1/2 cup butter-flavored shortening
1 cup sugar
2 large eggs, room temperature
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking powder

1-3/4 to 2 cups chopped peeled tart apples
TOPPING:
3/4 cup packed brown sugar
1 teaspoon ground cinnamon
2 tablespoons cold butter

Steps:

  • In a large bowl, cream shortening and sugar until light and fluffy. Beat in eggs and vanilla. Combine the flour, baking powder, baking soda and salt; gradually add to creamed mixture alternately with sour cream, mixing well after each addition. Stir in apples. Transfer to two greased 8-in. square baking dishes. , For topping, combine brown sugar and cinnamon. Cut in butter until crumbly. Stir in nuts; sprinkle over batter. Bake at 350° until a toothpick inserted in the center comes out clean, 30-35 minutes. Serve warm or cool completely before serving., Freeze option: Securely wrap cooled coffee cake in foil, then freeze. To use, thaw in refrigerator.

1/2 cup butter (softened)
1 cup white sugar
2 eggs (room temperature)
1 Teaspoon vanilla
2 cups all purpose flour
1 Teaspoon baking soda
1 Teaspoon baking powder
1/4 Teaspoon salt
1 cup sour cream
2 cups diced apples
3/4 cup chopped walnuts
11/2 Teaspoon cinnamon
3/4 cup dark brown sugar
3 Tablespoons melted butter

Steps:

  • Preheat oven to 350 degrees. Grease a 13x9 inch pan.
  • Place the butter and sugar in a large bowl, beat until well incorporated. Add the eggs and vanilla, beat until light and fluffy.
  • Sift the flour,baking soda, baking powder and salt together. Add the dry ingredients alternately with the sour cream, (Example...add 1/3 of the dry ingredients, beat until just incorporated, add 1/2 the sour cream, beat until just incorporated. Add 1/3 more flour, beat until just incorporated, add the last half of the sour cream, beat until just incorporated, add the last 1/3 of the flour, beat until just incorporated.)
  • Stir in the diced apples. Spread the batter evenly into your prepared pan. Sprinkle the topping over top, bake at 350 degrees for 35 to 40 minutes or until a toothpick inserted comes out clean.

This addition of sour cream in this coffee cake makes it so moist and delicious! This is one of my all-time favorite cake recipes, I have even made this cake with fresh blueberries adding in 1 tsp almond extract to replace the vanilla, or you can even add it in when using apples --- this cake is fantastic without the topping and just used as a white cake --- I usually double the brown sugar topping and spread half of the cake batter in the pan then sprinkle half of the topping then top with remaining batter, the batter will not really cover the topping mix if you are using a 13x9-inch pan but not to worry it will bake together just fine and besides you will be sprinkling the remaining batter on top anyway! --- serve this with whipped cream or ice cream, *SO* delicious!

2 cups all-purpose flour
½ teaspoon fine sea salt

1 ½ cups finely chopped toasted walnuts

¼ teaspoon salt

  • Spread 1/2 of the batter evenly into the bottom of the prepared baking dish. Scatter 1/2 of the crumble mixture evenly over the top. Top with the rest of the batter in dollops. Spread carefully to evenly distribute, trying not to disturb the crumbs. Top with the rest of the crumb mixture. Press crumbs into the batter very gently.
  • Bake in the center of the preheated oven until a toothpick or bamboo skewer inserted into the center comes out clean, about 40 minutes. Let cool to room temperature, about 30 minutes, before slicing and serving.

  • In a large bowl, using a hand-held electric mixer, cream together the butter and granulated sugar until light and fluffy. Add in the eggs one at a time, mixing until yellow disappears. Mix in vanilla.

  • Remove cake from oven and spread crumb topping clumps (don't press them down) evenly over partially baked coffee cake, covering completely. Topping will be thick.

  • Pre heat the oven to 350 degrees. Lightly grease and flour a 9 inch springform pan. To make the baked cake easier to remove from the pan lightly grease the pan, line the bottom with parchment paper and lightly grease the parchment paper. Dust the pan with flour.
  • For the Nut Topping:Place the nuts, brown sugar and cinnamon in a small bowl, stir to combine and set aside.
  • Combine 1/3 cup flour and 1/4 cup butter into a medium bowl. Cut the butter into the flour using a pastry blender until it resembles coarse crumbs. Add 3/4 cup of the nut topping mix and stir to combine. Toss the apples with lemon juice and set aside.
  • Combine the flour, baking powder, baking soda and salt in a medium bowl. Stir together to combine. Set the bowl aside.Place the butter and sugar into a large bowl. Using an electric mixer , beat the two together until they are light and fluffy. Add the eggs to a bowl one at a time and beat until well incorporated. Add half the flour mixture to the bowl, beating until it's just incorporated. Add all of the sour cream to the bowl and mix until just incorporated. Add the remaining flour to the bowl and mix until just incorporated.Spread 2/3 of the cake batter into the prepared 9 inch springform pan. Sprinkle the filling mixture over the batter.Layer the apples over the filling. Gently spread the remaining batter over the apples. Sprinkle with the topping mixture.Bake for 60 minutes or until a toothpick inserted in the center of the cake comes out clean.Cool on a wire rack for 15 minutes, loosen the side of the pan then remove the cake from the pan and finish cooling on a wire rack.
