ANTS CLIMBING A TREE (MA YI SHANG SHU)
Ants Climbing a Tree (ma yi shang shu - 蚂蚁上树) is a classic Sichuan dish of glass noodles in a delicious sauce with ground pork. Our recipe is beyond easy.

Steps:
- Soak the dry noodles in cold water for 10 minutes. Rinse, drain and set aside. In a wok over medium heat, add the oil and minced ginger. Cook the ginger for about a minute, and add the spicy bean sauce. Let that cook for another minute, and then add the ground pork (or chicken). Stir-fry until the meat is cooked through.
- Add the chicken stock, sugar, dark soy sauce, and light soy sauce. Bring everything to boil. Once boiling, add the glass noodles and scallions. Quickly stir everything together for 1-2 minutes. Serve alone, or with steamed rice!

Steps:
- Soak the noodles in enough hot water to cover by 1 inch for 20 minutes. Use kitchen shears to cut the noodles into 3 to 4-inch pieces and drain thoroughly in a colander for 10 minutes.
- Combine the soy sauce, rice wine, and chili paste in a medium bowl and whisk until smooth. Add the cornstarch and whisk until combined. Add the pork and mix until thoroughly integrated. Set aside for 30 minutes.
- Place a 12-inch saute pan over high heat for 1 minute. Add the oil and swirl to coat the bottom and sides of the pan. Once the oil shimmers, add the meat mixture. Stir constantly for 2 minutes, breaking the meat up into very small pieces. Add 2/3 of the green onions and continue cooking and stirring until the meat is well browned and in very small pieces, approximately 2 minutes. Reduce the heat to medium-high and add the broth. Cook until reduced, approximately 3 minutes.
- Slowly add handfuls of the noodles to the pan, tossing with the meat mixture until combined and the pieces of meat cling to the noodles and no liquid remains. Serve immediately with the remaining green onions.

This is an incredibly easy, tasty and inexpensive dish. The name comes from the ground pork looking like ants mixed in with the vermicelli which looks like tree branches.

Steps:
- Soak the vermicelli in enough boiling water to cover it.
- Let stand 20 minutes.
- Drain.
- Divide into thirds.
- Set Aside.
- Heat oil in wok to 400°F.
- Stir Fry the meat in the oil for about 1 minute (May be prepared in advance to this point).
- Add vermicelli, and mix well.
- Add the remaining ingredients, and cook for another 2-3 minutes, stirring constantly.

- Peel the cucumber, halve it lengthwise and scrape the seeds out with a small spoon or a melon baller. Slice into 1 cm chunks on a diagonal. Toss the cucumber with the salt and caster sugar and set on a sieve or colander over a bowl for 15 minutes or longer, while you peel and chop all the other ingredients. After that time shake it on the sieve to drain the liquid, transfer to a serving bowl and toss with the mint, brown sugar and rice vinegar.
- Heat the oil in a large heavy skillet or a frying pan over medium heat (use the wok if you like but this is going to be frying rather than stir-frying so an ordinary frying pan might work better). Add the onion, lemongrass, ginger, garlic and chilli and cook for a couple of minutes until the onion softens.
- Add the pork mince, sprinkle with salt and cook it, breaking up with a fork, until it’s no longer pink. Turn up the heat, add the brown sugar and fish sauce, stir once and leave it to cook without stirring for about 2 minutes, until all the moisture cooks off and the pork starts to caramelise. Stir once, scraping the crisp bits and leave it to cook again until all the bits of meat are crisp to your liking.
- While the pork is cooking, put on the water to boil for the noodles. Soak or simmer them as instructed on the packet, drain and toss with a little sesame oil.
