My son took first place in a baking contest with this one. Serve warm or cold plain, with ice cream or whipped cream. When I use apples, a sprinkle of cinnamon or apple pie spice makes a nice touch. In place of peaches, try using apples or plums.

¼ cup butter
1 ¼ cups all-purpose flour
1 cup white sugar
1 tablespoon baking powder
¼ teaspoon salt
1 cup milk
½ teaspoon vanilla extract
4 cups fresh peaches, pitted and sliced

Steps:

  • Melt butter or margarine in a 9 x 13 inch pan. Set aside to cool.
  • Stir together flour, sugar, salt, and baking powder. Mix in milk and vanilla. Pour batter over melted butter. DO NOT MIX OR STIR. Spoon fruit with juice over the batter. DO NOT MIX OR STIR.
  • Bake at 350 degrees F (175 degrees C) for 55 minutes.

You can use any fruit (or combination) to make this biscuit-topped cobbler. Just be sure to adjust the amount of sugar depending on whether your fruit is more sweet or tart. For example, blueberries, peaches, sweet cherries and pears tend to need less sugar than more acidic raspberries, sour cherries, plums and cranberries. Start with a few tablespoons and go up from there, tasting as you go. For the most tender biscuits, be sure to let the dough chill before baking.

1 3/4 cups/220 grams all-purpose flour
1/4 cup/50 grams granulated sugar
1 tablespoon/12 grams baking powder
1/2 teaspoon baking soda
1/8 teaspoon kosher salt
6 tablespoons/85 grams cold unsalted butter, cubed
1/2 cup/118 milliliters buttermilk
1/4 cup plus 1 tablespoon/75 milliliters heavy cream
10 cups mixed fruit, such as peaches, blueberries or blackberries
3 tablespoons to 2/3 cup/38 to 133 grams granulated sugar, to taste
3 tablespoons/36 grams minute tapioca
1 tablespoon/15 grams turbinado or raw sugar

Steps:

  • Place a piece of parchment paper on a small rimmed baking sheet or large plate.
  • In a food processor, pulse together flour, granulated sugar, baking powder, baking soda and salt. Pulse in butter just until mixture looks like small pebbles. Drizzle in buttermilk and cream, and pulse just to combine.
  • Transfer to a lightly floured surface and pat dough together, incorporating any stray or dry pieces. Using a spoon, scoop off 2-inch pieces of dough and roll into balls (you should end up with about 10). Transfer dough to baking sheet or plate and flatten balls to 3/4-inch thick; wrap with plastic and chill for at least 20 minutes, and up to 8 hours.
  • Meanwhile, heat oven to 350 degrees. In a large bowl, toss together fruit, sugar to taste, and tapioca. Let sit for 20 minutes to hydrate tapioca, then scrape into a 2 1/2-quart gratin dish or 9-by-13-inch baking pan.
  • Top with biscuits, then brush biscuit tops with remaining 1 tablespoon cream. Sprinkle with turbinado sugar, and bake until dark golden on top and fruit is bubbling in the middle, about 1 hour, rotating halfway through. Let cool for at least 30 minutes before serving.

This cobbler is so very simple, and so very delicious. I am writing this recipe with peaches, however you can use any variety of canned fruit. Hope you enjoy.

1/2 cup butter
1 cup self-rising flour
1 cup white sugar
1 cup milk
1 (20 ounce) can canned peaches, with fruit and juice divided

Steps:

  • Preheat oven to 350 degrees, put stick of butter in 9x13" pan and melt in oven.
  • Mix flour, sugar, and milk.
  • When your butter is melted pour your mixture into pan directly on top of butter.
  • Place peach/fruit slices into pan on top of cobbler.
  • Pour syrup over top of cobbler and bake for approximately 1 hours till crust is brown and edges are bubbley.
  • Serve hot with ice cream if you wish.
  • I put 8-10 on the servings it depends on the size of the servings.

1 cup sugar
6 cups crabapples
1/4-1/2 cup water
1 1/2 teaspoons cinnamon
1 cup oats (rolled)
1/3 cup flour
1/3 cup brown sugar (packed)
1/3 cup honey
1/2 teaspoon salt
1/3 cup butter (melted)

Steps:

  • Slice the crab apples with skin on.
  • Add sugar and cinnamon to crab apples set aside.
  • Combine the 6 ingredients for crust use any depth pan you want it will just increase the cooking time.
  • Put your crab apples into pan with your water use the 1/2 cup water if your pan is a deep dish. Then top with your crumb topping completely.
  • Bake at 375 for 15 minutes then 350 for 40 minutes.
  • If using a glass dish bake at 350 for 15 minutes then 325 40 - 50 minutes until golden and the edges are slightly crispy.

3 tablespoons butter
1/2 cup milk
1 cup flour
1 teaspoon baking powder

5 cups fruit

1 tablespoon cornstarch
1/2 teaspoon cinnamon
1/4 teaspoon salt
1 cup boiling water

Steps:

  • Mix together the sugar, butter, milk, flour baking powder, and salt. Form a ball and set aside.
  • In the bottom of the pan add as much or little of any kind of fruit you like.
  • Put dough {dough will seem more like a batter} on top of fruit without rolling it out.
  • Combine sugar, cornstarch, cinnamon and salt.
  • Put over unbaked batter and cobbler.
  • Pour the 1 cup boiling water over unbaked cobbler.
  • Bake at 375 degrees Fahrenheit for 45 minutes.
  • Entire recipe can be doubled.
