- In a large shallow pan/casserole dish (with a lid) heat up the oil, add the ginger, cabbage, grated beetroot and fry over a medium heat for 4 minutes, stirring often.
- Add the rest of the ingredients, stir thoroughly, cover and simmer for about 25 minutes, or until the vegetables are tender. Stir occasionally. Serve hot. Adjust seasoning if necessary, sprinkle with fresh herbs, add the lemon zest and drizzle with a little oil before serving.

- Scrub beets and trim tops to 1 in. Place in a Dutch oven; add water to cover. Bring to a boil. Reduce heat; simmer, covered, 30-60 minutes or until tender. Remove from the water; cool., Peel beets and cut into 1/2-in. cubes. In a large bowl, combine the apples, kale, cabbage, carrots, onion and beets., In a small bowl, whisk the remaining ingredients. - Finely chop cabbage and transfer it to a large mixing bowl.
- Thoroughly squeeze sauerkraut by the fist-fulls to remove excess moisture until you have 1/2 cup of squeezed sauerkraut then add it to the salad bowl.
- Add sliced cucumber and granny smith apple, chopped dill and green onion.

- Preheat the oven to 400 degrees. Trim and scrub beets. Brush each beet with a drizzle of olive oil and wrap in aluminum foil. Roast beets on the center rack of the oven for 45 to 60 minutes, until tender. Remove from oven, open foil and let cool.
- While the beets are roasting, prepare the dressing and other ingredients. You can use pre-shredded cabbage (recommended) or use a mandoline or very sharp knife to slice a head of red cabbage. For the dressing, combine the shallot, mustard, and vinegar in a small bowl or dressing jar, and let this mixture sit for ~15 minutes. Then add the olive oil and whisk/shake until well combined.
- In a large bowl, combine the shredded cabbage and dried cranberries. Using a hand grater, shred the apple and cooked beets into the bowl. Add the vinaigrette and mix until combined.
- You can serve immediately, or put this in the fridge for 30 minutes to an hour, and serve cold. Just before serving, squeeze the lemon on top of the slaw and stir. Enjoy!

- Wash and peel the beets. Rinse the apples and cabbage. Prepare the food processor with the cheese shredding blade.
