This is a nice assortment of veggies and cheese to take to a picnic or potluck, and is quick and easy to put together! You can make the vinaigrette ahead of time, if you like. From Cooking Light. Prep time includes chilling.

3 cups sliced pencil-thin asparagus (in 2-inch pieces, about 3/4 pound)
3 cups quartered button mushrooms (about 3/4 pound, I like crimini mushrooms)
1 cup red bell pepper, strips
1/2 cup pitted ripe black olives
4 ounces mozzarella cheese, cubed (about 1 cup)
1 (14 ounce) can quartered artichoke hearts, drained
1 (11 1/2 ounce) jar pickled pepperoncini peppers, drained
1/3 cup cider vinegar
1 teaspoon balsamic vinegar
2 tablespoons finely chopped fresh parsley
3 tablespoons chopped fresh basil
2 tablespoons extra virgin olive oil
1 teaspoon dried oregano
1/4 teaspoon sugar, to taste
1/4 teaspoon salt, to taste
1/4 teaspoon fresh ground black pepper, to taste
3 garlic cloves, minced

Steps:

  • Prepare a bowl of ice water.
  • In a covered pan, steam the sliced asparagus for 4 minutes; drain and plunge the asparagus into the ice water, then drain well.
  • In a large bowl, combine the asparagus, mushrooms, bell pepper, black olives, mozzarella cubes, artichoke hearts, and pepperoncini.
  • In a small bowl combine the vinegars and remaining ingredients and whisk well (or put it in a jar, cover, and shake well).
  • Pour the prepared vinaigrette over the vegetable mixture and toss to coat.
  • Place in a covered container and marinate in the refrigerator for at least 2 hours, stirring or shaking occasionally (you can marinate it longer, but no more than 8 hours, because beyond that will effect the texture).
  • Serve either chilled or at room temperature.
  • Note: also good with cherry tomatoes added.

After searching for a recipe for an antipasto salad that I had envisioned in my head, I gave up and just decided to create one myself. I made this dish for a party and everyone couldn't stop talking about it. The ratio of meat/cheese to veggies can be adjusted to taste.

8 ounces Genoa salami, cut into bite-size pieces
8 ounces sopressata or other hard salami, cut into bite-size pieces
8 ounces sharp provolone cheese, cut into bite-size pieces
8 ounces fresh mozzarella cheese, cut into bite-size pieces
2 large tomatoes, cut into bite-size pieces
1 (14 ounce) can artichokes, drained and cut into bite-size pieces
½ (12 ounce) jar roasted red peppers, drained and sliced
½ cup pitted and coarsely chopped Kalamata olives
¼ cup pitted and chopped green olives
1 tablespoon extra-virgin olive oil
3 tablespoons red wine vinegar
freshly-ground black pepper, to taste
¼ cup shredded fresh basil leaves

Steps:

  • Combine the Genoa and sopressata salami, provolone, mozzarella, tomatoes, and artichokes in a bowl. Slice the roasted red peppers and add them to the bowl, along with about 3 tablespoons of their juice.
  • Mix in the chopped olives. Drizzle olive oil over the entire dish, followed by the red wine vinegar and black pepper. Salad can be made ahead of time and refrigerated until serving.
  • Tear the fresh basil leaves into bite-sized pieces and add them to the salad just before serving. Mix thoroughly and serve.

Antipasto means "before the meal," and this antipasto recipe doesn't disappoint. Serve up this antipasto of cured meats, fresh cheeses, and herbs that will satisfy guests until the next course is ready.

1 pound bocconcini (small balls of fresh mozzarella cheese)
1 1/2 tablespoons extra-virgin olive oil
1 tablespoon chopped fresh flat-leaf parsley
1/2 teaspoon crushed red-pepper flakes
Coarse salt and freshly ground pepper
1 cup roasted red peppers, drained
1 small clove garlic, thinly sliced
2 large heads radicchio di Treviso, separated into leaves
8 fresh figs, halved lengthwise
2 cups artichoke hearts, drained and quartered
1 pound Pecorino cheese, cubed
1 pound provolone cheese, cubed
3/4 pound air-dried sopressata, thinly sliced
3/4 pound refrigerator-dried sopressata, thinly sliced
1 1/2 cups pepperoncini, drained
1 1/2 cups mixed olives, drained
1 1/2 cups peppadew peppers
3/4 pounds salami, thinly sliced
3/4 pounds prosciutto, very thinly sliced
Breadsticks, for serving

Steps:

  • In a medium bowl, combine bocconcini, olive oil, parsley, and red-pepper flakes. Season with salt and pepper; stir to combine. Set aside. In a medium bowl, combine roasted red peppers and garlic; set aside.
  • Line a large platter with radicchio leaves. Arrange ingredients, with the exception of the breadsticks, on a platter in a decorative pattern. Serve with breadsticks.

This is a salad recipe of mine that is HIGHLY requested for special occasions! I used to make this in a large platter with all the ingredients just scattered around loosely. But I found my guests constantly picking through the platter to get items they missed! So I finally decided to place each serving in its own lettuce leaf! Now everyone will get every ingredient! This is much more interesting looking and is fun to assemble.

1 head iceberg lettuce
1/2 red onion, sliced thin
1 (12 ounce) jar roasted red peppers, whole, then slice into large strips
1 (12 ounce) jar Spanish olives with pimento
1 (12 ounce) jar marinated artichoke hearts, quartered
1 (12 ounce) jar pepperoncini peppers, whole-stems removed
2 tomatoes, med., sliced into rings
1 English cucumber, sliced thin
8 slices cooked deli ham
8 slices hard salami, from the deli
8 slices provolone cheese, from the deli
1 (12 ounce) bottle Italian salad dressing

Steps:

  • Crack the core of the head of letuce on the counter to loosen. Then remove the core and a few outer lettuce leaves.
  • Slightly loosen the outer leaves and wash under cold running water. Then gently peel away each whole lettuce leaf being careful not to tear them. I usually get at least 8 large leaves from 1 head of lettuce. Place the leaves on a very large serving platter.
  • ~~~~~~~~TO ASSEMBLE~~~~~~~~~.
  • Place one slice of each of the deli items in the bottom of each lettuce leaf. This creates a barrier so that all of the marinated ingredients won't make the lettuce soggy, while stored in the fridge.
  • Then layer all the other ingredients on top of that, in any order you wish. Use about 3 pieces of each item, in each salad bowl. I just try to make it as colorful as possible by not putting similar colored ingredients too close to each other.
  • Then cover the platter with plactic wrap and refridgerate until ready to serve. When ready to serve make sure to pass the salad dressing to your guests, so they can sprinkle it on their salad.
  • I have made this salad 24 hours in advance. It keeps very well in the fridge.
