This is another from the Ball Blue Book. Posted in response to a request. The cinnamon, nutmeg and allspice are to taste. Thus no exact measurements.

3 lbs apples
water

Steps:

  • Peel, core and quarter apples.
  • You will need 3 to 3-1/2 pounds per quart of applesauce.
  • Place in large saucepot.
  • Cook apples with just enough water so they don't stick.
  • Cook over medium heat until soft.
  • Puree in food processor or food mill until smooth.
  • Return to pan and bring to a boil.
  • You may add sugar if desired.
  • Taste to see how sweet the apples are.
  • You can also add cinnamon, nutmeg or allspice the last 5 minutes of cooking time.
  • Keep applesauce boiling and ladle hot sauce into hot jars leaving 1/2 inch headspace.
  • Remove air bubbles and adjust two piece caps.
  • Process pints and quarts for 20 minutes in a boiling water canner.
  • If you like chunky sauce, only puree half of the apples and crush the other half with a potato masher.
  • Prep time is an estimate as it depends on how many quarts of sauce you are preparing.

8 cups applesauce
6 cups brown sugar
4 cups tomato sauce
1 ½ cups apple cider vinegar
4 teaspoons salt
4 teaspoons garlic powder
1 tablespoon ground cinnamon
2 teaspoons liquid smoke flavoring
2 teaspoons chili powder
2 teaspoons paprika
1 teaspoon black pepper
½ teaspoon cayenne pepper
¼ teaspoon ground cloves
7 1-pint canning jars with lids and rings

Steps:

  • Stir applesauce, brown sugar, tomato sauce, vinegar, salt, garlic powder, cinnamon, liquid smoke, chili powder, paprika, black pepper, cayenne pepper, and cloves together in a large pot; bring to a boil, reduce heat to low, and simmer until thickened, 1 1/2 to 2 hours.
  • Sterilize jars and lids in boiling water for at least 5 minutes.
  • Pour sauce into hot, sterilized jars, filling to within 1/4 inch of the top. Run a knife or thin spatula around the insides of the jars after they have been filled to remove any air bubbles. Wipe the rims of the jars with a moist paper towel to remove any food residue. Top with lids and screw on rings.
  • Place a rack in the bottom of a large stockpot and fill halfway with water. Bring to a boil and lower jars into the boiling water using a holder. Leave a 2-inch space between the jars. Pour in more boiling water if necessary to bring the water level to at least 1 inch above the tops of the jars. Bring the water to a rolling boil, cover the pot, and process for 20 minutes.
  • Remove the jars from the stockpot and place onto a cloth-covered or wood surface, several inches apart, until cool. Once cool, press the top of each lid with a finger, ensuring that the seal is tight (lid does not move up or down at all). Store in a cool, dark area.

½ cup ketchup
2 cups unpacked brown sugar
6 tablespoons lemon juice
½ teaspoon salt
½ teaspoon ground black pepper
½ teaspoon paprika

Steps:

  • In a saucepan over medium heat, mix applesauce, ketchup, brown sugar, lemon juice, salt, pepper, paprika, garlic powder, and cinnamon. Bring mixture to a boil. Remove from heat, and cool completely. Use to baste the meat of your choice.

I saw jars of apple butter BBQ sauce at an apple orchard a few weeks ago. I thought this was a splendid idea-especially for ribs. I've scoured the Internet, and this recipe looks like the best bet. It's originally from Smuckers, (featuring their apple butter). That said, I made a large batch of apple butter (Recipe #70016), so I'm using homemade. Again, use what you can get.

1 cup smucker's cider apple butter (or your own)
1/2 cup ketchup
1 tablespoon prepared mustard
1 teaspoon Worcestershire sauce
3 teaspoons liquid smoke
1/2 teaspoon red pepper flakes
1/2 teaspoon coarse kosher salt
1/2 teaspoon fresh ground pepper
1 cup finely chopped onion
1 teaspoon apple cider vinegar
1/2 teaspoon minced garlic
1/2 cup firmly packed brown sugar
1/2 teaspoon paprika

Steps:

  • Add everything together. Well, that's where their recipe ends. I think that's silly. So, let's continue.
  • Sauté the onion in a frying pan with a little bit of olive oil, medium heat. Cook till translucent.
  • Add the garlic, cook for about a minute.
  • Put everything into a sauce pot on medium heat, stir everything together.
  • Before a boil begins, drop the heat to low and simmer for 15-20 min., stirring frequently.
  • Take it off heat, let it cool for 30 minute (unless you're canning, of course).
  • Store it however you wish. It should keep in the fridge for 30 days, in a freezer for longer, or just can it.

1 cup apple juice
⅓ cup apple cider vinegar
¼ cup brown sugar
2 tablespoons molasses
1 tablespoon black pepper
1 tablespoon garlic powder
1 tablespoon onion powder
1 teaspoon celery salt
1 teaspoon ground coriander
1 medium jalapeno (finely diced (seeds removed if you want mild sauce))

Steps:

  • Make the sauce. In a medium saucepan, combine all ingredients and whisk to combine. Cook over medium heat until the mixture comes to a boil, then reduce the heat and simmer for 25 minutes.
  • Use or store. Remove the sauce from the heat and allow it to cool. Transfer the sauce to a lidded jar and chill in the refrigerator overnight before using. This sauce will last 2 weeks in the fridge if stored in an airtight container.

A tangy, applely barbecue sauce

12 cups peeled and cored chopped apples
12 cups cored, chopped tomatoes
1 medium onion, chopped
2 cups brown sugar
1 1/2 cups apple cider vinegar
2 cinnamon sticks
1 TBS celery seeds
1 tsp whole allspice
1 tsp cardamom seeds
1 tsp coriander seeds
2 tsp whole cloves
3 star anise
1/4 cup sea salt
1 cup balsamic vinegar

Steps:

  • Add the apples. onion and tomatoes to a large pot and heat over medium high heat until the the mixture comes to a boil. Lower the heat and let simmer until the tomatoes and apples are very soft. about a hour.
  • Run an immersion blender until smooth. If you do not have an immersion blender puree the mixture in batches in a blender or food processor and return to pot.
  • Add the brown sugar and stir. Bring to a simmer
  • Take a small piece of cheesecloth and add the spices to it. Tie it up. Add to the apple cider vinegar in a small pot
  • Heat the apple cider vinegar to a boil. Remove from heat and let the spice bag steep for 30 minutes.
  • Remove the spice bag and pour the seasoned vinegar into the apple/tomato mixture.
  • Let the mixture simmer until reduced by about a third. Add the balsamic vinegar.
  • Keep the sauce simmering until it reaches the consistency you desire.
  • Prepare jars and canner per instructions.
  • Add the sauce to the hot jars leaving 1/2″ headspace.
  • Place lids, twisting hand tight
  • Process for 30 minutes, turn off the heat and let sit for 5 minutes and remove from canner

APPLE BROWN SUGAR BBQ SAUCE

1 cup dark brown sugar
1/2 cup applesauce
1/2 cup apple cider vinegar
1/4 cup apple juice
1/2 teaspoon garlic powder
1/2 teaspoon ground ginger
1/2 teaspoon liquid smoke
1/2 teaspoon onion powder
1/2 teaspoon kosher salt
2 Gala apples, diced fine

Steps:

  • Add the ketchup, sugar, applesauce, vinegar, apple juice, garlic powder, ground ginger, liquid smoke, onion powder, salt and apples to a medium saucepot and set over medium heat. Stir and bring to a simmer. Simmer for 15 to 20 minutes to reduce, then remove from the heat. Puree the sauce until smooth. Serve warm or cool and store refrigerated in an airtight container.

  • Wash, peel, core, and quarter apples.
  • In a large covered pot, add apples and just enough water to prevent sticking. Cook over med-low heat until apples are soft.
  • Once apples are soft, puree using a food processor, food mill, or immersion blender. Return puree to saucepan.
  • Add sugar to taste, if desired.
  • Bring applesauce to a boil, stirring to prevent sticking.
  • If canning: Fill hot, sterile jars. Leave 1/2" headspace.
  • Fit 2 piece lids and process in a water bath canner for 20 minutes (pints and quarts).
