SWEET POTATO AND APPLE PURéE



Sweet Potato and Apple Purée image

This autumnal side dish is great for Thanksgiving, pairing tart apples and sweet potatoes, the flavors melding in the soft purée. It is also a cinch to prepare. Bake the apples and sweet potatoes until soft. Peel both and core the apples, chop and then purée until smooth and lustrous. Lime juice adds zing, yogurt adds creaminess and honey adds a note of sweetness. Melted butter? That is to enrich the texture.

2 pounds sweet potatoes, scrubbed
2 tart apples, such as Granny Smith or Braeburn
Juice of 1 lime
1/4 cup plain low-fat yogurt
1 to 2 tablespoons unsalted butter, melted (to taste)
1 tablespoon mild flavored honey, such as clover
Pinch of salt

Steps:

  • Preheat the oven to 425 degrees. Scrub sweet potatoes and pierce in several places with a sharp knife. Pierce the apples in a few places. Line a baking sheet with foil and place the potatoes and apples on top. Bake for 40 minutes and remove the apples. Continue to bake the sweet potatoes until thoroughly soft and beginning to ooze, 5 to 15 minutes, depending on the size. Remove from the heat and allow to cool until cool enough to handle.
  • Turn the oven down to 350 degrees. Remove the skins from the potatoes. Peel and core the apples, scraping all the flesh from just inside the skins. Chop the potatoes and apples coarsely and place in a food processor fitted with the steel blade. Puree until smooth. Add the remaining ingredients and blend well. Transfer to a lightly buttered 2- or 3-quart baking dish.
  • Heat the puree in the 350-degree oven for 20 to 30 minutes, until steaming. Serve hot.

5-6 medium sized apples, preferably of different varieties (braeburn, cox, gala)
1 teaspoon ground cinnomon
1 tablespoon low calorie sweetener (eg: Splenda)

Steps:

  • Wash the apples then peel, core and slice them.
  • Place the apples in a large pan and then put in enough water to cover them up.
  • Bring apples to the boil, then gently simmer for 15-20 minutes or until soft.
  • Drain the apples, then, using a hand blender/ potato masher or spoon, mash the apples into a thick puree
  • Place in the fridge to cool before serving.

  • Place the diced potato into a small saucepan and just cover with water. Bring to a boil, then reduce the heat and simmer for 5 minutes.
  • Add the apple cubes and simmer for a further 5 minutes, or until both the apple and potato cubes are tender.
  • Add the spinach and simmer for a minute or 2 more, until the leaves have wilted.
  • Using a slotted spoon, transfer the veggies and apple to a blender. Blend until smooth, adding as much of the cooking water as necessary to achieve the texture you desire.

1 Cup maple syrup
1/2 Cup avocado oil, or coconut oil

2 tsp. almond flavoring
1 cup sweet potato puree
2 cups chopped apple
1 tablespoon pumpkin pie spice
1 tsp. cinnamon
1 Cup chopped nuts

Steps:

  • Preheat the oven to 325 degrees.
  • Oil two 9 x 4 bread baking pans
  • Whisk together dry ingredients in a large bowl.
  • With an electric mixer mix wet ingredients in a larger separate bowl until the mixture gets thicker and more pale(about 5 minutes).
  • Chop the apples and nuts (I pulsed mine in my food processor several times) Stir the apples and nuts into the wet ingredients.
  • Pour the dry ingredients into the wet and stir together until just combined.
  • Pour the batter evenly into two greased 9 x 4 inch loaf pans and lightly smooth the top.
  • Bake for about 60 minutes until a toothpick inserted in the center comes out clean.

Steps:

  • Peel and cook the beet. Cut them into small pieces for this, so that it goes faster.
  • Meanwhile, peel the potatoes and bring them to a boil in a second pot of salted water.
  • Cut the apple into small pieces. When the beet is cooked soft, add the apple. Let both simmer for another 5 minutes and drain the cooking water. Put the beet and the apple in a food processor and puree until there are no pieces left.
  • Now add the potatoes. Do not forget to add oat milk and margarine. Blend the mixture until you get a creamy beet puree.
  • Season with salt and nutmeg powder.

My favorite sweet potatoes have deep orange flesh. It's not only which I find them more intensely flavored than the pale golden brown sweet potatoes, I prefer their dense, smooth texture. While this puree is a delicious side dish for savory meals, it also makes a good base for a sweet or possibly savory pie filling.
2 lrg sweet potatoes
2 lrg apples (Rome Beauty, Northern Spy, Winesap)
4 Tbsp. butter
1/4 x to 1/2 c. whipping cream or possibly lowfat sour cream
1/2 tsp grnd nutmeg
1/4 tsp grnd ginger Preheat oven to 350 degrees.

Steps:

  • Place the potatoes on a greased baking sheet and bake for 1 1/2 hrs, or possibly till very tender. Peel, core and slice the apples. Heat the butter in a skillet and cook the apples over low heat till tender, about 15 min. Transfer the apples to a large bowl. Peel the potatoes while still warm. Add in them to the apples. Add in the cream, nutmeg and ginger. Mash together with a fork, then whip the mix with an electric mixer till the texture is creamy. Serve at once.
