1 cup sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
2 large eggs, room temperature
1/2 cup butter, melted
1-1/4 teaspoons vanilla extract
1-1/2 cups peeled chopped tart apples
STREUSEL TOPPING:
1/3 cup packed brown sugar
1 tablespoon all-purpose flour
1/8 teaspoon ground cinnamon
1 tablespoon cold butter
GLAZE:
3/4 cup confectioners' sugar
2 to 3 teaspoons 2% milk
1 teaspoon butter, melted
1/8 teaspoon vanilla extract
Dash salt

Steps:

  • Preheat oven to 375°. Whisk together first 5 ingredients. In another bowl, whisk together eggs, melted butter and vanilla; add to flour mixture, stirring just until moistened (batter will be stiff). Fold in apples. , Fill 12 greased or paper-lined muffin cups three-fourths full. For topping, mix brown sugar, flour and cinnamon; cut in butter until crumbly. Sprinkle over batter. , Bake until a toothpick inserted in center comes out clean, 15-20 minutes. Cool 5 minutes before removing from pan to a wire rack to cool. Mix glaze ingredients; drizzle over tops.

3 teaspoons baking powder

Steps:

  • In a large bowl, combine dry ingredients. In another bowl, beat the eggs, sour cream and butter. Stir into dry ingredients just until moistened. Fold in apples. 2 cups flour
1/2 cup granulated sugar
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon salt
1 large egg
3/4 cup milk
1/2 cup oil
1/3 cup apple butter
1/2 cup flour
1 teaspoon cinnamon
1/2 cup brown sugar
1/2 cup walnuts
4 tablespoons butter ((softened))
1/2 cup powdered sugar
2-4 tablespoons apple cider ((or heavy cream))

Steps:

  • In a small bowl, combine the flour, sugar, baking powder, baking soda, cinnamon and salt. In another bowl, mix the egg, milk, and oil. Add the dry ingredients into the wet ingredients and mix just until combined. Do not overmix!
  • For the streusel, combine the flour, cinnamon, sugar and walnuts together. Cut in the softened butter until you have a crumbly mix and the butter is all mixed in.
  • Spray jumbo muffin tins with cooking spray and spoon a heaping tablespoon of batter into the bottom of each cup. Put a tablespoon of apple butter over top the batter. Then sprinkle some streusel topping over the apple butter. Distribute the remaining muffin batter over each of the muffin cups equally. Sprinkle the remaining streusel evenly over top the muffins.
  • Bake at 425º Fahrenheit for 5 minutes, then reduce the oven temperature to 375º Fahrenheit and cook for an additional 13-15 minutes. The muffins are done when a toothpick inserted into the center comes out clean.
  • Mix the powdered sugar and apple cider together until smooth, then drizzle with a spoon over top the muffins.
  • Store in an airtight container at room temperature.

1/3 cup (50gr) Plain Flour
1/4 cup (25 gr) Almond Meal (or almond flour)
1 1/2 tbsp Brown Sugar
1/2 teasp. Ground Cinnamon
2 1/2 tbsp Cold Butter
2 Large Apples
1/2 cup (120gr) Butter, melted
2 Eggs
1/4 cup (50gr) Brown Sugar
1 cup (150gr) Unsweetened Applesauce
1/4 cup (60ml) Full Cream Milk
1 1/2 cups (225gr) Plain Flour
1 1/2 teasp. Baking Powder
1 1/2 teasp. Ground Cinnamon
1 pinch Salt

Steps:

  • Place the Flour, Brown Sugar and Ground Cinnamon in a large bowl
  • Cut the cold butter into small cubes and add them to the dry ingredients. Rub the butter into the flour to create small crumbs. All the dry ingredients should be coated in butter, and the streusel should look like wet sand. Set aside.
  • Preheat your oven on 180'C/350'F and grease a Muffin tin (see note 2).
  • Peal, core and dice the Apples into very small pieces. Set Aside.
  • Melt the butter and set aside to cool down.
  • In a large bowl, whisk the Brown Sugar and Eggs until foamy. Add the melted Butter, then the Applesauce and the Milk. Whisk until combined.
  • Sift in the Dry Ingredients: Plain Flour, Baking Powder, Ground Cinnamon and Salt. When combined, fold in the Apple dices with a spatula.
  • Pour the Muffin batter into each Muffin Pan. Cover each muffin with some Streusel Topping. Gently press the streusel into the muffin batter.

Steps:

  • Preheat the oven to 425ºF. Line a regular sized muffin pan with liners.
  • In a small mixing bowl, combine the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  • In a separate larger mixing bowl, combine the apple butter, brown sugar, and vegetable oil, and eggs whisk together. Using a spatula, gently mix in the dry ingredients until just combined. Cover the bowl and place it in the fridge for 15 minutes. (This step is not necessary, but helps create a more domed muffin.)

2 Tbsp organic cane sugar
1 tsp ground cinnamon
5 Tbsp unsalted butter, melted
2 cups all-purpose flour, spooned and leveled
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp kosher salt
1 tsp ground cinnamon
1/4 tsp ground ginger
1/4 tsp ground nutmeg
1/8 tsp ground cloves
1/2 cup (1 stick) unsalted butter, softened
1 cup organic cane sugar
2 large eggs ¹

1-1/2 cups (about 2 small) tart apples, peeled and diced

Steps:

  • In a small mixing bowl, whisk together the flour, brown sugar, cane sugar, and cinnamon until combined.
  • Stir in the melted butter until incorporated, then use your fingers to form thick crumbs. Set aside.
  • Preheat the oven to 425℉. Line a 12-cup muffin tin with paper liners or lightly grease with butter or nonstick baking spray. Set aside.
  • In a large mixing bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, ginger, nutmeg, and cloves. Set aside.
  • Using a stand up mixer fitted with the paddle attachment, cream together the butter and sugar until light and fluffy, about 2 minutes.
  • Turn the mixer down to low, and add the eggs, one at a time, followed by the vanilla, mixing well after each addition. Scrape down the sides of the bowl with a spatula as needed.
  • Add the flour mixture to the mixer along with the chopped apples, and switch to a spatula to mix until just combined. Be careful not to over mix. The batter will be very thick.
  • Use a medium cookie scoop to divide the batter between the prepared muffin cups. Top with the streusel, pressing the crumbs gently into the tops of the muffin batter.
  • Bake at 425℉ for 5 minutes, then turn the oven temperature down to 350℉, and continue baking for another 12-15 minutes, until the muffin tops are golden and a cake tester inserted into the center comes out clean.
  • Remove from the oven, and allow the muffins to cool for a few minutes in the muffin tin, before transferring to a baking rack to cool completely.
  • In a small mixing bowl, whisk together the confectioners sugar, milk, and vanilla until smooth. Drizzle over the warm muffins. Enjoy!!

⅓ cup granulated sugar
⅓ cup light or dark brown sugar
2 tablespoons all-purpose flour
½ teaspoon ground cinnamon
Pinch ground cloves
¼ teaspoon ground ginger
½ teaspoon kosher salt
½ cup walnuts (, finely chopped (optional))
¼ cup (½ stick) unsalted butter (, chilled and cut into little pieces)
½ cup (1 stick) unsalted butter
2 large apples (, peeled, cored, and chopped (about 2 cups))
1 teaspoon fresh lemon juice
2 cups all-purpose flour
1 cup granulated sugar
1 tablespoon baking powder
1 teaspoon kosher salt
½ teaspoon ground cinnamon
2 large eggs
¾ cup whole milk or plain yogurt
1 teaspoon pure vanilla extract

Steps:

  • Preheat the oven to 375°F. Spray a 12-cup muffin tin with nonstick spray, or line the cups with paper liners, and spray those with nonstick spray.
  • Place the butter in a small saucepan over medium heat. Melt the butter, stirring occasionally, and allow it to get medium brown; not too dark, but deeper than golden. It should smell toasty and nutty. Set aside to cool.
  • Make the streusel: in a medium bowl combine the sugar, brown sugar, flour, cinnamon, cloves, ginger and salt. Stir in the walnuts if using. Add the chilled butter and use your fingers to rub the butter into the dry ingredients until the mixture is coarsely crumbly. Set aside in a cool place.
  • In a medium bowl toss the apples with the lemon juice. Set aside. In a medium bowl combine the flour, sugar, baking powder, salt and cinnamon.
  • In a large bowl mix together the cooled browned butter, eggs, milk or yogurt, and vanilla. Add the dry ingredients to the bowl in two batches, stirring each batch into the wet mixture just until incorporated; you should still see a few streaks of flour. Fold in the apples, just until they are incorporated; do not overmix.
  • Use a spoon or ice cream scoop to fill the prepared muffin tins ¾ full. Evenly distribute the streusel over the tops of the batter.
  • Bake for 22 to 25 minutes, until a wooden skewer or toothpick inserted into the center of a muffin comes out clean, or with just a crumb or two clinging to it.
  • Cool in the tin on a wire rack for 10 minutes, then turn the muffins out of the tin and finish cooling on the rack. Serve warm or at room temperature.

  • Preheat oven to 375°F. Lightly coat twelve 2-1/2-inch muffin cups with nonstick cooking spray or line with paper bake cups and coat insides of paper cups with nonstick cooking spray; set aside. In a large bowl stir together all-purpose flour, whole wheat flour, the 1/3 cup brown sugar, the baking powder, apple pie spice, and salt. Make a well in the center of the flour mixture; set aside.
  • In a medium bowl lightly beat eggs with a fork; stir in buttermilk and oil. Add egg mixture all at once to flour mixture; stir just until moistened (batter should be lumpy). Fold in shredded apple. Spoon batter into prepared muffin cups, filling each about three-fourths full.

Steps:

  • Adjust the oven rack to the 2nd level mark (just above center), preheat your oven to 425ºF, and line a cupcake/muffin tin with 8 standard muffin/cupcake liners. Tulip style liners can be used as well, if desired.
  • For the cinnamon streusel topping, whisk together the all-purpose flour, granulated sugar, and cinnamon. With either your clean hands or a fork, blend together with the unsalted butter until you have small streusel crumbles. Having a few big crumbles is perfectly fine too. While you prepare the rest of the recipe, you can keep the streusel topping in the refrigerator.
  • Peel and chop up the apple. Keep the apple chunks small so more can go into each muffin. Set to the side.
  • Using either a medium- or large-size mixing bowl, whisk together the all-purpose flour, baking powder, baking soda, ground cinnamon, ground nutmeg, and salt. Fold in your chopped apples and (optional) chopped walnuts.
  • In a separate mixing bowl, whisk together the egg, granulated sugar, melted butter, buttermilk, and vanilla extract.
  • Using a spatula, fold in the dry ingredients mixture to the wet until just combined.
  • Using a large cookie scoop or 2 spoons, evenly distribute the batter into each muffin liner, filling each one up to the top. If using tulip-style liners, you can fill them up just a bit more.
  • Top with the cinnamon streusel topping and, if desired, any additional chopped walnuts (or chopped pecans).
  • Bake for 8 minutes at 425ºF, then (keeping the oven door closed) reduce the oven to 350ºF and bake for an additional 12-15 minutes longer or until an inserted toothpick comes out clean.
  • For the vanilla glaze, whisk together the powdered sugar, whole milk, and vanilla extract in a small bowl. If a thicker glaze is preferred, add 1 tablespoon of powdered sugar to the mixture until your desired consistency is achieved. For a brown sugar glaze substitute, see the notes section below.
  • Allow the apple cinnamon streusel muffins to cool in the muffin tin for 5-10 minutes before transferring to a wire cooling rack to cool a bit more.
  • Serve the muffins either slightly warm or at room temperature with the vanilla glaze drizzled over the top.
