This recipe was inspired by camping trips I used to take with my family when I was younger. Originally, this cobbler was made using huckleberries, and baked over a campfire; but since I no longer live in an area where I can get huckleberries and don't have a constant campfire going, I substituted frozen wild blueberries and baked it in the oven instead. I also use a homemade apple beer in the batter, but use whatever hard cider or fruity beer you like.

4 Gala apples - peeled, cored, and cut into 1/16-inch slices
2 cups frozen wild blueberries
⅓ cup maple syrup
1 tablespoon cornstarch
1 lemon, juiced
½ teaspoon ground cinnamon
½ teaspoon kosher salt
¼ teaspoon ground nutmeg
½ cup maple syrup
¼ cup unsalted butter, melted
½ teaspoon vanilla extract
1 ½ cups whole wheat flour
1 teaspoon baking powder
1 teaspoon baking soda
½ teaspoon kosher salt
1 cup hard apple cider

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 10-inch cast iron skillet.
  • Mix apples, blueberries, maple syrup, cornstarch, lemon juice, cinnamon, kosher salt, and nutmeg together in a large bowl. Toss to thoroughly combine. Pour into the prepared skillet.
  • Stir maple syrup, melted butter, and vanilla extract together in a large bowl. Add flour, baking powder, baking soda, and kosher salt; stir until crumbly. Pour in cider and stir until just combined. Place dollops of batter over apple-berry mixture.
  • Bake in the preheated oven until biscuit topping is cooked through and fruit is bubbly, about 45 minutes.

3 pounds crisp apples (such as Braeburn or Empire)
2/3 cup granulated sugar
2 tablespoons fresh lemon juice
3 tablespoons unsalted butter
1/2 teaspoon ground cinnamon or apple pie spice
1/4 teaspoon salt
1 1/2 cups mixed berries (such as raspberries, blueberries and blackberries)
1 1/2 cups mixed berries (such as raspberries, blueberries and blackberries)
1 cup all-purpose flour
3 tablespoons granulated sugar
1 teaspoon baking powder
1/8 teaspoon baking soda
Pinch of freshly grated nutmeg
Pinch of salt
4 tablespoons cold unsalted butter, cut into small pieces
1/2 cup buttermilk
Turbinado sugar, for sprinkling

Steps:

  • Prepare the crust: Roll out the dough into a 12-inch round on a lightly floured surface. Ease into a 9-inch pie plate, fold the overhanging dough under itself and crimp the edge with your fingers. Chill 30 minutes.
  • Position a rack in the lower third of the oven and preheat to 350 degrees F. Line the dough with foil and fill with pie weights or dried beans. Bake until golden around the edge, about 20 minutes. Remove the foil and weights and continue baking until golden all over, 10 to 15 more minutes. Transfer to a rack and let cool completely.
  • Meanwhile, make the filling: Peel the apples; cut into 1/2-inch pieces. Toss with the granulated sugar and lemon juice in a bowl. Melt the butter in a large skillet over medium-high heat. Add the apples and cook, stirring occasionally, until slightly softened, 10 to 12 minutes. Add the flour, cinnamon and salt and stir until the juices thicken, 2 minutes. Remove from the heat and fold in the berries; let cool completely. (The filling can be made up to 2 days ahead; cover and refrigerate.)
  • While the filling cools, make the topping: Whisk the flour, granulated sugar, baking powder, baking soda, nutmeg and salt in a large bowl. Cut in 3 tablespoons butter with your fingers until it is in pea-size pieces. Add the buttermilk; stir with a wooden spoon to make a shaggy dough.
  • Spoon the filling into the crust; dot with the remaining 1 tablespoon butter. Drop large spoonfuls of the topping over the filling and sprinkle generously with turbinado sugar. Place the pie on a rimmed baking sheet. Transfer to the oven and bake until the topping is golden, 50 minutes to 1 hour. (Cover the pie with foil if it is browning too quickly.) Transfer to a rack and let cool until set, about 3 hours.

4 cups sliced apples (1/2-inch slices)
2 cups blackberries
2 Tbs. to 1/3 cup sugar, depending on the sweetness of the fruit
2 tsp. cornstarch
1 Tbs. lemon juice

Steps:

  • Heat the oven to 375°F.
  • Combine the flour, both sugars, salt, and cinnamon in a medium bowl. Rub in the butter with your fingertips until it's well blended and the mixture crumbles coarsely; it should hold together when you pinch it. Add the hazelnuts. Refrigerate the topping until you're ready to use it.
  • Put the apples and blackberries in a large bowl. Taste the fruit and sprinkle on the sugar as needed (use 2 Tbs. sugar for very ripe fruit, or up to 1/3 cup for tarter, less-ripe fruit).
  • In a small dish, dissolve the cornstarch in the lemon juice. Gently toss the mixture with the fruit.
  • Pour the fruit into an 8- or 9-inch square (or similar-capacity) glass or ceramic baking dish. Set the pan on a baking sheet to catch overflowing juices. Top the fruit with half of the topping (keep the other half refrigerated) and bake for 20 minutes.
  • Sprinkle the remaining topping over the crisp and continue baking until the fruit is tender when pierced with a knife, the topping is crisp, and the juices are bubbling, another 25 to 35 minutes. Let cool for 20 to 30 minutes. Serve warm.

1 tablespoon freshly squeezed lemon juice
1 teaspoon ground cinnamon

Steps:

  • Preheat the oven to 375 degrees F.

1 egg yolk

  • 1. In a large bowl, stir together the apples, brown sugar, granulated sugar, cinnamon, salt, nutmeg, cornstarch, lemon zest and lemon juice. Transfer to a large heavy-bottomed pot, cover and set over medium heat. Cook the apples, stirring occasionally, until almost tender, about 45 minutes. Fold in the blackberries. 2. Preheat an oven to 350°F. 3. In a food processor, combine the flour, sugar and salt and pulse just to combine.
