Meet the Cook: This recipe dates back to when our two girls - now 15 and 12 - were in preschool and it was my turn to bring a snack for the class. My husband especially asks for the muffins in winter. Crafts and reading are my hobbies. -Nancy Brown, Klamath Falls, Oregon

Yield about 24 standard-size muffins.

Number Of Ingredients 14

2 large golden Delicious apples, peeled and chopped
1/2 cup butter, cubed
3 cups All-Bran
1 cup boiling water
2 cups buttermilk
2 eggs, lightly beaten
2/3 cup sugar
1 cup raisins
2-1/2 cups all-purpose flour
2-1/2 teaspoons baking soda
2 teaspoons ground cinnamon
1 teaspoon ground nutmeg
1/2 teaspoon ground cloves
1/2 teaspoon salt

Steps:

  • In a skillet, saute apples in butter until tender, about 10 minutes. Combine cereal and water in a large bowl; stir in buttermilk, eggs, sugar, raisins and apples with butter. Combine dry ingredients; stir into apple mixture just until moistened. Refrigerate in a tightly covered container for at least 24 hours (batter will be very thick). Fill greased or paper-lined muffin cups three-fourths full. Bake at 400° for 20-25 minutes or until muffins test done. Cool in pan 10 minutes before removing to a wire rack.

½ cup brown sugar
½ cup applesauce
¼ cup canola oil
1 egg
1 teaspoon vanilla extract
¾ teaspoon salt
1 cup whole wheat flour
1 cup natural wheat bran
3 tablespoons ground flax
1 teaspoon baking soda
½ teaspoon baking powder
1 cup milk

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Grease a 12-cup muffin tin.
  • Mix together brown sugar, applesauce, canola oil, egg, vanilla extract, and salt in a large bowl.
  • Mix flour, bran, flax, baking soda, and baking powder in a separate bowl. Add bran mixture to applesauce mixture. Add milk and stir until thoroughly combined. Pour batter into the prepared muffin cups.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, 11 to 13 minutes.

1 ¼ cups bran flakes cereal
1 ¼ cups all-purpose flour
⅓ cup brown sugar
1 teaspoon ground cinnamon
1 tablespoon baking powder
1 ¼ cups apple juice
¼ cup margarine, melted
1 teaspoon vanilla extract
1 apple - peeled, cored, and chopped

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease muffin tins.
  • In a mixing bowl, combine bran flakes, flour, brown sugar, cinnamon and baking powder. Stir in apple juice, margarine, vanilla, and apple. Spoon the mixture into the greased muffin tins.
  • Bake at 375 degrees F (190 degrees C) for 25 to 30 minutes.

1/2 cup all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1/8 teaspoon baking soda
1/8 teaspoon ground nutmeg
1/3 cup 2% milk
1 egg
2 tablespoons packed brown sugar
2 tablespoons canola oil
1 teaspoon vanilla extract
1/2 cup All-Bran
2/3 cup shredded peeled tart apple
1/3 cup chopped walnuts
1/3 cup raisins

Steps:

  • In a large bowl, combine the first six ingredients. In another bowl, combine the milk, egg, brown sugar, oil and vanilla. Stir into dry ingredients just until moistened. Fold in remaining ingredients., Fill greased or paper-lined muffin cups three-fourths full. Bake at 350° for 18-22 minutes or until a toothpick inserted in muffin comes out clean. Cool for 5 minutes before removing from pans to wire racks.

  • Add wet bran mixture to dry ingredients, stirring just until moistened.
  • Fill greased muffin tin and bake at 375 F for 15-20 minutes.

I made these at the request of my oldest granddaughter who likes healthy food. Even though these may be put in the refrigerator for up to two weeks, you may bake them all at once and freeze them. They are so moist and good. Very healthy as they are lower in fat than some and eggs whites are used in place of the whole eggs. They make about 24 muffins.

2 cups shreds of whole all-bran cereal
1 1/2 cups buttermilk
2 cups all-purpose flour
1/2 cup whole wheat flour
1 cup sugar
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon ginger
1/4 teaspoon salt
1/2 cup raisins
1 cup unsweetened applesauce
1/2 cup oil
4 egg whites (slightly beaten with a fork)

Steps:

  • In a medium bowl combine all bran cereal and buttermilk; let stand 5 minutes till cereal is softened.
  • Meanwhile in another large bowl combine both flours, sugar, baking powder, baking soda, cinnamon, ginger, salt, and raisins and mix well.
  • To the cereal and buttermilk mixture add the applesauce, oil, and egg whites and blend well.
  • Add this to the flour mixture all at once and stir till just moistened.
  • You may bake this immediately or stored in tightly covered container and put in refrigerator for up to two weeks.
  • When ready to bake, heat oven to 400 degrees; spray cupcake papers with nonstick cooking spray.
  • Stir batter and fill about 3/4 full.
  • Bake at 400 degrees for about 15-17 minutes till done.
  • Serve warm.

2 eggs
2/3 cup vegetable oil
1/2 cup whole milk
2/3 cup honey
1/4 cup plain yogurt (or vanilla yogurt)
1/2 tsp pure vanilla extract
1 cup rolled oats (+ 3 tbsp for topping (quick or old fashioned))
1 1/4 cup crushed bran cereal
1 1/2 cups all-purpose flour
1 tsp baking powder
1 tsp baking soda
1 tsp cinnamon
1/2 tsp salt
1 large Granny Smith apple (peeled and coarsely grated)
1 tbsp brown sugar

Steps:

  • Preheat the oven to 375F and line your muffin tin with paper liners.
  • Mix the eggs, oil, milk, honey, yogurt, and vanilla together in a large mixing bowl until well blended. Add 1 cup of the rolled oats and the crushed bran. Let soak for 10 minutes.
  • In another bowl, mix together flour, baking soda, baking powder, cinnamon, and salt. Add the wet ingredients in and mix until blended {the batter will be quite thick}. Stir in the grated apple.
  • Scoop the batter into the muffin tin and fill up almost to the top {they rise very little}.
  • Mix brown sugar and the remaining oats together and sprinkle on top.
  • Bake for 15-20 minutes {until a toothpick inserted into the center of the muffin comes out clean}. Makes 16.
  • Serve warm with butter or jam. We just refrigerate these and warm them up in the microwave for 10-20 seconds in the morning.
