8 medium (2-3/4" dia) (approx 3 per lb)s apples - peeled, cored and chopped
4 cups white sugar
4 teaspoons ground cinnamon
¼ teaspoon ground cloves
¼ teaspoon salt

Steps:

  • Fill a slow cooker with diced apples, sugar, cinnamon, cloves and salt. Cover, and cook on high for 1 hour. Reduce heat. Simmer, stirring occasionally, for 12 hours, or until thick and dark golden in color.
  • Pack into small, freezer-safe containers leaving 3/4 inch space at the top. Store in the freezer.

12 medium Granny Smith or other cooking apples, peeled and cut into fourths
1 1/2 cups packed brown sugar
1/2 cup apple juice
1 tablespoon ground cinnamon
1 tablespoon lemon juice
1 teaspoon ground allspice
1 teaspoon ground nutmeg
1/2 teaspoon ground cloves

Steps:

  • Mix all ingredients in 5- to 6-quart slow cooker.
  • Cover and cook on low heat setting 8 to 10 hours or until apples are very tender.
  • Mash apples with potato masher or large fork.
  • Cook uncovered on low heat setting 1 to 2 hours, stirring occasionally, until mixture is very thick. Cool about 2 hours.
  • Spoon apple butter into container. Cover and store in refrigerator up to 3 weeks.

Move over, apple sauce. Apple butter is basically a spreadable apple pie filling, only better. Though cooking time is long, it's super easy and pretty hands-free. Pair it with some sharp Cheddar on a cheese plate, or slather it onto cheesy biscuits (see footnote). Other approved uses include spreading between the layers of a spice cake, filling seasonably appropriate thumbprint cookies, or even as a condiment for pork chops.

5 pounds Granny Smith apples, cored and cut into 1-inch pieces
1 ½ cups white sugar
½ cup brown sugar
1 teaspoon salt
2 teaspoons ground cinnamon
⅛ teaspoon freshly grated nutmeg
½ teaspoon ground allspice
¼ cup apple cider vinegar
1 splash water

Steps:

  • Place apple pieces into a large slow cooker. Add white sugar, brown sugar, salt, cinnamon, nutmeg, allspice, and vinegar. Add a splash of water and mix well.
  • Cover and cook on High until apples are starting to soften and release liquid, 1 to 2 hours. Reduce heat to Low and cook, uncovered, until all the apple flesh is dissolved, 5 to 6 hours. Stir occasionally.
  • Puree using an immersion blender until smooth. Continue cooking, stirring occasionally, until darkened and thick, about 4 hours more. Pass apple butter through a strainer if desired. Seal in a glass container and refrigerate until cool.

  • Mix the remaining items together and rub 2 Tbs onto the steak, both sides.
  • Marinate for 1/2 hour and then broil on an oven rack to your liking.

1 medium vidalia onion, halved and thinly sliced
1/4 teaspoon fresh ground pepper
2 tablespoons butter
1 (1 lb) ham steak, boneless and fully-cooked
1 teaspoon cornstarch
1/2 cup unsweetened apple juice
1/2 cup apple butter

Steps:

  • In a large skillet, saute onion and pepper in butter until crisp tender. Remove from pan and set aside.
  • Cut ham steak into 4 pieces and in the same skillet, brown ham on both sides.
  • While ham is browning, in a small bowl, combine the cornstarch and apple juice until smooth; then pour over ham.
  • Bring juices to a boil and cook while stirring for 1-2 minutes or until slightly thickened.
  • Reduce heat and spread apple butter over ham.
  • Top with sauteed onion.
  • Cover pan and simmer for 5-7 minutes or until thoroughly heated through.

2 bone-in pork chops
Kosher salt and freshly cracked black pepper
3/4 cup chicken stock
1 shallot, diced
1 tablespoon stone-ground mustard
2 teaspoons apple butter

Steps:

  • Heat the oil in a large skillet over medium-high heat. Sprinkle the pork chops with salt and pepper on both sides and cook, flipping once, until nicely browned and cooked to 150 degrees F or desired doneness, 5 to 7 minutes per side. Set the chops aside and reserve the skillet.
  • Pour the chicken stock into the skillet and scrape with a wooden spoon to lift any browned bits. Add the shallots and cook, stirring occasionally, until the stock is reduced by half, about 4 minutes. Whisk in the mustard and apple butter. Turn off the heat and continue whisking until the sauce coats the back of a spoon, about 1 minute. Season as desired with freshly cracked black pepper.

  • Place processed apples and cider into a large, heavy-bottomed soup pot. Place onto stovetop set to medium-high. Place three small plates (to perform the plate test) into the freezer.
  • Stir the sugars into the mixture right before it comes to a boil. Add the spices, lemon juice and vanilla extract to the boiling mixture. Reduce to simmer and cook for two hours, stirring the apple butter thoroughly every 15 minutes.
  • At the two-hour mark, carefully purée the apple butter to a very fine consistency using an immersion blender. This can also be done in small batches using a food processor or blender with the central cap removed to allow the heat to escape. CAUTION: the apple butter is hot.
