Take a bite out of Sandra Lee's Black Bean Burger recipe from Sandra's Money Saving Meals on Food Network for a budget-friendly vegetarian meal from the grill.

1/2 medium yellow onion, roughly chopped
1 tablespoon chopped garlic
2 (15-ounce) cans black beans, rinsed and drained, divided
2 tablespoons freshly chopped cilantro leaves
2 teaspoons freshly chopped parsley leaves
1 egg
1/2 teaspoon red pepper flakes
1/2 cup bread crumbs
Salt and fresh ground black pepper
4 hamburger rolls
1 tomato, sliced
4 small Romaine lettuce leaves, or any other type you have on hand
1/4 cup ketchup

Steps:

  • Heat a grill or grill pan over medium-low heat.
  • In a food processor, pulse onion and garlic until finely chopped. Add 1 can black beans, cilantro, parsley, egg, and red pepper flakes and pulse to combine.
  • Transfer mixture to a large mixing bowl, add the remaining can of black beans and the bread crumbs. Season with salt and pepper, to taste, and mix until well combined.
  • Divide 2/3 mixture into 4 portions and form into patties. Save the remaining mixture for another use, like Black Bean Enchiladas. Place on hot oiled grill over medium-low heat and cook about 6 minutes a side or until heated through. Toast hamburger buns on a grill. Place a burger on the bottom of each bun. Top with lettuce, tomato and ketchup. Cover the burgers with the top of the bun and serve.

These have a delicate texture and a wonderful savory taste. They're a little tricky to turn, as they can fall apart. Don't make them too thick and use an offset spatula, and it will be easier for you. They should be cooked on a flat griddle or pan; don't try to grill them on a barbecue.

2 cans white beans, drained and rinsed
2 tablespoons extra virgin olive oil
1 small onion, finely chopped
Salt to taste
2 to 3 large garlic cloves (to taste), green shoots removed, minced
2/3 cup finely grated carrot
3 tablespoons freshly squeezed lemon juice
1/4 cup finely chopped parsley
2 teaspoons minced fresh sage or thyme
1/2 cup fresh bread crumbs
1 egg, beaten
Freshly ground pepper to taste
Whole grain hamburger buns and the condiments of your choice

Steps:

  • Heat 1 tablespoon of the olive oil in a medium-size skillet and add the onion. Cook, stirring, until tender, about 5 minutes. Add a pinch of salt, the garlic and the grated carrot, and continue to cook for another minute or two, until fragrant and the carrot has softened slightly. Remove from the heat.
  • In a food processor fitted with the steel blade, puree the beans with the lemon juice. Transfer to a bowl and stir in the onion mixture, the parsley, sage or thyme, the bread crumbs and the egg. Season to taste. Shape into patties, ½- to ¾-inch thick. Set on a parchment-covered baking sheet and cover with plastic wrap. Refrigerate for 1 to 2 hours.
  • Heat the remaining oil in a large, heavy skillet or on a griddle over medium heat and brown the patties for 4 minutes on each side, being very careful when you turn them over. An offset spatula works well for this. Serve on whole grain buns, with the condiments of your choice.

1 (16 ounce) can black beans, drained and rinsed
½ green bell pepper, cut into 2 inch pieces
½ onion, cut into wedges
3 cloves garlic, peeled
1 egg
1 tablespoon chili powder
1 tablespoon cumin
1 teaspoon Thai chili sauce or hot sauce
½ cup bread crumbs

Steps:

  • If grilling, preheat an outdoor grill for high heat, and lightly oil a sheet of aluminum foil. If baking, preheat oven to 375 degrees F (190 degrees C), and lightly oil a baking sheet.
  • In a medium bowl, mash black beans with a fork until thick and pasty.
  • In a food processor, finely chop bell pepper, onion, and garlic. Then stir into mashed beans.
  • In a small bowl, stir together egg, chili powder, cumin, and chili sauce.
  • Stir the egg mixture into the mashed beans. Mix in bread crumbs until the mixture is sticky and holds together. Divide mixture into four patties.
  • If grilling, place patties on foil, and grill about 8 minutes on each side. If baking, place patties on baking sheet, and bake about 10 minutes on each side.

1 cup kidney beans (raw, uncooked*)
Pinch of salt
1 cup water
1.5 cups grated carrots
1 onion, sliced & charred (optional*)
Salt
Pepper
1 teaspoon smoked paprika
1 teaspoon onion powder
1 teaspoon garlic powder
1 cup breadcrumbs
1/2 cup all-purpose flour
1/4 cup cornflour
2/3 cup cold water
2 cups breadcrumbs
Oil

Steps:

  • In a large bowl, add 1 cup kidney beans + 4 cups water. Soak overnight.
  • Drain and transfer the beans to your pressure cooker (electric or stovetop). Add a pinch of salt + 1 cup of water.
  • For electric pressure cookers, cook for 22-25 minutes on MANUAL settings, High Pressure. For stovetop pressure cookers, cook for 5-6 whistles over medium heat. Do a quick release (we don't want the beans to become mushy).
  • Drain and transfer to a large bowl. Lightly mash them using a potato masher.
  • Add grated carrots + charred onions + salt + pepper + smoked paprika + onion powder + garlic powder. Mix them gently using your hands.
  • Add breadcrumbs and mix some more.
  • Scoop a handful (around 4-5 tablespoons) of the mixture and give them the shape of a burger patty. You can also use the lid of a container jar. Simply cover the inner of a lid with a plastic wrap and place a handful of the mixture in the lid. Gently press the mixture, remove/add more if needed, and then flip.
  • Transfer the patties to a baking sheet and let them chill for at least 2 hours.
  • In a medium mixing bowl, add all-purpose flour + cornflour + 2/3 cup cold water. Mix well until smooth.
  • Dip the chilled patties and coat them on both sides.
  • Now place them in a bowl of breadcrumbs. Flip and coat on all sides.
  • Shallow-fry the patties until they're brown on both sides.
  • Layer and assemble the burger. I used vegan mayo + lettuce + tomatoes + patty + ketchup + onion in my recipe.

½ cup add-ins & flavorings (nuts, onion, garlic, fresh herbs, etc.)
Vegan buns
Ketchup
Mustard
Mayo
Lettuce
Tomato
Grilled veggies
Avocado
Sweet potato fries

Steps:

  • Sauté onion, garlic and vegetables for around 5-8 minutes or until soft in a skillet using soy sauce, vegetable broth or oil.
  • Add your cooked & drained legumes, grains and sautéd vegetables into a food processor jar.
  • Pulse a few times to combine, add all herbs and spices, then pulse again without overdoing it.
  • Adjust everything to your taste preference, then press the mixture between your fingers to ensure it has the right texture.
  • If it's too crumbly, add some water. If it's too wet, add more of the dry ingredients you used.
  • Form plant-based patties with your hands and place them next to each other on a parchment paper-lined baking sheet.
  • Bake in the oven at 350 °F (180 °C) for 15 minutes, flip over and bake for another 15 minutes. Alternatively, you can fry the patties in oil using a skillet - this will only take 3-5 minutes for each side.
  • Serve warm on your favorite bun alongside your favorite vegan burger fixings!

1 cup canned beans, such as pinto, kidney or black beans, rinsed and drained
1/2 cup walnuts
1/2 cup panko breadcrumbs
1 teaspoon kosher salt
1 teaspoon onion powder
1/2 teaspoon garlic powder
1/4 teaspoon freshly ground black pepper
1 large egg, lightly beaten
3 tablespoons BBQ sauce
1 tablespoon olive oil
4 slices your favorite cheese, optional
4 burger buns
Desired toppings, for serving

Steps:

  • In a food processor, pulse the beans until coarsely chopped, then transfer to a large mixing bowl. Pulse the walnuts in the food processor until finely chopped, then transfer to the mixing bowl with the beans. Add the breadcrumbs, salt, onion powder, garlic powder, pepper, egg and 2 tablespoons of the BBQ sauce and mix well. Divide the mixture into 4 equal parts. Shape into burger patties and refrigerate for 30 minutes.
  • Heat a nonstick skillet over medium-high heat. Add the olive oil. Brush the top of each burger with the remaining 1 tablespoon BBQ sauce. Cook the burgers BBQ sauce-side down for 3 minutes. Flip and top each with a slice of cheese if using. Cover and cook until the cheese is melted and the burgers are heated through, about 3 minutes. Place the burgers on the buns and top with desired toppings.
