TOASTED APPLE-PECAN BRIE SANDWICHES



Toasted Apple-Pecan Brie Sandwiches image

I came up with this recipe one night for dinner and my husband and family loved it and it has become a regular for us. The combination of spiced apples and brie cheese is amazing. Great served with a spring lettuce salad. You can also make this as an appetizer by using a baguette loaf instead of sourdough slices.

3 tablespoons butter
4 Granny Smith apple - peeled, cored and sliced
½ cup packed brown sugar
1 teaspoon ground cinnamon
¼ cup chopped pecans
4 slices sourdough bread
2 tablespoons butter
6 ounces Brie cheese, cut into long, even slices
1 pinch ground cinnamon, for dusting

Steps:

  • Melt 3 tablespoons of butter in a large skillet over medium heat. Add the apples; cook and stir until tender, 7 to 8 minutes. Stir in the brown sugar, 1 teaspoon of cinnamon and pecans and continue to cook for 1 to 2 minutes longer. Remove from the heat and set aside.
  • Preheat the oven's broiler.
  • Cut the slices of bread in half if they are very large and toast lightly. Spread the remaining butter on to one side of each piece of bread. Place two slices of brie cheese onto the unbuttered side of each piece of bread. Top with a generous scoop of the apple mixture. Place the open face sandwiches onto a baking sheet.
  • Broil until the cheese has melted, about 1 minute. Sprinkle with additional cinnamon if desired.

1 baguette, cut into 1/4 inch thick slices
1/2 cup brown sugar
1/2 cup chopped walnuts
1/4 cup butter, melted
13 1/4 ounces brie cheese, thinly sliced
3 granny smith apples or 3 braeburn apples, cored and sliced

Steps:

  • Arrange bread slices on an ungreased baking sheet; bake at 350 F until lightly toasted. Set aside.
  • Mix together sugar, walnuts, and butter. Top each slice of bread with a cheese slice, an apple slice, and one teaspoon of the walnut mixture. Bake until cheese melts.

3 large eggs
1 cup milk
1 teaspoon vanilla
1/2 teaspoon salt
1/4 teaspoon cinnamon
1/8 teaspoon nutmeg
12 slices day-old French bread
8 ounces brie cheese, thinly sliced (outer coating removed)
1 golden delicious apple, peeled and cut into 1/8-inch thick slices

Steps:

  • In a pie pan or other shallow dish, whisk together the eggs, milk, vanilla, salt, and spices.
  • Cover one side of 6 bread slices with brie and apple slices.
  • Place remaining bread slices on top to form sandwiches; then press them together slightly to seal.
  • Dip sandwiches in egg mixture for 30 seconds on each side.
  • Melt some butter in a small frying pan over med-high heat.
  • Cover and cook each sandwich for 2-3 minutes on each side, or until lightly browned.
  • Serve hot with syrup.

1 large Fugi apple
1 large red or brown skinned pear, slightly underripe
A wedge lemon
1 pound individual wheel brie cheese
24 sesame Melba toast rounds, any brand

Steps:

  • Quarter apple and pear lengthwise and cut into each quarter on an angle to remove the core. Slice apple and pear into 1/4-inch thick slices. Squeeze a little lemon juice over the fruit to slow browning.
  • Cut the top rind off the brie and place in the microwave on high for 60 seconds. Depending on the ripeness of the cheese, it will take 60 to 90 seconds on high to heat and melt. If brie is not yet soft and hot after 1 minute, place it back in microwave for another 30 seconds on high.
  • Serve the softened, warm brie with a platter of fruit and Melba toasts for dipping and spreading. Reheat brie if it tightens up for 20 to 30 seconds at a time on high.
