My Rustic Apple Crumble Tart is simply an apple crostata, apple galette and apple crisp all rolled into one.

1 sheet of frozen puff pastry, thawed
2 Honeycrisp apples, peeled, cored and cut into 1/4-inch slices
1/4 cup lemon juice
1/2 cup brown sugar
1/2 cup flour
1/2 cup old fashioned oats
3 tablespoons butter, melted
2 teaspoons cinnamon

Steps:

  • Preheat the oven to 400° F.
  • Unfold one puff pastry sheet and cut off the corners to create a circle that fits nicely into into the bottom and up the sides of a tart pan. Use the puff pastry corners to fill in any areas that need little extra crust.
  • Peel, core and slice the apples thinly and place them in a bowl. Drizzle lemon juice over top to keep the apples from browning.
  • In a separate bowl, mix together the oats, brown sugar, flour, cinnamon and melted butter to create a crumbly topping.
  • Arrange the apple slices on in the tart pan in an alternating pattern. Top the tart with the crumble and bake for 15-20 minutes on a low oven rack until the pastry sheet is golden brown.
  • Cool and serve as is or with a scoop A vanilla ice cream.

Make this easy Apple Tart recipe from scratch. The pastry case has a delicate cinnamon flavour which, when baked, has a base of Stewed Apples and Ground Almonds with a topping of more sliced apples tossed in Cinnamon Spice.

200 g plain flour
Pinch of Salt
1 teaspoons ground cinnamon
100 g unsalted butter (very cold and cut into cubes)
1 egg (medium sized)
1 tablespoon cold water
1 medium egg
a splash of water or milk
3 Dessert Apple (Medium sized)
1 tablespoon cold water
2 tablespoons ground almonds
1 tablespoon ground cinnamon
1 teaspoons Demorara sugar (or light brown sugar (optional) )
20 g Butter

Steps:

  • Rub the butter, flour and spice together with your fingertips until you have a fine breadcrumb consistency. For the very best results, use a food processor.
  • Add the egg and water to the bowl. Using a large knife bring everything together until you have a smooth pastry dough. If using a food processor, blitz until all the dough comes together.
  • Flatten the smooth pastry dough and wrap in cling film. Chill for a minimum of 1 hour in the fridge. This allows the pastry to settle, making it much easier to handle.
  • If you are not going to use the pastry straight away, you can leave it in the fridge overnight to use the next day. Any longer than that, it is best that you freeze it.
  • While the pastry dough was resting in the fridge, I made the stewed apple filling base.
  • Take one of the 3 apples needed to make this recipe, leave the rest to be sliced later. Peel, core, and chop the apple into small cubes. Add to a medium pan along with 1 tablespoon of water. Gently cook the chopped apples over medium heat until nice and soft.
  • Take off the heat and mash with a fork until you have a mix of mashed apples with a few rough chunks. A small food processor makes this easier.This forms the base of the apple filling. Leave in the pan to cool until needed.
  • Slice in half the remaining 2 apples. There's no need to peel them. Take out the core and slice each apple thinly. The thinner the slices are, the quicker the tart will bake.
  • Add the slices to a medium size bowl and toss the apples in the ground cinnamon making sure each slice is covered with spice.Leave to one side until you are ready to fill your baked pastry tart.
  • Lightly grease the sides and base of a 20cm/8 inch loose bottomed cake tin about 3cm/1inch deep.
  • Take the pastry dough out of the fridge and start to roll between 2 large sheets of baking parchment until you have a circle that is about 14 inch/36 cm across in diameter and about 3 mm thick, allowing for plenty to overlap your tart tin.
  • If your pastry starts to get a little too warm and sticky while rolling it, place the whole thing, parchment included, onto a baking sheet and return to the fridge for 5 - 10 minutes or so to firm up a little.
  • When you have rolled the pastry out to the correct size, remove the top sheet of parchment. Invert and place the sheet of pastry dough over the tart tin. Remove the bottom sheet of parchment.
  • Carefully line the tart tin by lifting and dropping the pastry onto the base and into the sides of tin. Plenty of overlap will allow for shrinkage.
  • Cut away any excess pastry that's hanging over the sides of the tart tin. Use a wad of spare pastry, dab with a little flour and gently press the pastry into the sides of the tart tin.
  • Cover the pastry with a sheet of cling film to help prevent it from drying out, and return it back to the fridge to chill for at least 30 mins. Or you can leave in the fridge overnight to bake the next day.
  • Preheat the oven to 200 deg. Use an oven thermometer to check the correct temperature.
  • Take the raw pastry tart out for the fridge and carefully prick the base of the pastry dough with a fork. Taking care not to pierce the bottom.
  • Line the pastry case with scrunched up baking parchment, or a double sheet of oven safe Industrial Cling Film.
  • Fill with plenty of dried rice or dried beans up to the top. This will help keep the pastry in place during baking. Fold the cling film, if using, over the beans to keep them in place.
  • Bake in the centre of the oven for 20 mins by this time the pastry should be dry and semi baked. If not return to the oven with the baking beans for a further 5 mins.
  • Remove the baking beans and parchment/cling film and return to the oven for a further 5 mins. The pastry should look dry and ever so slightly golden in colour.
  • To make the egg wash, thoroughly mix the egg with a splash of water or milk.
  • Take the baked pastry case out of the oven and coat the base and sides of the pastry case with a very light egg wash. Return to the oven for 1 min to dry off.
  • Take out of the oven and while still warm, using a serrated knife, slice off any excess pastry that is hanging over the sides.
  • Use the sides of the tart tin to support the pastry case as you slice off the excess. This helps prevent any pastry from breaking away. Slicing from the inside towards the outside helps achieve clean edges
  • ***Turn the oven temp down to 180deg***When the pastry tart has cooled a little, spread the base with the ground almonds and top with the crushed slightly stewed apple.
  • Arrange the thinly sliced apples over the top in a nice decorative pattern packing as many of the apples in as you can. You may not need them all.
  • Scatter the top of the apples with demerara sugar if you wish. This is optional. Leave out if you are wanting a sugar free Apple Tart. Dot with cubes of butter.
  • Bake for 30 mins or until the sugar and butter have melted and the apples are cooked and feel slightly firm to the touch.

1 1/2 cups flour
1/4 teaspoon salt
10 tablespoons cold unsalted butter, in small pieces
3 tablespoons ice water
5 tart apples
Juice of 1 lemon
1/4 cup finely chopped pecans
2 tablespoons soft butter
1/2 cup light brown sugar

Steps:

  • Combine the flour and salt. Cut the cold butter in by hand or by pulsing in a food processor. Add enough water by hand, stirring lightly, just until the mixture can be gathered into a dough. Wrap it in plastic and chill for an hour.
  • Remove the dough from the refrigerator, flatten it with a rolling pin, then roll it into a rectangle half an inch thick. Fold the rectangle like a business letter in thirds, roll it again until it is half an inch thick, fold it again like a business letter and refrigerate it for half an hour.
  • Preheat the oven to 425 degrees.
  • Peel and core the apples and slice them three-fourths of an inch thick. As they are sliced, toss them in a bowl with the lemon juice. Roll the dough to fit a nine-inch straight-sided tart pan. Sprinkle the pecans over the bottom, then arrange the apple slices on top. Dot the apples with the soft butter and sprinkle with brown sugar.
  • Bake 15 minutes, then lower the oven temperature to 350 degrees. Bake 35 to 40 minutes longer, until the dough is lightly browned and the apples are beginning to brown along their edges.
  • Remove from the oven and allow to rest at least three hours at room temperature. The tart can be prepared early in the day. Though it should not be refrigerated overnight, it can be made several days in advance and frozen. It should be warmed in the oven just before serving.

Nonstick vegetable oil spray
1 cup (2 sticks) plus 2 tablespoons unsalted butter, room temperature
1 cup sugar
1/4 teaspoon kosher salt
1 large egg, beaten to blend
2 tablespoons heavy cream
2 teaspoons vanilla extract
3 1/2 cups unbleached all-purpose flour
Filling and assembly:
4 large eggs
1 cup sugar
1 cup (2 sticks) unsalted butter
1 vanilla bean, split lengthwise
1/2 cup all-purpose flour
1/2 teaspoon kosher salt
3 firm, tart apples (such as Pink Lady or Braeburn), peeled, cored, cut crosswise into 1/4"-thick rings
Whipped cream
Special Equipment
An 11"-diameter or 11x8x1" tart pan with removable bottom

Steps:

  • For crust:
  • Coat tart pan with nonstick spray. Using an electric mixer or stand mixer fitted with a paddle, mix butter, sugar, and salt until pale and creamy, about 2 minutes.
  • Add egg, cream, and vanilla. Mix until smooth. Add flour all at once and beat until dough almost comes together. Turn dough out onto a work surface. Knead until dough just comes together, 4-5 times. Divide dough in half; form each half into a smooth ball. Flatten into disks and wrap each disk tightly in plastic. Chill 1 disk overnight; freeze second disk for another use.
  • Roll out chilled dough disk between two sheets of plastic wrap, lifting and adjusting plastic as needed, until 1/8" thick and 2" wider than tart pan. Transfer dough in plastic wrap to a baking sheet and refrigerate until firm enough to handle, about 30 minutes.
  • Remove top piece of plastic from dough. Invert dough into tart pan; press onto bottom and up sides. If dough is soft, chill until firm enough for remaining sheet of plastic to be removed. Trim edges of dough (patch up any holes or tears with extra dough). Chill until firm, about 1 hour.
  • Preheat oven to 350°F. Line dough with parchment paper or heavy-duty foil, leaving a 1"-2" overhang. Fill paper with dried beans or pie weights. Bake tart shell just until dough has dried and does not look wet in any spots, about 20 minutes. (If center still looks wet, bake crust without weights until dried and opaque, a few minutes longer.)
  • For filling and assembly:
  • Whisk eggs and sugar in a medium bowl just to blend. Place butter in a medium saucepan over medium heat. Scrape in seeds from vanilla bean; add bean. Cook, stirring often, until butter foams, then browns (do not burn), about 5 minutes. Let cool for 10 minutes; remove bean. Slowly whisk brown butter into egg mixture; whisk in flour and salt.
  • Line tart shell with apples.4 Pour filling over (if using rectangular pan, you may have 1/2 cup excess filling). Bake until apples are deep golden brown and filling is puffed, cracked, and set in center, 70-80 minutes.
  • Let tart cool in pan on a wire rack, about 2 hours. Remove pan sides. Serve warm or at room temperature with whipped cream.

1 cup flour
Pinch kosher salt
1/4 cup ice water
1 1/2 sticks unsalted butter
1 cup sugar
3/4 cup flour
3 eggs
1 vanilla bean, split and insides scraped
2 tablespoons butter
6 Golden Delicious apples, peeled, cored and cut into 1/8ths
2 tablespoons sugar
1/4 cup brandy
1/2 cup golden raisins
Flour, for dusting
1 egg, beaten with 1 tablespoon water

Steps:

  • Preheat the oven to 350 degrees F.
  • For the crust: Combine the butter, flour, and salt in a food processor. Pulse until the mixture looks like Parmesan cheese. Drizzle in half the cold water and pulse until the mixture forms a rough ball, adding the remaining water if needed. Remove the dough from the food processor, form into a disk, wrap in plastic, and refrigerate for at least 1 hour.
  • For the filling: In a small saucepan, melt the butter and cook it until it starts to brown and begins to smell like hazelnuts. Transfer the butter to the bowl of a stand mixer equipped with a paddle. Add the sugar and beat together on medium speed. Gradually add the flour. Once the flour has combined, add the eggs one at a time. Beat in the vanilla bean seeds.
  • For the apples: In a large saute pan, melt the butter over medium heat. Add the apples and sugar and cook until the apples start to soften, 6 to7 minutes. Pull the pan off the burner and add in the brandy. Return to the fire and flambe, if desired, or just let the alcohol burn off. Toss in the raisins.
  • To assemble: Remove the dough from the fridge 15 minutes before ready to use, this will allow the dough to soften and come to room temperature.
  • Dust a clean work surface with flour. Roll the dough out 1/8-inch thick and lay it in the tart pan with lots of overhang on the sides. Schmear half the filling into the bottom of the tart pan and top with the apple mixture. Fold the extra dough over the top of the apples. Brush the dough with the egg wash.
  • Bake the tart in the oven until the top is golden brown and slightly crispy, 45 to 50 minutes.

  • Heat the oven to 375 degrees. Coat a 9-inch removable-bottom tart pan with baking spray. To make the crust, in a food processor pulse together the flour, sugar and salt. Add the butter, then pulse together, adding cold water as needed until a meal forms that sticks together easily when you squeeze it. Press the mixture into the prepared tart pan, making sure to press the dough up the sides. Prick the bottom of the crust with a fork. Bake for 15 to 20 minutes, or until the edges just start to turn golden and the center is slightly firm to the touch. Cool on a wire rack. While the crust cools, prepare the filling. In the bowl of an electric mixer, beat together the cream cheese, cinnamon, vanilla, nutmeg, vinegar and powdered sugar until smooth. Spoon the mixture into the cooled tart shell and smooth the top. Refrigerate while making the topping. To make the topping, in a medium skillet over medium-high heat, combine the apple slices, brown sugar, salt, cinnamon, vinegar and raisins. Cook until the apples are tender, about 5 minutes. In a small bowl, stir together the cornstarch and water. Add this mixture to the skillet, stirring constantly until the mixture is thickened, about 2 minutes. Remove from the heat and allow to cool slightly. Spoon the apples over the top of the tart. Sprinkle with walnuts, if using.
