APPLE WEDGE SALAD WITH GOLDEN BALSAMIC DRESSING
This wedge salad updates a classic while preserving the retro feel. Apples, walnuts, bacon, and gorgonzola is topped with a drizzle of sweet, creamy golden balsamic dressing.

Steps:
- Mix dressing ingredients and set aside. This may be hand mixed or use an immersion blender if you prefer an emulsion.
- Cut lettuce into 4-6 wedges and place on salad plates. Chop apple and stir in lemon juice to prevent browning.
- Divide the bacon, cheese, apples, walnuts, & onions evenly and sprinkle the wedges with them. drizzle each salad with dressing. Serve and enjoy.

Steps:
- Heat oven to 400°F. Line cookie sheet with foil. Place bacon on cookie sheet.
- Bake 10 to 15 minutes, turning once, until crisp. Cool 5 minutes. Chop bacon or crumble into small pieces.
- In medium bowl, toss apples with lemon juice.
- On serving platter or individual plates, arrange lettuce wedges. Top with dressing, bacon, apples and cheese.

- Add all of the dressing ingredients to a medium bowl and stir well to combine. Refrigerate for at least 30 minutes, or can be made several days in advance.
- Cut the bacon into pieces and cook the bacon in a skillet until crisp. Remove to a plate lined with paper towels.
- Cut the iceberg lettuce in half. Cut each of the halves again in half or thirds (depending on how big the ice berg lettuce head is), to create "wedges". Place wedges on individual plates.
- To serve, spoon dressing over lettuce and then sprinkle the bacon crumbles, tomatoes, onion and blue cheese crumbles on top. Season with fresh crushed black pepper, to taste.
