Is it a soup? Is it a stew? Is it a side dish? It doesn't really matter how you categorize this recipe, it's so hearty and delicious that it can be enjoyed any way you like.

2 tablespoons salted butter
2 tablespoons olive oil
1/2 cup diced carrots
1/2 cup diced celery
2 teaspoons minced fresh oregano, plus more for garnish
2 teaspoons minced fresh thyme
4 cloves garlic, minced
1 onion, diced
Kosher salt and freshly ground black pepper
1/2 cup white wine, optional
4 cups low-sodium pork stock (see Cook's Note)
Two 15-ounce cans white beans, drained and rinsed
2 cups shredded hearty greens, such as kale or collards
2 cups shredded Perfect Paprika Pork Shoulder, recipe follows
1 cup grated white Cheddar
1 small loaf sourdough, torn into 1- to 2-inch chunks
3 tablespoons salted butter, melted
Kosher salt and freshly ground black pepper
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
1 teaspoon paprika
6 to 7 pounds bone-in pork shoulder
3 tablespoons olive oil
10 cloves garlic
1 onion, sliced
6 sprigs fresh rosemary
4 sprigs fresh thyme
2 bay leaves
1 cup white wine
4 cups chicken broth
1 to 2 canned chipotles, chopped, plus 2 tablespoons adobo sauce

Steps:

  • Preheat the oven to 400 degrees F.
  • For the white beans with pork: Heat the butter and oil in a large pot over medium heat. Add the carrots, celery, oregano, thyme, garlic and onion and season with a good pinch of salt and pepper. Cook until the vegetables soften and the flavors develop, 4 to 5 minutes. Deglaze with the white wine, if using, allowing the liquid to reduce for a minute or so. Add the stock, beans, greens and Perfect Paprika Pork Shoulder. Bring to a boil and cook until the greens are tender, about 10 minutes.
  • For the croutons: Meanwhile, toss the torn bread with the melted butter on a sheet pan. Season with salt and pepper. Toast in the oven until golden and crisp, 7 to 8 minutes.
  • Serve the beans and pork in bowls garnished with the torn croutons, grated white Cheddar and fresh oregano.
  • Preheat the oven to 300 degrees F.
  • Mix the salt, pepper and paprika in a small bowl. Season the pork all over with the mix, sprinkling it on and then rubbing it in with your hands.
  • Heat the olive oil in a large Dutch oven over medium heat. Sear the pork on all sides until browned, 3 to 5 minutes. Remove and set aside. Stir the garlic and onion into the pot and cook for 1 minute.
  • Tie together the rosemary, thyme and bay leaves with butcher's twine. Add to the pot and stir. Deglaze with the white wine, scraping up any brown bits on the bottom. Stir in the broth, chipotle and adobo sauce. Add the pork to the pot fat-side up and bring to a boil. Cover and transfer to the oven. Cook until very tender, 4 to 5 hours.
  • Remove the pork from the liquid, shred with 2 forks and serve with the accompaniments of your choice, spooning over the liquid as a sauce.
  • Place any leftovers in a container and transfer any liquid to a separate container. Allow both the pork and the liquid to cool slightly before covering and refrigerating. Once the liquid has chilled, the fat will solidify at the top and make it easy to separate and discard. You can then reheat the pork as you'd like, using the stock to keep the pork from drying out.

This is the best pork recipe I've ever made. This pork is seasoned with a spiced apple butter, and roasted in apple juice. If food can be warm and cozy, this is it--a great Sunday dish!

2 (2 pound) boneless pork loin roast
seasoning salt to taste
2 cups apple juice
½ cup apple butter
¼ cup brown sugar
2 tablespoons water
¼ teaspoon ground cinnamon
¼ teaspoon ground cloves

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Season the pork loins with seasoning salt, and place them in a 9x13 inch baking dish or small roasting pan. Pour apple juice over the pork, and cover the dish with a lid or aluminum foil.
  • Bake for 1 hour in the preheated oven. While the pork is roasting, mix together the apple butter, brown sugar, water, cinnamon, and cloves. Remove pork roasts from the oven, and spread with apple butter mixture.
  • Cover, and return to the oven for 2 hours, or until fork-tender.

Providing all five of your 5-a-day, this flavour-packed butterbean stew pairs perfectly with lean pork shoulder steaks - perfect to enjoy after a workout

3 garlic cloves , 1 crushed, 2 sliced
2 tbsp rapeseed oil
4 tsp smoked paprika
4 lean pork shoulder steaks (525g), trimmed of any fat
2 large onions (340g), halved and sliced
325g carrots (about 6), diced
2 tbsp sherry vinegar
2 red peppers , deseeded and chopped
1 tbsp vegetable bouillon powder , made up to 500ml with boiling water
3 rosemary sprigs , leaves picked and finely chopped
200g whole cherry tomatoes
2 tbsp tomato purée
2 x 400g cans butter beans , drained
⅓ x 30g pack parsley , chopped
squeeze of lemon (optional)

Steps:

  • Mix the crushed garlic, 1 tbsp of the oil and 1 tsp smoked paprika together in a shallow dish and turn the pork steaks over in the mix to coat them on both sides. Heat a large non-stick frying pan and fry the pork for about 4 mins on each side to part-cook and brown them, then remove them from the pan.
  • Add the rest of the oil to the pan and fry the onions, carrots and sliced garlic, stirring frequently for 10 mins until the veg starts to caramelise a little. Pour in the sherry vinegar, allowing it to sizzle in the heat, then add the peppers, bouillon, rosemary, any juices left in the dish from the pork, the cherry tomatoes, tomato purée, remaining 3 tsp paprika and beans.
  • Lay the pork steaks on top, then cover the pan and cook for 20 mins until the pork and vegetables are tender. The pork will be cooked and juicy, but not fall apart. Remove the pork from the pan, stir in the parsley and a squeeze of lemon juice, if using.
  • If you're following our Healthy Diet Plan, eat two portions of the pork and beans now and chill the rest for another day. Will keep for up to two days. To serve the second night, just reheat in a pan.

1 pound dried white beans
2 pig's feet, split down the middle
1 10-ounce can plum tomatoes, coarsely chopped, with their juice
Freshly ground pepper to taste
1/2 cup finely chopped parsley
2 cloves garlic, minced
3 tablespoons butter
Coarse salt to taste
1/2 cup dried bread crumbs

Steps:

  • Rinse the beans with cold water and pick them over carefully. Put them in a heavy casserole with water to cover. Add the pig's feet and the tomatoes. Season with pepper, cover, and simmer for about 1 1/2 hours or until cooked, adding more water if necessary. Set aside until 30 minutes before serving.
  • Preheat the oven to 425 degrees. Stir the parsley, garlic, 1 1/2 tablespoons butter, and salt into the beans. Sprinkle with bread crumbs, dot with remaining butter and heat through uncovered until sizzling.

Slow-Cooked Pork Shoulder with Braised White Beans image

This sage-and-garlic-braised pork shoulder is served over creamy, slow-cooked white beans and spinach.

1 (6-lb.) bone-in pork shoulder (Boston butt), fat cap trimmed to 1/4 inch
3 tablespoons Diamond Crystal or 5 teaspoons Morton kosher salt, plus more
8 fresh bay leaves, divided
1/4 cup sage leaves, plus 4 large sprigs
4 tablespoons olive oil, divided
1 head of garlic, halved crosswise
9 juniper berries
4 black peppercorns
3 cups dry white wine
1/4 cup best-quality red wine vinegar
Beans
1 large beefsteak tomato, halved crosswise
1 head of garlic, halved crosswise
4 large sprigs sage
2 cups coco nano or cannellini (white kidney) beans, soaked overnight, drained
2 tablespoons plus 1/4 cup olive oil
Kosher salt
Greens and assembly:
2 bunches mature spinach, tough stems removed
Kosher salt
2 tablespoons olive oil, plus more for drizzling
4 garlic cloves, thinly sliced
Flaky sea salt

Steps:

  • Pork:
  • Sprinkle pork all over with 3 Tbsp. or 5 tsp. salt. Tear 4 bay leaves and 1/4 cup sage leaves into small pieces and scatter over pork. Place pork on a wire rack set inside a rimmed baking sheet and cover loosely with plastic wrap; chill 12 hours.
  • Let pork sit at room temperature 1 hour. This will help it cook evenly.
  • Preheat oven to 450°F. Heat 2 Tbsp. oil in a large heavy pot over medium-high. Cook pork, turning occasionally, until browned on all sides, 15-20 minutes. Transfer pork to a large plate.
  • Remove pot from heat and pour off any fat. Discard fat and any leaves in pot; wipe out pot. Add remaining 2 Tbsp. oil to pot along with garlic, juniper berries, peppercorns, sage sprigs, and remaining 4 bay leaves. Cook over low heat until garlic just starts to brown around the edges, about 1 minute. Pour in wine and vinegar. Return pork to pot, placing fat side up, and cover with parchment paper, tucking edges down around sides of pork (this prevents it from drying out). Cover pot with a lid, transfer to oven, and cook pork 30 minutes. Reduce oven temperature to 300° and cook, turning pork every 30 minutes or so and adding a splash of water if braising liquid is reducing too quickly, until meat is very tender and pulling away from the bone, 2 1/2-3 hours.
  • Let pork sit until cool enough to handle. Remove bones; discard. Shred meat into 2"-3" pieces, removing any excess fat (it should pull apart very easily but still hold together in pieces). Transfer meat to a large saucepan and strain braising liquid over; discard solids. Cover and keep warm over lowest heat until ready to serve.
  • Beans:
  • Combine tomato, garlic, sage, beans, and 2 Tbsp. oil in a large pot. Pour in cold water to cover by 1 1/2" and bring to a simmer over medium heat, skimming foam from surface as needed. Reduce heat so that liquid is at a very gentle simmer; cook until beans are almost tender but still slightly starchy in the centers (you want them to be about 75 percent cooked), 35-45 minutes. Preheat oven to 300°F while the beans are still cooking.
  • Remove beans from heat; season with several generous pinches of salt and add remaining 1/4 cup oil. Transfer to oven and bake without disturbing beans (you want a film to form on the surface) until tender, 15-25 minutes. Finishing the beans in the oven ensures that they are evenly cooked and creamy. Turn off oven and leave beans inside to keep warm until ready to serve.
  • Greens and assembly:
  • Working in 2 batches, cook spinach in a large pot of boiling salted water until tender and no bite remains, about 2 minutes. Drain in a colander and let cool slightly, then squeeze out excess water.
  • Heat 2 Tbsp. oil in a medium skillet over medium and cook garlic, stirring, until softened and barely golden, about 1 minute. Add spinach and stir just to coat leaves in oil and warm through.
  • To serve, spoon beans plus a bit of their cooking liquid onto plates. Arrange several pieces of pork and spinach over beans. Drizzle with oil and sprinkle with sea salt.
  • Do Ahead
  • Beans can be made 1 day ahead. Let cool in liquid; cover and chill. Reheat gently before serving.

1 1/2 lbs pork tenderloin
1/2 teaspoon salt
2 cups apple juice
1/2 cup apple butter
1/4 cup packed light brown sugar
2 tablespoons water
1/2 teaspoon ground cinnamon
1/4 teaspoon ground cloves

Steps:

  • Using an injection needle, inject apple juice into the the roast in multiple places.
  • Sprinkle with salt.
  • Place tenderloin in a 11x7-inch baking dish.
  • Add remaining apple juice and let stand 30 minutes or chill 2 hours.
  • Bake in preheated 350 degree oven for 15 minutes.
  • Drain.
  • Stir together apple butter and remaining 4 ingredients.
  • Spread or brush over roast.
  • Bake an additional 15-20 minutes or until thermometer inserted in thickest part registers 145 degrees.
  • Let stand 15 minutes before serving.
