Steps:
- Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper.
- In a saute pan over medium-high heat, add the olive oil, sausage and shallots. Saute until browned, breaking up the sausage into small pieces with a wooden spoon, 5 to 7 minutes.
- Add the browned sausage and reserved mushroom stems to the bowl of a food processor and pulse until combined. Add the pine nuts and pulse a few more times until slightly smooth. Transfer to a mixing bowl and fold in the Swiss cheese, Gruyere and cream.
- Add the breadcrumbs and parsley to a small bowl and mix to combine.
- Place the mushroom caps hollow-side up on the prepared baking sheet. Using a tablespoon, spoon the mushroom and sausage mixture into each mushroom cap. Top with the breadcrumb mixture. Bake until golden brown, about 20 minutes.

- Remove mushroom stems (discard or save for another use); set caps aside. In a large bowl, combine the remaining ingredients. Stuff into the mushroom caps. , Place in 2 greased 13x9-in. baking dishes. Bake, uncovered, at 350° until heated through, 16-20 minutes.

SAUSAGE STUFFED MUSHROOMS
This is a wonderful recipe for anyone who enjoys mushrooms. I recommend trying to buy uniformly sized mushrooms, the larger the better. It will make for a nicer presentation.

Steps:
- 1. Remove the stems from mushrooms. Some will pop out of the caps easily. Others may require removal with a small paring knife.
- 2. Apply oil to a medium baking dish and coat. Place caps (stem side up) in the dish forming a series of small cups with the caps. Evenly distribute. Don't worry about gaps in between. Just evenly space.
- 3. Mince mushroom stems.
- 4. Brown sausage in a medium skillet with garlic. Drain.
- 5. Place sausage back into skillet on medium heat. Add breadcrumbs, cheese, mushroom stems, garlic and slowly add water as this mixture cooks. Reduce heat and cover. You want the cheese to melt and for the concoction to have the texture of a thick paste. Taste and add salt and pepper as needed. Should take about 15 minutes.
- 6. Spoon mixture into open mushroom caps. Take the leftover mixture and fill in the gaps.
- 7. Place in preheated oven at 350 degrees. Bake approximately 40 minutes until mushrooms are soft. Serve and enjoy!

- Remove stems from mushrooms and finely chop; set caps aside. In a large skillet, cook sausage and mushrooms over medium heat until meat is no longer pink; drain. , Remove from the heat. Mushrooms are by far one of my favorite vegetables. Now stuff those delicious little freaks of nature with sausage and cheese stuffing and you have my undivided attention. If you have never made Sausage Stuffed Mushrooms you are in for a real treat. They are a breeze to make and everyone just loves these delectable appetizers. People just scoop these up like nobody's business. Be sure to read my helpful tips on making stuffed mushrooms. There are a few hints there for preparing them for a party.

- Preheat oven to 375 degrees.
- Using a broiler pan or screen over a baking sheet place your washed mushrooms cap side up on the screen. Lightly spray the mushrooms with olive oil. Bake 7 minutes. Remove from the oven let them remain cap side up for 15 minutes.
- Meanwhile in a large skillet over medium heat brown the sausage. Right before the sausage is finished browning add the minced onion and cook for 2-3 minutes. Reduce heat to low and add garlic, marjoram, sea salt and fresh ground black pepper; cook for 1 minute stirring constantly. Add the cream cheese; cook until melted stirring constantly. Remove pan from the heat and stir in Gouda and Parmesan cheese. Spoon evenly into drained mushroom caps. Sprinkle with parsley and bake for 15 minutes or until lightly browned on the top.
SAUSAGE STUFFED MUSHROOMS

- Place a rack in the center of the oven. Preheat the oven to 350 degrees F. With a paper towel, wipe off the outsides of mushrooms. Remove and finely chop the stems. Set the caps aside.
- Heat the oil in a large nonstick skillet over medium. Brown the sausage until cooked through, using a sturdy spoon to break apart the meat into small pieces (sausage is kind of a pain to break into small pieces-once I have the pieces fairly small, sometimes I use a potato masher to split them further). This will take about 8 minutes.
- To the skillet, add the mushroom stems, vinegar, salt, and pepper. Cook until the stems are softened, about 4 minutes.
- Stir in the green onion, garlic, and Italian breadcrumbs. Set aside to cool.
- In a large bowl, stir together the cream cheese, egg yolk, and Parmesan with a fork until smoothly combined.
- Fold in the sausage mixture.
- With a spoon, generously fill each mushroom cap so that you create a mound on top. Arrange in a baking dish large enough to hold them snugly in a single layer (they will touch at the edges).
- Bake the stuffed mushrooms until browned and the filling is cooked through, about 20 minutes. Some liquid may seep out; simply leave it behind in the pan.
- Transfer to a serving plate and let cool at least 5 minutes. Sprinkle with fresh parsley. Enjoy warm or at room temperature.

- Preheat the oven to 325 degrees F.
- Remove the stems from the mushrooms and chop them finely. Set aside. Place the mushroom caps in a shallow bowl and toss with 3 tablespoons of the olive oil and Marsala. Set aside.
- Heat the remaining 2 tablespoons olive oil in a medium skillet over medium heat. Add the sausage, crumbling it with the back of a wooden spoon. Cook the sausage for 8 to 10 minutes, stirring frequently, until it's completely browned. Add the chopped mushroom stems and cook for 3 more minutes. Stir in the scallions and garlic and cook for another 2 to 3 minutes, stirring occasionally. Add the panko crumbs, stirring to combine evenly with all the other ingredients. Finally, swirl in the mascarpone and continue cooking until the mascarpone has melted and made the sausage mixture creamy. Off the heat, stir in the Parmesan, parsley, and season with salt and pepper, to taste, Cool slightly.
- Fill each mushroom generously with the sausage mixture. Arrange the mushrooms in a baking dish large enough to hold all the mushrooms in a snug single layer. Bake until the stuffing for 50 minutes, until the stuffing is browned and crusty.
