6 cups baby spinach
1/2 cup Marie's® Blueberry Pomegranate Vinaigrette
1/4 cup toasted walnuts
1 cup blueberries
1/2 cup pomegranate seeds
1/2 cup carrots, shaved
1/2 cup dried cranberries
1/2 cup goat cheese, crumbled

Steps:

  • Toss spinach with Marie's® Blueberry Pomegranate Vinaigrette. Add in walnuts, blueberries, pomegranate seeds, carrots and cranberries. Top with crumbled goat cheese. Serve immediately.

1 mango
1 cup blueberries
1 pomegranate
2 teaspoons lime juice

Steps:

  • Cut the mango in half around the stone, and then criss-cross the flesh of the mango halves with a knife into 1/2-inch squares.
  • Push the diced mango flesh outwards and then slice off the squares from the skin into a bowl.
  • Tumble in the blueberries, then halve the pomegranate and bash out the seeds with a wooden spoon over the mango. Finally squeeze over the lime juice and serve.

Bring to a boil, reduce heat, then simmer uncovered, stirring occasionally, until the water is absorbed and the farro is tender, about 25 minutes. Transfer to a large serving bowl. While the farro cooks, prepare the other ingredients.
  • In a small bowl or measuring cup, briskly whisk together the olive oil, lemon juice, and 1/2 teaspoon salt until well combined. Pour over the warm farro, then toss to coat. Add the kale, cherries, chickpeas, red onions, and artichokes and toss to combine. Sprinkle the walnuts over the top. If time allows, place in the refrigerator for 20 minutes to allow the kale to tenderize. Enjoy.
