1/2 cup granulated sugar
1/3 cup brown sugar, packed
1/2 tablespoon baking soda
2 teaspoons ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon salt
1 1/2 cups unsweetened applesauce
1/2 cup vegetable oil or melted coconut oil
2 eggs (room temp if using coconut oil)
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour

Steps:

  • Preheat oven to 350°F.
  • Line muffin pan with muffins liners and set aside.
  • In a large bowl combine both sugars, baking soda, spices, and salt.
  • Add the applesauce and mix well (mixture should be completely smooth).
  • Beat in the oil, eggs, and vanilla extract.
  • Add the flour and mix until incorporated. Do not over mix!
  • Scoop the batter into the muffin pan filling the cups to the top.
  • Bake for 20 - 21 minutes until a toothpick inserted comes out with a few crumbs.
  • Cool in pan 5 minutes then transfer to a wire rack (or large plate if you don't have a rack) to continue cooling.
  • Serve warm or cooled completely.

2 cups flour
3/4 cup sugar
2 teaspoons baking powder
1 teaspoon cinnamon
1/4 teaspoon salt
1 large egg, beaten
1 cup unsweetened applesauce
1/2 cup butter, melted
crystal sugar

Steps:

  • Heat oven to 375 degrees.
  • Spray muffin tins with nonstick spray.
  • Mix flour, sugar, baking powder, cinnamon, and salt in a bowl.
  • Mix in beaten eggs, applesauce and melted butter. (by hand, do not need mixer).
  • Evenly scoop mixture into muffin pans.
  • Sprinkle crystal sugar sprinkles on tops of muffins.
  • Bake for 18 to 20 minutes. Test to see if toothpick comes out clean.

1 eggs, beaten

½ cup pecans, chopped

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour a muffin pan, or use paper liners.
  • In a small bowl, mix together applesauce, oil and egg. In a large bowl, combine flour, sugar, baking soda, cinnamon and salt. Make a well in the center, and pour in egg mixture. Stir until just moistened. Fold in cranberries and pecans. Spoon into muffin cups, 2/3 full.
  • Bake in the preheated oven for 25 to 30 minutes, or until a toothpick inserted into the center comes out clean. Cool in pan for 2 minutes before removing.

3 tbsp oil OR applesauce or mashed banana
2 tbsp milk of choice
2 tsp pure vanilla extract
2 tsp white or cider vinegar
1 cup spelt,

1/2 tsp each: baking soda and baking powder
1/4 tsp cinnamon
optional handful raisins, (crushed walnuts, shredded coconut, etc.)

Steps:

  • *If you want to make mini muffins, bake only 10 minutes. I recommend this mini muffin pan.Whisk all liquid ingredients together. Preheat oven to 350, and line a muffin tin. In a new bowl, stir remaining ingredients very well. Pour dry into wet, and stir until just evenly mixed. Fill each liner about 2/3 of the way, leaving a little room because they will rise.
