- In a shallow bowl, combine the pecans, bread crumbs, thyme, paprika and salt. Place Dijon mustard in another shallow bowl. Coat chicken with mustard, then roll in pecan mixture. , Place in a greased 13-in. x 9-in. baking dish. Bake, uncovered, at 375° for 30-35 minutes or until juices run clear. In a small bowl, combine sauce ingredients; serve with chicken.

- Pound chicken with a meat mallet to 1/2-in. thickness. Sprinkle with seasonings., In a large nonstick skillet, heat butter over medium heat; brown chicken on both sides. Cook, covered, until chicken is no longer pink, 6-8 minutes, turning once. Drizzle with honey and sprinkle with pecans. Cook, covered, until chicken is glazed, 2-3 minutes.

HONEY GARLIC PECAN CHICKEN
Steps:
- Place chicken breast between two pieces of plastic wrap and pound to about 1/2-inch thick. Place on a tray and season both sides of the chicken with the seasoned salt. Set aside.
- Heat the olive oil in a large heavy-bottomed skillet over medium heat.
- Add the flour to a plate and lightly dredge the chicken in the flour. Add it to the oil. The chicken should sizzle when you put it in the skillet. If not, allow the oil to heat a little longer.
- Sear the chicken for 4 to 5 minutes on each side or until golden brown and cooked through. Remove and set on a wire rack. Cover with foil.
- Add the butter to the skillet and allow it to melt. Add the pecans and cook, stirring frequently, for about 3 minutes or until the pecans are fragrant. The butter will foam up. That's normal.
- Add the garlic and cook, stirring constantly, for 1 minute. Add the chicken broth and stir, scraping the bottom of the skillet to get the browned bits (also called fond) off the bottom - there's lots of flavor there.
- Reduce the heat to a simmer and add the honey, salt, and pepper. Cook, stirring frequently until the mixture thickens - about 5 minutes. Serve the chicken with the sauce spooned over the top.

- 1. Oven: 450 Line a baking dish with aluminum foil and lightly coat with cooking spray or brush with olive oil. I used homemade pan grease (I use instead of cooking spray)
- 2. Take the whole garlic cloves and place on a napkin and put in microwave and microwave for 20 to 30 seconds. The cloves will now slip out of their skins and you can chop and mince as needed...careful they are hot hot.
- 3. In a small fry pan, saute chopped or minced garlic in the olive oil and butter till tender and then remove from heat.
- 4. Stir in brown sugar and add your spices. I would recommend a season or spice blend that you like for your first try at this dish.
- 5. Place the chicken breast in your prepared baking dish and cover with your garlic/brown sugar mixture. Salt and pepper to taste.
- 6. Bake, uncovered for 30 to 35 minutes depending on the size of your chicken breast..I use a meat thermometer, and when it registers 180 degrees, it is done.
- 7. I served this chicken dish with rice, peas and garlic bread. I had leftover macaroni salad also, but was too full to eat any, so I will have it the next day.
- 8. Cabela's spice blends can be purchased at their stores or over the internet..This Pecan Honey seasoning is my favorite.
PECAN CHICKEN
A nutty baked chicken dish with fresh grapes and lots of flavor.

- Preheat the oven to 350º.
- Melt butter in a 10 by 15-inch baking pan. In a shallow dish, combine buttermilk and egg. In another dish combine flour, pecans, salt, paprika, pepper and sesame seeds. Dip chicken in buttermilk then in flour. Place skin side down in melted butter. Turn to coat and leave skin side up. Sprinkle with pecan halves. Bake for 1 hour and 25 minutes. Half way through cooking, toss the grapes onto the baking pan as well.
DELUXE HONEY PECAN CHICKEN SALAD
Another one of those recipes that I have to keep copies of on hand because I get so many requests for it. Great on croissants or with any type of cracker.

- 1. Combine seasoned chicken, grapes, celery (if used) and pecans in a large bowl, set aside.
- 2. Mix mayonnaise, sour cream, honey and poppy seeds in a small bowl to blend. Add to chicken mixture.
- 3. Toss well to coat. Serve over lettuce, or with your favorite bread or crackers.
- 4. Note: the original recipe doesn't call for celery. I add it when I want to change the taste up a bit and add a little more crunch. It's equally delicious either way. Another variation is to use dried cranberries in place of the grapes.
HONEY PECAN CHICKEN
As usual, cooking time will vary depending on the size of the chicken breasts. 20 minutes is about right for 7 ounce breasts. Definitely use your thermometer to pull them out right when they're done so they don't dry out and get tough.* If the nuts are browning too quickly, lower the heat to 325°.

- Preheat oven to 350°.
- Mix soy sauce and honey and pour into paper plate or whatever you use when coating/battering food.
- Mix pecans and crunchy thing in another paper plate.
- Roll one chicken breast around in liquid mixture to completely coat and then press firmly into crumbs to coat top and bottom. If there's extra left in plate when you're done, press it onto the tops of the chicken.
- Transfer to baking sheet (lined with foil makes easy cleanup) and bake 20 minutes or until cooked throughout.

- Heat peanut oil in deep skillet or deep-fryer to 375 degrees F (190 degrees C). Oil should be deep enough to cover chicken pieces halfway.
- Season chicken pieces on all sides with seasoned salt.
- Put beaten eggs in a large bowl. Mix flour, salt, and black pepper in a large paper bag.
- Dip seasoned chicken into beaten egg; place each piece into bag containing seasoned flour and shake to coat.
- Cook chicken in hot oil until no longer pink at the bone and the juices run clear, about 10 minutes per side. An instant-read thermometer inserted into the thickest part of the thigh near the bone should read 165 degrees F (75 degrees C). Transfer chicken to a plate lined with paper towels to drain.
- Melt butter in saucepan over medium heat. Whisk honey into melted butter; cook, whisking occasionally, until bubbles start to form, about 5 minutes. Reduce heat to low; simmer another 10 minutes. Fold pecans into butter mixture; cook until the pecans are hot, 2 to 3 minutes. Drizzle over hot chicken pieces to serve.

ANOTHER HONEY PECAN CHICKEN
I got this from a magazine, but cannot remember which. I consider this a company dish. I made a double batch of the pecans. After mixing in the 1/2 cup pecans the recipe calls for, I gave it a taste test. I sprinkled a little more in. Guess that's a preferance for the individual cook to decide. I also made a double batch of the orange juice-honey mixture so I would make sure I had enough. I also sprayed the bake dish with vegetable cooking spray. I didn't check the prep time, so am guessing. I am thinking that adding maybe 1/2 cup chopped dried cranberries would be good also. Toni in Colorado

- Stir the contents of the vegetable seasoning packet, butter and water in a bowl to melt the butter.
- Add the 1/2 cup orange juice, stuffing crumbs and pecan pieces.
- Stir just to moisten.
- Mix honey and the 2 tablespoons orange juice.
- Arrange chicken in a single layer in a 9 x 13 inch bake dish.
- Spoon 1/2 of the honey mixture over the chicken.
- Press 1/2 cup stuffing on each chicken breast.
- Wrap 1 slice of bacon around each one.
