL) cheese. Fold tortilla over to enclose filling.
  • Melt half the butter in a large skillet over medium heat. Cook quesadillas, in batches, for 2 to 3 minutes per side or until golden brown and cheese melts. Cut each quesadilla into 3 wedges.

  • Place several apple slices, barely overlapping, on top of cheese.
  • Then sprinkle 2 more tablespoons of cheese on top of apples and fold tortilla in half.

5 tablespoons honey mustard, divided
8 6-in. flour tortillas
6 ounces sharp Cheddar cheese, shredded (about 1½ cups)
2 Honeycrisp apples, thinly sliced (2½ cups)
5 tablespoons olive oil, divided
1 tablespoon plus 1 tsp. fresh lemon juice (from 1 lemon)
.25 teaspoon kosher salt
1 5-oz. pkg. fresh baby spinach
2 avocados, sliced (about 2 cups)
.25 cup roasted, salted pumpkin seeds (pepitas)

Steps:

  • Spread 4 tablespoons mustard evenly over tortillas. Top half of each tortilla with 3 tablespoons cheese and a heaping 1/4 cup sliced apples. Fold tortillas in half.
  • Heat 1 tablespoon oil in a large non-stick skillet over medium. Add 4 quesadillas; cook, flipping once, until golden brown in spots and crisp, 2 to 3 minutes per side. Transfer to a plate and cover loosely with aluminum foil to keep warm. Repeat with 1 tablespoon oil and remaining quesadillas.
  • Whisk lemon juice, salt, and remaining 1 tablespoon mustard in a large bowl. Gradually whisk in remaining 3 tablespoons oil until dressing is well-combined. Add spinach, avocados, and pumpkin seeds to bowl with dressing; toss to coat salad. Serve with quesadillas.

1/3 cup sugar
1/2 teaspoon cinnamon
butter-flavored cooking spray
2 cups apples, slices peeled and coared sliced thin
1/3 cup raisins
1/2 teaspoon rum extract
8 (6 inch) flour tortillas
1 1/2 cups shredded low-fat cheddar cheese

Steps:

  • Combine sugar and cinnamon in small bowl. Reserve 1 tablespoon sugar-cinnamon mixture; set aside.
  • Spray large skillet with cooking spray. Add apples; cook over medium heat until tender, stirring occasionally. Remove from heat; stir in remaining sugar-cinnamon mixture, raisins and rum extract. Top each tortilla evenly with cheese to within 1/2 inch of edge. Spread apple mixture over cheese. Spray medium nonstick skillet with cooking spray; heat over medium heat until hot. Place 1 tortilla in skillet, filling side up, and heat 1 minute. Remove from skillet; quickly fold in half. Cover and keep warm while heating remaining quesadillas.
  • To serve, cut quesadillas into 3 wedges. Sprinkle with reserved 1 tablespoon sugar-cinnamon mixture. Sprinkle quesadillas lightly with confectioner's sugar, if desired.
  • Microwave Directions Top tortillas as directed. Place 1 to 2 tortillas, filling sides up, on waxed paper. Microwave on HIGH (100% power) 30 to 60 seconds until warm. Remove from microwave; quickly fold in half. Cover and keep warm while microwaving remaining quesadillas. Serve warm.
