MINI HOT CHICKEN AND WAFFLE SLIDERS
If you like hot chicken, you'll love these mini sliders. The waffles are slightly sweet and pair perfectly with the salty chicken and spicy sauce. Dill pickles and slaw add tang and crunch, delivering the perfect bite. They're easy to make and I promise, they'll be the hit of the party! A fun addition to a brunch menu, and great for a football party alongside an ice cold beer.

- Preheat the oven to 425 degrees F (220 degrees C). Spray a baking sheet with cooking spray.
- Place 20 chicken nuggets in a single layer on the prepared baking sheet. Reserve any remaining nuggets for another use.
- Bake nuggets in the preheated oven for 6 minutes. Flip and bake until crispy, 5 to 7 minutes more.
- Meanwhile, prepare sauce: Heat butter, maple syrup, canola oil, brown sugar, paprika, cayenne, kosher salt, garlic powder, and black pepper in a small saucepan over medium-low heat, stirring constantly, until smooth and well combined, 3 to 5 minutes. If sauce thickens too much, reduce heat to low and whisk in 1 to 2 tablespoons water. Keep warm.
- As the sauce is cooking, toast waffles, then separate each one into 4 mini waffles.
- Assemble sliders: Place a chicken nugget on top of a waffle and top with 1 heaping teaspoon slaw. Drizzle with 1 teaspoon sauce, top with a pickle slice, and place a second waffle on top. Secure slider with a toothpick or skewer, if desired. Repeat to make remaining sliders. Serve with extra sauce.

I had two goals for today... One was to finish up a painting I've been working on, and another was to come up with an appetizer for a casual Saturday afternoon party I'm hosting tomorrow. This is the appetizer... the painting is still a work in progress. So, you ready... Let's get into the kitchen.

- 1. PREP/PREPARE
- 2. Gather your Ingredients (mise en place).
- 3. Mix the honey, cayenne and paprika together in a small bowl, and reserve.
- 4. Chef's Note: The interplay between the honey, the paprika, and the cayenne, create some really interesting flavor notes for your palette.
- 5. Mix all the ingredients for the batter in a large bowl.
- 6. Chef's Tip: The batter should be nice and thick; almost like a tempura batter.
- 7. Add the chicken bites into the batter.
- 8. Add some oil (about 1in/2.5cm) to a pan, or pot, and heat up to 350f (175c).
- 9. Shake off the excess and add the chicken in small batches into the hot oil.
- 10. Fry until the chicken is cooked through and golden brown, about 3 - 5 minutes.
- 11. Drain on paper towels, and finish cooking the remaining chicken bites.
- 12. Toast the mini waffles until golden brown.
- 13. PLATE/PRESENT
- 14. Place the chicken bites, on the toasted mini waffles, drizzle with the honey/paprika/cayenne mixture, and serve while nice and warm. Enjoy.

SPICY BUTTERMILK FRIED CHICKEN AND WAFFLE …

- Marinade chicken: Cut each chicken breast in half the long way, and cut each half into approximately 9 pieces. You want chicken nugget-size pieces of chicken. Combine chicken pieces with buttermilk and spices, and place in a zip-lock bag. Marinade in the refrigerator for at least 2 hours, but preferably overnight.
- Fry chicken: Remove chicken pieces from buttermilk marinade. In one bowl, beat egg and buttermilk; add half the spices. In another bowl, combine flour with the remaining spices. Heat oil over high heat. You'll know that the chicken is ready to fry when it sizzles when dipped in the oil.
- Take one piece of chicken, dip it in the egg mixture, and then dip it in the flour mixture. Place chicken into the hot oil and fry for about 2 minutes, until the internal temperature reaches 165 degrees. Fry 4 or 5 pieces of chicken at the same time. Repeat until all the chicken is fried. Place fried chicken on a paper towel-lined baking sheet. If you aren't immediately assembling the waffle bites, keep chicken warm in a 300-degree oven.
- Assemble waffle bites: Toast mini waffles according to package directions. Drizzle a small amount of maple syrup on waffles. Top each waffle with a piece of fried chicken. Drizzle with sriracha mayonnaise. Top with a pickle and serve.
