This moist and fruity cake is a great way to get kids to eat fruit, you may have trouble stopping them!

250g self-raising flour
175g butter
175g light muscovado sugar
½ tsp cinnamon
2rounded tbsp demerara sugar
1 small eating apple, such as Cox's, quartered (not cored or peeled)
2 large eggs, beaten
1 orange, finely grated zest
1 tsp baking powder
225g blackberry

Steps:

  • Preheat the oven to 180C/gas 4/fan 160C. Butter and line the bottom of a 1.7 litre loaf tin (see tip below). In a large bowl, rub the flour, butter and muscovado sugar together with your fingers to make fine crumbs. Measure out 5 level tbsp of this mixture into a small bowl for the topping, and mix in to it the cinnamon and demerara sugar. Set aside.
  • Coarsely grate the apple down to the core and mix in with the eggs and the zest. Stir the baking powder into the rubbed-in mixture in the large bowl, then quickly and lightly stir in the egg mixture until it drops lightly from the spoon. Don't overmix.
  • Gently fold in three quarters of the berries with a metal spoon, trying not to break them up. Spoon into the tin and level. Scatter the rest of the berries on top. Sprinkle over the topping and bake for 1¼ -1 hour 20 minutes. Check after 50 minutes and cover loosely with foil if it is browning too much. When done the cake will feel firm, but test with a skewer.
  • Leave in the tin for 30 minutes before turning out, then cool on a wire rack. Peel off the paper before cutting. Will keep wrapped in foil or in a tin for up to 2 days.

750g (about 2 large) bramley apples
400g (about 3) crisp eating apples, such as cox
250g blackberries
2-3 tsp cornflour
100-150g caster sugar, depending on the sweetness of the fruit
For the crumble topping
240g plain flour
150g butter, at room temperature, cut into small pieces
120g demerara sugar
You'll also need...
2 litre shallow baking dish

Steps:

  • Heat the oven to 190°C/170°C fan/gas 5. For the crumble topping, sift the flour and a pinch of salt into a mixing bowl, add the butter and rub the mixture together with your fingertips until it resembles breadcrumbs, as for pastry. Continue rubbing in until the mixture begins to stick together to form small pea-size clumps. Stir in the demerara sugar.
  • Peel, quarter and core the bramley apples, then thinly slice them into a large mixing bowl. Peel, quarter and core the eating apples, then cut them into slightly thicker wedges. Add to the bramleys with the blackberries and mix together.
  • Mix the cornflour with the caster sugar, add to the bowl of fruit and toss together well. Set aside for a few minutes until the fruit juices begin to seep out and make the sugar damp, then toss everything together once more until the cornflour mixture clings to the outside of the fruit.
  • Spoon the fruity mixture into the baking dish, then pack it down into an even layer with your hands or the back of a spoon.
  • Spoon the crumble mixture in an even layer over the top of the fruit. Bake for 45 minutes until the topping is richly golden brown and the fruit is bubbling hot and tender.
  • Remove the crumble from the oven and leave to rest for 5-10 minutes. Serve hot with custard, crème fraîche, cream, ice cream or yogurt.

120g plain flour
60g caster sugar
60g unsalted butter at room temperature, cut into pieces
300g Braeburn apple
30g unsalted butter
30g demerara sugar
115g blackberries
¼ tsp ground cinnamon
vanilla ice cream, to serve

Steps:

  • Heat oven to 190C/170C fan/gas 5. Tip 120g plain flour and 60g caster sugar into a large bowl.
  • Add 60g unsalted butter, then rub into the flour using your fingertips to make a light breadcrumb texture. Do not overwork it or the crumble will become heavy.
  • Sprinkle the mixture evenly over a baking sheet and bake for 15 mins or until lightly coloured.
  • Meanwhile, for the compote, peel, core and cut 300g Braeburn apples into 2cm dice.
  • Put 30g unsalted butter and 30g demerara sugar in a medium saucepan and melt together over a medium heat. Cook for 3 mins until the mixture turns to a light caramel.
  • Stir in the apples and cook for 3 mins. Add 115g blackberries and ¼ tsp ground cinnamon, and cook for 3 mins more.
  • Cover, remove from the heat, then leave for 2-3 mins to continue cooking in the warmth of the pan.
  • To serve, spoon the warm fruit into an ovenproof gratin dish, top with the crumble mix, then reheat in the oven for 5-10 mins. Serve with vanilla ice cream.

125g butter , softened, plus extra for the tin
125g caster sugar
3 large eggs , beaten
50g ground almond
100g self-raising flour
2 Discovery, Russet or Worcester apples , peeled and cored, each cut into 12 segments
100g blackberry
1 large pinch cinnamon
2 tbsp demerara sugar
25g butter , cut into small flakes
25g peeled and toasted hazelnut , roughly chopped
icing sugar , for dusting

Steps:

  • Heat oven to 160C/140C fan/gas 3. Butter a 22cm round loose-bottomed cake tin and line the base with baking parchment. Beat the butter and caster sugar together in a large bowl until it is light and fluffy. Gradually pour in and beat the eggs, a little at a time, until you have used two-thirds, adding flour if it curdles. Fold in the remaining egg, the ground almonds and finally the flour, and combine everything gently.
  • Add two-thirds of the apples to the cake mixture and all the blackberries. Turn the mixture into the prepared tin and smooth it out evenly. Scatter the remaining apples over the surface of the cake. For the topping, sprinkle over the cinnamon, demerara sugar and butter. Bake for 50-55 mins or until a skewer comes out clean. Remove the cake from the oven and scatter on the toasted hazelnuts. When the cake is cool, dust lightly with icing sugar. Serve in slices.

I don't use the word "best" to describe just any recipe. But this blackberry crumble might just be my favorite summer dessert! It has the perfect balance of sweet and tart, tender and crisp, fruit and crumble. Top with a scoop of vanilla ice cream for the ultimate summer dessert!

2 cups all-purpose flour
¼ teaspoon salt
¾ teaspoon baking powder
1 teaspoon cinnamon
1/2 cup granulated sugar
1/4 cup brown sugar
¾ cup frozen unsalted butter
1 ½ teaspoons vanilla extract
2 large egg yolks
1-2 teaspoon apple cider vinegar
3 cups blackberries*
1 teaspoon lemon zest
2 teaspoons fresh lemon juice
⅓ cup granulated sugar
2 teaspoons cornstarch

Steps:

  • Preheat oven to 375 degrees F (190 degrees C) and spray a 2-quart baking dish with nonstick cooking spary or grease with butter.
  • To make the crumble, whisk flour, salt, baking powder, cinnamon and sugars together in a large mixing bowl.
  • Using a cheese grater, grate in the frozen butter. (you could cut the butter in with a pastry cutter, if you prefer) Gently toss the butter into the flour mixture until coated.
  • Using a fork, stir in vanilla and egg yolks until egg is mostly absorbed. Add vinegar and give the mixture another stir. Use your hands to finish incorporating all of the ingredients. Mixture should clump, but remain mostly dry. If your mixture is not clumping, add another teaspoon of apple cider vinegar. Set crumble aside.
  • To make the fruit filling, combine blackberries, lemon zest, lemon juice, sugar, and cornstarch in a separate medium mixing bowl.
  • Transfer about 1/2 of the crumble mixture into the bottom of baking dish. Press mixture down using a flat measuring cup or damp hands. Pour the berry mixture over the crust. Add the remaining crumble mixture on top. Some small clumps are best!
  • Bake for 40 to 45 minutes and until top is golden brown and blackberry juice is bubbling. Allow the crumble to cool for about 20-30 minutes. Serve with a scoop of vanilla ice cream and enjoy!

3 large green apples, peeled and cored
⅓ cup water
3 tablespoons white sugar, or more to taste
½ pound fresh blackberries, or more to taste
2 cups all-purpose flour
½ cup white sugar
⅓ cup unsalted butter, slightly softened

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Slice apples and place in a saucepan with water and 3 tablespoons sugar. Heat over medium-low heat for 5 minutes, stirring every minute to prevent sticking. Stir in blackberries and taste, adjusting sugar if necessary. Make sure apples get thoroughly coated with blackberry juice. Cook for about 3 minutes; mixture will still be runny. Pour into a 2-quart casserole dish and allow to cool slightly.

350g (12oz) self-raising flour
10ml (2tsp) ground cinnamon
175g (6oz) unsalted butter, chilled and diced
150g (5oz) caster sugar
2 medium eggs, beaten
2 large apples, peeled cored and diced
150g (5oz) blueberries
150g (5oz) blackberries
45ml (3tbsp) demerara sugar
75g (3oz) mixed chopped nuts

Steps:

  • Preheat the oven to 190°C, 375°F, Gas 5. Place a baking sheet in the oven to heat up. Grease a 20cm x 24cm (8in x 91/2in) cake tin and line with baking parchment, allowing the edges of the parchment to hang over the side.
  • Sift the flour and cinnamon into a large bowl. Add the butter and rub into the flour with your fingertips until the mixture resembles coarse breadcrumbs. Remove 175g (6oz) of the crumble mixture to another bowl and set aside.
  • Stir the caster sugar and beaten eggs into the larger amount of crumble to make a soft and slightly sticky dough. Press evenly into the base of the cake tin using floured hands. Scatter over the diced apple and berries.
  • Stir the demerara sugar and chopped nuts into the rest of the crumble mixture and spoon over the fruit, pressing down gently.
  • Bake on the hot baking sheet for 35-45 mins (covering loosely with foil after 20 mins) until the cake is golden brown. Leave to cool in the tin for 20 mins, then remove by gently lifting the parchment. Serve warm or cold.

3 eating apples, peeled, quartered and cored
2 Bramley cooking apples, peeled, quartered and cored
2 tsp cinnamon
100g demerara sugar
300g blackberries
175g plain flour
1 tsp cinnamon
140g soft brown sugar
35g porridge oats
180g cold unsalted butter

Steps:

  • Put the quartered apples in a bowl and shuffle them around to mix them up a bit. Mix the cinnamon with the sugar in a separate bowl. Put half the apples in an oven dish and sprinkle with a third of the sugar mixture. Add the blackberries and sprinkle with the second third of sugar mixture. Cover with the remaining apples and add the remaining sugar and cinnamon mixture.
  • To make the crumble topping: Put the flour and cinnamon in a bowl and mix well, then stir in the sugar and the oats. Cut the butter into small cubes, add to the mixture and rub it in with your fingertips until the mixture is the texture of breadcrumbs. Lay the crumble mixture on top of the fruit.
  • Preheat the oven to 170°C/325°F/Gas 3 and bake the crumble for about 40 mins. Keep an eye on the top. The sugar should go golden, not black. Serve with homemade custard.

50 g light brown sugar
225 g caster sugar
175 g self-raising flour
1 teaspoon baking powder
4 medium free-range eggs, beaten
50 g ground almonds
2 small cooking apples, peeled, cored and cut into chunky slices
250 g blackberries (or other berries, fresh or frozen)

Steps:

  • Step 1: Heat the oven to 180ºC. Grease and line a 23cm spring-clip cake tin. With your fingertips, rub together 50G BUTTER with the 50G FLOUR until the mix resembles breadcrumbs. Mix in the LIGHT BROWN SUGAR and set aside in the fridge.
  • Step 2: Cream together 225G BUTTER, softened, with the CASTOR SUGAR in a mixer (or with a hand-held mixer) until pale and fluffy. Gradually add the EGGS, then fold in the SELF-RAISING FLOUR, ALMONDS and BAKING POWDER. Transfer to the prepared tin.
  • Step 3: Arrange the APPLE SLICES on top, then scatter the BLACKBERRIES over; top with crumble mixture. Bake for 50 mins, or until a skewer inserted into the middle comes out clean. Leave on a wire rack for 5 mins, then turn out and serve warm with custard.
  • NOTE: Defrost and drain frozen berries well before adding to the cake.
