4 kohlrabi bulbs, peeled and grated
2 stalks celery, sliced thin
2 carrots, sliced thin
2 tablespoons minced fresh onion
⅓ cup white sugar
½ teaspoon salt
⅛ teaspoon ground black pepper
⅛ teaspoon celery seed
½ cup mayonnaise
4 ½ teaspoons apple cider vinegar

Steps:

  • Toss the cabbage, kohlrabi, celery, carrot, and onion together in a large bowl.
  • Whisk the sugar, salt, pepper, celery seed, mayonnaise, and vinegar together in a separate bowl until smooth; pour over the cabbage mixture and stir to coat evenly. Chill in refrigerator 1 hour before serving.

3 1/2 cups peeled and julienned kohlrabi (from 2 pounds)
4 teaspoons fresh lime juice, plus 1 teaspoon finely grated zest (from 1 lime)
1 tablespoon thinly sliced Fresno chile
2 tablespoons extra-virgin olive oil
Kosher salt
1 1/2 cups julienned sweet, crisp apple (such as Fuji)
1/4 cup fresh mint leaves, roughly chopped
1/4 cup cilantro leaves, roughly chopped

Steps:

  • Soak kohlrabi in a bowl of ice water until crisp, 10 minutes. Drain well.
  • Whisk together lime juice and zest, chile, and oil. Season with salt. Toss with kohlrabi, apple, and herbs. Season with more salt, if desired; serve.

1 large kohlrabi
2 green apples
1 3-inch piece ginger (peeled and sliced)
2 tablespoons Dijon mustard
¼ cup extra virgin olive oil
2 teaspoons fish sauce
2 teaspoons toasted sesame oil
Toasted sesame seeds to garnish (optional)
Coarse or kosher salt and freshly ground pepper to taste

Steps:

  • Using a knife carefully cut the skin and stems from the kohlrabi (the skin is very thick so a regular vegetable peeler won't do the trick). Sliver or grate the kohlrabi (if grating, use the largest holes of the grater). Place it in a large bowl. Peel, core and sliver or grate the apples, then add them to the kohlrabi.
  • Place the ginger, mustard, olive oil, fish sauce, sesame oil and salt and pepper in a food processor fitted with the regular steel blade, or a blender, and processor until fully blended and smooth. Toss the slaw with the dressing, garnish with sesame seeds if desired, and serve.

1 cup shredded napa cabbage
1 cup shredded red cabbage
2 ¼ teaspoons kosher salt, plus more as needed
2 cups kohlrabi matchsticks
2 cups Granny Smith (or other green apple) matchsticks
⅓ cup minced fresh parsley, plus ¼ cup whole leaves
¼ cup fresh lime juice
⅓ cup unseasoned rice vinegar
1 tablespoon shoyu
1 teaspoon coconut palm sugar
½ cup safflower oil
Freshly ground white pepper

Steps:

  • Combine the cabbages in a large bowl. Sprinkle with 2 teaspoons of the kosher salt. With clean hands, massage the cabbage until soft and wilted, about 3 minutes. Transfer the cabbage to a colander set in the sink and rinse the bowl. Put a plate on top of the cabbage and weight it (a 28-ounce can of tomatoes works well for this). Let sit for 1 hour. Rinse the cabbage in cold water and let drain for 20 minutes. Wipe the bowl with a clean kitchen towel.
  • Return the cabbage to the bowl and add the kohlrabi, apples, and minced parsley. Toss well to combine. Set aside.
  • In a blender, combine the lime juice, vinegar, shoyu, sugar, and ¼ teaspoon salt. With the blender running, slowly pour in the safflower oil through the hole in the lid and blend until emulsified. Season with salt and white pepper to taste.
  • Pour enough of the dressing over the salad to lightly coat, toss, and garnish with the parsley leaves, then serve.

2 bulbs kohlrabi
4 carrots
3 tablespoons vegetable oil
2 tablespoons cider vinegar
1 tablespoon whole-grain mustard (or Dijon-style mustard )
1/2 teaspoon fine sea salt
Freshly ground black pepper (to taste)

Steps:

  • Gather the ingredients.
  • Trim and peel kohlrabi and carrots. You can use a vegetable peeler on carrots, but to properly peel kohlrabi, you'll have better luck with a paring knife : Trim tops and bottoms of kohlrabi and set flat bottoms on a cutting surface; use a sharp paring knife to cut down from top to bottom, removing thick, tough peel (with this method you'll easily be able to see where tender white-ish inside ends and the green or purple peel begins, working around vegetable until all the peel is removed). Set peeled vegetables aside.
  • In a salad bowl or large mixing bowl, whisk together oil, vinegar, mustard, and salt until well blended. Add pepper, if you like.
  • Using large holes on a standing box grater or a mandoline set up for fine julienne, grate kohlrabis and carrots into salad bowl.
  • Toss everything together until kohlrabi and carrot are evenly coated with dressing. Taste and add more salt or pepper, if you'd like.
