Apple Wedge Salad with Golden Balsamic Dressing image

This wedge salad updates a classic while preserving the retro feel. Apples, walnuts, bacon, and gorgonzola is topped with a drizzle of sweet, creamy golden balsamic dressing.

1 - head of iceberg lettuce
1 - large gala apple, chopped
1 teaspoon(s) lemon juice
6 slice(s) bacon, cooked and crumbled
8 tablespoon(s) gorgonzola cheese
1/3-1/2 - purple onion, thinly sliced
1/3 cup(s) walnuts
CREAMY GOLDEN BALSAMIC DRESSING
1/2 cup(s) mayo
4 tablespoon(s) light olive oil
4 tablespoon(s) golden balsamic vinegar
2 tablespoon(s) honey
1/2 teaspoon(s) cracked black pepper

Steps:

  • Mix dressing ingredients and set aside. This may be hand mixed or use an immersion blender if you prefer an emulsion.
  • Cut lettuce into 4-6 wedges and place on salad plates. Chop apple and stir in lemon juice to prevent browning.
  • Divide the bacon, cheese, apples, walnuts, & onions evenly and sprinkle the wedges with them. drizzle each salad with dressing. Serve and enjoy.

Our elegant wedge salad is ready in only 25 minutes and made with crisp bacon, chopped apples and crumbled blue cheese.

4 slices thick-sliced bacon
2 apples, chopped
1 to 2 teaspoons lemon or lime juice
1 head iceberg lettuce, cut into 8 wedges
1 cup blue cheese dressing
1/4 cup crumbled blue cheese (1 oz)

Steps:

  • Heat oven to 400°F. Line cookie sheet with foil. Place bacon on cookie sheet.
  • Bake 10 to 15 minutes, turning once, until crisp. Cool 5 minutes. Chop bacon or crumble into small pieces.
  • In medium bowl, toss apples with lemon juice.
  • On serving platter or individual plates, arrange lettuce wedges. Top with dressing, bacon, apples and cheese.

  • To serve, spoon dressing over lettuce and then sprinkle the bacon crumbles, tomatoes, onion and blue cheese crumbles on top. Season with fresh crushed black pepper, to taste.
