These fantastic apple fritters accompany each meal at the Applewood Farmhouse restaurant in Sevierville, Tennesee. Roll warm fritters in powdered sugar and serve immediately with cold glasses of milk!

Number Of Ingredients 8

Ingredients

1 1/2 cups self-rising flour
1 tablespoon sugar
2 eggs, beaten
2/3 cup milk
1 tablespoon vegetable oil
3 cups apples, peeled and chopped (finely)
hot vegetable oil (for frying, to equal 1/2 inch deep)
confectioners' sugar

Steps:

Combine dry ingredients.
Add eggs, milk, 1 tablespoonful oil, and apples.
Stir just until combined.
Drop batter by spoonfuls into hot oil.
Cook 3-4 minutes on each side or until golden brown.
Drain on paper towels.
Roll fritters in powdered sugar.

Ingredients

1 c milk
1 egg, beaten
4 Tbsp margarine
1/4 c sugar
1/2 tsp salt
1 orange, rind and juice
1 c apples, chopped
3 c cake flour
2 tsp baking powder
1 tsp vanilla extract

Steps:

1. Beat egg. In a mixing bowl, combine milk, egg, and melted margarine. Add the orange juice, rind, chopped apples (skins can be left on) and vanilla extract. Sift together the flour, salt and baking flour. Stir into milk mixture with a spoon until blended. Do not overmix.
2. Heat oil in a skillet to 350 degrees F. Drop off end of tablespoon into hot oil. Fry to a golden brown. Turn so they brown evenly. Allow to cool.

¼ cup lemon juice
1 sprig fresh mint leaves

Steps:

In a large pitcher, stir together the apple juice, orange juice, pineapple juice and lemon juice. Mix and pour into glasses full of ice to serve. Garnish each serving with a mint leaf.
