Carrots seem so simple, but this recipe is something special. Sweet and buttery, this was a favorite my mother always used to serve at holiday time. -Darlis Wilfer, West Bend, Wisconsin

2 pounds medium carrots, cut into 1-inch pieces
1/2 cup unsweetened apple juice
1/2 cup packed brown sugar
1/4 cup butter, cubed
1/4 teaspoon salt
1/4 cup chopped pecans or walnuts, toasted, optional

Steps:

  • In a 3-qt. slow cooker, combine carrots and apple juice. Cook, covered, on high until carrots are tender, 3-4 hours., Remove carrots from slow cooker; discard juices. Return carrots to slow cooker. Stir in brown sugar, butter and salt. Cook, covered, on high until carrots are glazed, 15-20 minutes longer. If desired, sprinkle with pecans.

1-1/2 cups diced carrots (about 6 medium)
2 cups water
1 tablespoon butter
1/4 cup packed brown sugar
1 tablespoon lemon juice
1/8 teaspoon ground cinnamon
1 cup diced peeled apple
1 tablespoon cornstarch
2 tablespoons cold water

Steps:

  • In a saucepan, cook carrots in water until crisp-tender; drain. Add butter, brown sugar, lemon juice and cinnamon; mix well. Stir in apple. Cover and simmer for 10 minutes, stirring occasionally. Combine cornstarch and cold water; stir into carrot mixture. Bring to a boil; cook and stir for 1 minute or until thickened. Simmer, uncovered, until glazed, 2-3 minutes, stirring constantly.

3/4 teaspoon salt, divided
2 tablespoons butter or 2 tablespoons margarine
1/2 cup minced onion
1 1/2 tablespoons dark brown sugar or 1 1/2 tablespoons light brown sugar
2/3 cup apple juice
1/4 teaspoon pepper

Steps:

  • Cut carrots diagonally into 1/4 inch thick slices.
  • Cook in boiling water to cover with 1/2 teaspoons salt for 5 minutes or until crisp-tender. Drain and rinse with cold water. Pat dry with paper towels.
  • Melt butter in a large skillet over low heat; add onion and cook, stirring constantly 5 minutes.
  • Add apple juice and brown sugar; cook, stirring occasionally, 10 minutes.
  • Stir in carrots, remaining 1/4 teaspoon salt and pepper.

2 bunches dutch carrots ( about 20 carrots) peeled
50 g butter, melted (2 ounces)
3 tablespoons extra virgin olive oil
zest of 1 orange
1/4 cup orange juice
1 tablespoon finely grated ginger
1/4 cup brown sugar
1/4 cup pecan nuts
salt and pepper to taste

Steps:

  • preheat oven to 200 c (355 f) bake, not fan
  • line a baking tray with sides with baking paper
  • in a bowl add all ingredients and toss to coat
  • spread carrots and pecans evenly on baking tray (leaving space between carrots)
  • roast on middle shelf for 20 minutes
  • turn carrots and roast for a further 20 minutes
  • serve and enjoy!

These baby carrots are glazed with a buttery mixture of brown sugar and honey. Add these delicious honey glazed carrots to your dinner menu.

1 1/2 to 2 pounds baby carrots
1 1/2 teaspoons Kosher salt
4 tablespoons butter
4 tablespoons honey
3 tablespoons packed brown sugar
2 tablespoons lemon juice (1/2 lemon)
Kosher salt, to taste)
Freshly ground black pepper, to taste
Garnish: 2 tablespoons fresh parsley or chives, chopped

Steps:

  • Gather the ingredients.
  • Place the baby carrots in a medium saucepan. Cover with water and add 1 1/2 teaspoons of salt. Bring to a boil.
  • Reduce heat to medium-low, cover, and continue cooking for about 15 minutes, or until tender but firm. Check for doneness after 10 minutes. Drain and set aside.
  • In a sauté pan, melt the butter over medium-low heat. Add the honey and brown sugar and cook, stirring, until the sugar is dissolved.
  • Add the lemon juice and stir in the cooked carrots, coating well.
  • Gently stir until carrots are hot and glazed with the honey mixture.
