1 tsp Vanilla Extract
1 tsp Ground Cinnamon
3 Apples (peeled and cubed)
1/4 cup Walnuts (chopped)
2/3 cup Water
2 tbsp Vegetable Oil
2 Eggs
3 1/2 tbsp Splenda
2 cups Carbquik

Steps:

  • Preheat your oven to 325 and prep a pan for nonstick
  • Mix together your apples, nuts, cinnamon, and vanilla. Set this bowl aside.
  • In another bowl, beat together the liquid, oil, and the eggs. Set this aside
  • Now in a mixing bowl, combine together the sugar alternative and the Carbquick. You can sift this or use the method of your choice.
  • Slowly pour half of the contents from the wet bowl into the dry ingredient mixing bowl.Mix gently and then add the remainder.
  • Fold in the contents from the first bowl (apples etc) into the mixing bowl by hand. Bake this for an hour or until a toothpick comes out clean.

2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
½ teaspoon ground cinnamon
½ teaspoon ground nutmeg
½ teaspoon salt
1 ½ cups unsweetened applesauce
¾ cup brown sugar twin
2 eggs
1 teaspoon vanilla extract
½ cup raisins

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spray an 8x4 inch loaf pan with cooking spray.
  • Sift together flour, baking powder, baking soda, cinnamon, nutmeg and salt. Set aside.
  • Beat the eggs until light and add sugar twin. Add applesauce and vanilla.
  • Add flour mixture and beat until smooth. Fold in raisins.
  • Pour batter into loaf pan. Bake at 350 degrees F (175 degrees C) for about an hour, or until a toothpick inserted into cake comes out clean.

This easy Apple Cinnamon Muffin recipe contains no sugar, is flour free, and has no butter or oil. It is sweetened with dates and tastes amazing! Your family will enjoy the muffins and you will enjoy serving a healthy treat.

2 1/2 cups old-fashioned oats (plus 1/4 cup for garnish if desired)
1 cup dried dates (chopped)
1/2 cup water (boiling)
1 1/4 cup apple (diced, about 1 large apple)
¾ cup milk
2 large eggs
2 tsp real vanilla
2 tsp baking powder
½ tsp baking soda
½ tsp salt
2 tsp cinnamon

Steps:

  • Place diced dates into blender and pour boiling water over. Allow to sit for 5 minutes then blend until smooth.
  • Add diced apples and milk to the blender. Puree until smooth.
  • Add remaining ingredients and puree until oats are well ground, scraping down sides of blender as needed.
  • Line muffin tin with muffin papers and fill 2/3 full with batter, approximately 1/4 cup per muffin.
  • Sprinkle each muffin with 1/2 tsp old-fashioned oats, if desired.
  • Bake at 350 degrees Fahrenheit for 30-35 minutes, a toothpick inserted in the center of the muffin should come out clean.
  • Enjoy!

I developed this recipe from a blueberry muffin recipe, incorporating my diet preferences and using ideas from my Grandma's best cake.

100 g butter, softened
3 tablespoons honey
2 eggs
1 teaspoon vanilla
1 teaspoon baking powder
1/2 teaspoon cinnamon
250 ml sour milk
150 g porridge oats, ground or processed
100 g gluten-free flour
1 cup apple, chopped

Steps:

  • Notes: Cake can also be sweetened with dates by simmering dates in water until they are quite mushy and most of the water has been absorbed. I would use between 150-200g dates. Adjust baking powder to 1/2t if you use self-raising flour, and use whatever flour you prefer. Sour milk can be made by adding 1T vinegar or lemon juice to sweet milk.
  • Optional additions: raisins, sultanas or berries.
  • Combine butter and honey. Add eggs. Stir in vanilla, baking powder, and cinnamon, until well combined.
  • Alternate milk and flours, stirring each time until well combined.
  • Stir in apples and any other additions.
  • Bake in round or square baking tin at 175°C/350°F for about 30 minutes. Cake will be firm to the touch and a toothpick should come out clean.
