This is a nice spin on traditional baked chicken and apples - bacon makes it that much better! This recipe can be easily adapted for the fall fruits or veggies you have on hand, and is delicious served with mashed sweet potatoes.

½ cup dried cranberries
½ cup apple cider
1 tablespoon olive oil
4 skinless, boneless chicken breast halves
salt and ground black pepper to taste
½ cup stone-ground mustard
½ cup applesauce
4 slices bacon, halved crosswise
2 Granny Smith apples, quartered
2 sweet onions (such as Vidalia®), quartered

Steps:

  • Soak cranberries in apple cider in a bowl until cranberries are rehydrated, 2 to 6 hours.
  • Preheat oven to 425 degrees F (220 degrees C). Coat bottom of a baking dish with olive oil.
  • Arrange chicken breasts in the prepared baking dish; sprinkle with salt and black pepper.
  • Whisk mustard and applesauce together in a small bowl; spoon over chicken breasts. Lay two half-slices of bacon atop each chicken breast. Arrange apples and onions around chicken. Add cranberries, pouring any remaining apple cider over chicken. Cover dish with aluminum foil.
  • Bake in the preheated oven for 40 minutes. Remove aluminum foil and continue baking until bacon is crisp and chicken breasts are no longer pink in the center and the juices run clear, about 20 more minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

1/2 teaspoon pepper
1 tablespoon olive oil
2/3 cup chunky applesauce
2/3 cup spicy barbecue sauce

Steps:

  • Sprinkle chicken with pepper. In a large skillet, brown chicken in oil on both sides. In a small bowl, combine the remaining ingredients; pour over chicken. Cover and cook until a thermometer reads 165°, 7-10 minutes. Freeze option: Cool chicken; transfer to a freezer container and freeze for up to 3 months. Thaw in the refrigerator overnight. Cover and microwave on high until heated through, 8-10 minutes, stirring once.

1/4 teaspoon pepper
1 tablespoon olive oil
1 bottle (18 ounces) sweet and spicy barbecue sauce
2 cups applesauce
1/3 cup packed brown sugar
1 tablespoon chili powder

Steps:

  • Sprinkle drumsticks with pepper. In a Dutch oven, heat oil over medium heat. Brown drumsticks in batches; drain. Remove from pan., Add remaining ingredients to pan, stirring to combine. Return chicken to pan; bring to a boil. Reduce heat; simmer, covered, 20-25 minutes or until chicken is tender.

2/3 cup ketchup
2/3 cup apple cider
1/3 cup honey
3 garlic cloves (minced)
2 tablespoons apple cider vinegar
1/2 teaspoon onion powder
½ teaspoon smoked paprika
¼ teaspoon garlic powder
2 ½ pounds chicken breasts

Steps:

  • In a bowl, stir together all the BBQ sauce ingredients. Reserve ½ cup of the sauce. Set aside.
  • Place the chicken breasts in a zip top plastic bag. Add in the reserved ½ cup sauce and place in the fridge for at 1 hour, and up to overnight, to marinade.
  • Preheat the oven to 400 degrees. Line a baking sheet with parchment paper.
  • Simmer the BBQ sauce in a small saucepan for 10 minutes, or until thickened and fragrant.
  • Place the marinated chicken on the baking sheet. Bake for 10 minutes. Remove from the oven and baste the chicken with a thick glaze of bbq sauce. Return to the oven and bake for 20-30 more minutes, basting every 10.
  • Remove, baste again, and place back into the oven set to broil for 3-5 minutes until the bbq sauce forms a glaze.
  • Serve with your favorite sides and enjoy!
