My mother taught me this recipe, and it has become one of my favorite quick meals. I find that Granny Smith apples work best, as well as a crunchy seed bread.

2 slices whole wheat bread
1 ½ teaspoons olive oil
½ Granny Smith apple - peeled, cored and thinly sliced
⅓ cup shredded Swiss cheese

Steps:

  • Preheat a skillet over medium heat. Lightly brush one side of each slice of bread with the olive oil. Place 1 slice of bread, olive oil side down into the skillet, and arrange the apple slices evenly over the top. Sprinkle the Swiss cheese over the apple, then top with the remaining slice of bread, olive oil-side up. Cook until the bread is golden brown, then flip the sandwich over, and cook until the other side is golden brown and the cheese has melted, 1 to 2 more minutes.

3 teaspoons butter, softened
4 slices cinnamon-raisin bread
½ Granny Smith apple - peeled, cored, and thinly sliced
⅔ cup shredded Gruyere cheese
6 sprigs fresh thyme, leaves removed

Steps:

  • Spread butter on 1 side of each slice of bread; flip, so that buttered sides are facing down. Top 2 slices of bread with apple slices, 1/3 cup Gruyere cheese, and a sprinkle of thyme leaves. Place the other 2 slices of bread on top, buttered sides facing up.
  • Heat a large skillet over medium-low heat. Add sandwiches to the hot pan and cook until bread has toasted and cheese has slightly melted, 4 to 5 minutes. Flip carefully using a spatula, pressing down lightly. Cook sandwiches until golden brown and cheese has melted, 3 to 4 minutes more, watching and adjusting heat if necessary to keep bread from burning before cheese has melted.
  • Transfer sandwiches to a plate, slice in 1/2 diagonally, and serve immediately.

spreadable butter
6 slices bread
1 granny smith apple, sliced
3 slices swiss cheese
apple butter (optional)

Steps:

  • Heat a large skillet to medium-high.
  • Spread butter on 6 slices of bread. Add 3 slices of bread to skillet, butter side down.
  • If using apple butter, dollop a spoonful on the skillet bread and spread around. Add slices of apples to bread and top with a slice of cheese. Add remaining bread, butter side up.
  • Fry until underside is dark, golden brown, then flip over and cook until cheese is melted.

This is another one of my creations. I love grilled cheese sandwichs and Im always trying to make new versions! I reallllllly liked this one! Please only use a tart apple like a granny smith; sweet apples may produce an undesireable result. I really loved this sandwich!!!

1 tart granny smith apple (do not use a sweet apple)
1 shallot
1 clove garlic
1/2 tablespoon butter
1 slice deli cheddar cheese
1 slice deli American cheese
2 slices of fresh Italian bread, thin
butter, to coat bread slices
salt

Steps:

  • First core your apple, and cut it in half.
  • Slice very thin slices from the end of one half, until you have enough to cover your bread (not overlapping. Now take your shallot, and shave paper thin slices, about 4 or 5- reserve rest of shallot for another use. Then take your garlic clove, and shave paper thin slices of garlic from the clove, about 4 or 5 slices, reserve rest of garlic for ).
  • Heat 1/2 tablespoon butter and lightly fry the apple, shallot and garlic. Fry for about 2 minutes and then remove to a plate.
  • Take one slice of bread, butter one side, and then salt it and place it in the pan, and continue by placing 1 slice of cheese on the bread, layer the apple slices evenly over the piece of bread and randomly place the garlic and shallot pieces, place other piece of cheese on top, and then take second piece of bread, butter and salt one side, and place it on top of the cheese slice, butter side up.
  • Fry the sandwich over medium heat until browned on both sides, pressing down on the sandwich whiling cooking to slightly flatten it out; When browned nicely, cut in half and serve.
