APPLE RADISH BBQ RIBS
This recipe is fun, easy, and a real crowd pleaser at the family dinner table. This recipe is very forgiving, and can be used for any kind of ribs. All measurements can be altered to change taste and yield results.

Steps:
- Place ribs in a stock pot, and cover with apple juice. Bring to a boil, reduce heat, and simmer for 1 to 2 hours. Preheat oven to 350 degrees F (175 degrees C).
- In a medium bowl, mix together barbecue sauce, horseradish, Worcestershire sauce, and garlic salt. Stir in 3 tablespoons of the apple juice from the ribs.
- Brush underside of ribs with 1/3 of the sauce. Turn them over, and place in roasting pan. Brush tops with remaining sauce.
- Bake in preheated oven for 25 to 35 minutes, brushing occasionally with sauce.

- Place ribs in a large stock pot, cover with apple juice and bring to a boil. Reduce heat. Simmer for 1 to 2 hours. Combine vinegar through to pepper in a medium saucepan and stir until smooth. Simmer over medium heat until reduced by 1/3, about 15 to 20 minutes. Remove from heat. Stir in horseradish and 3 tablespoons of the apple juice from the stock pot. Brush underside of ribs with 1/3 of sauce. Place in pan facing up. Brush tops with 1/3 of sauce. Bake in a 350 degree F preheated oven for 25 to 35 minutes. Brush occasionally with sauce.
SLOW-COOKER APPLE-GLAZED RIBS

- Mix the apple sauce, honey, Worcestershire sauce and spices together in a large bowl until well combined.
- Season the ribs well with salt and freshly ground black pepper, then add them to the bowl and mix well to completely coat them in the apple glaze.
- Transfer the ribs to the slow cooker and cook on a low heat for 7-8 hours, or until the meat is falling off the bone.
- To serve, divide the apple-glazed ribs among 4 serving plates and serve with sweetcorn, spicy baked beans and mashed potatoes.
APPLE BBQ PORK RIBS
These ribs are loaded with flavor. Slow cooking with low heat is key. The ribs will be very tender and juicy, and the layered apple flavors make for a very fine eating experience. Prep time does not include an overnight stay in the refrigerator.

Steps:
- Mix rub ingredients and store in air tight container. Recommend making a triple batch so you'll have some for later.
- Remove membrane from bone side of ribs. Rub ribs generously with rub, wrap in plastic wrap, and refrigerate over night.
- Remove wrap from ribs and bring to room temperature. Re-season with rub.
- Bring grill/smoker up to around 200 degrees F. Using indirect heat, smoke ribs for 5-7 hours. Turn and baste with mop every hour.
- For the finishing sauce, combine all ingredients in a sauce pan and bring to a boil, reduce heat and simmer for one hour.
- For the smoke, use apple wood chips soaked in water. Keep the temperature as close to 200 as possible.
- Apply finishing sauce during the last hour--careful not to burn. Ribs are done when about 3/8 inch of bones are exposed and the rib bones come loose from the meat when twisted.
- Remove from heat, re-season with rub mixture, and let sit for at least 30 min prior to cutting into 2-rib portions.

MAPLE-BOURBON APPLE BARBECUE RIBS

- Add oil to a large saucepan over medium-high heat. Add onion and apple and cook about 5-7 minutes or until apples and onions are soft, stirring occasionally.
- Add vinegar, cider (or juice), bourbon, and tomatoes with liquid to pot. Stir to combine. Stir in salt, garlic powder, black pepper, cinnamon, nutmeg, and allspice until combined.
- Bring mixture to a boil, then reduce heat to simmer for about 30-60 minutes or until reduced. Use an immersion blender to blend (or you can use a blender. SEE NOTES BELOW). Stir in maple syrup and liquid smoke to your liking. Cool completely and refrigerate at least a few hours or overnight.
- Prepare ribs as desired on grill (or in oven). During last few minutes of cooking, baste ribs with sauce.

- Mix the barbeque sauce and applesauce in bowl. Place ribs on a large sheet of heavy duty aluminum foil, and rub on all sides with the salt, pepper, cayenne pepper, and garlic powder. Pour sauce over ribs to coat. Seal ribs in the foil. Marinate in the refrigerator 8 hours, or overnight.
- Preheat grill for high heat.
- Place ribs in foil on the grill grate, and cook 1 hour. Remove ribs from foil, and place directly on the grill grate. Continue cooking 30 minutes, basting frequently with the sauce, until ribs are done.

- Choose the Right Ribs. Four types of ribs are supplied by the pig: baby backs (sometimes called top loin ribs), spareribs, rib tops, and country style ribs.
- Layer the Rub. A process that produces layers of flavours is one of the secrets of smoked ribs. Begin with a slather, like the mustard Dijon, that is then brushed on both sides of every rib rack.
- Smoker Time. The smoker is heated to about 270 F. Remember to add the bisquettes in the pipe at this point and when everything is up to temperature, the ribs are put in meat side up for 1.5 hours.
- Put on the Goodies. Preparation for the next step: Use 2 sheets of foil for each rack. This is to wrap the ribs in, then put some brown sugar on the ribs, honey on top of the brown sugar, and spray with some apple juice on top of the honey.
- Time to Baste the Ribs with Sauce. Baste the ribs with your favourite BBQ sauce and as in the picture put them back in the smoker for about 1 hour.
