NEW MEXICO POSOLE RECIPE WITH PORK (PORK POZOLE VERDE)



New Mexico Posole Recipe with Pork (Pork Pozole Verde) image

Keeping the stew simple and savory, you can pass chopped tomato, onions, cilantro, jalapenos and lime wedges at the table to add an array of fresh flavors to finish.

Number Of Ingredients 13

3 pounds pork shoulder Butt roast
6 cloves garlic (roasted and chopped, or raw chopped)
Salt and pepper
1 onion (diced)
6 cups chicken stock (or water)
1 bay leaf
1 1/2 Tablespoons Mexican oregano (dried)
1 teaspoon New Mexico Red Chile Powder (or Ancho)
2 teaspoons ground cumin
1 pinch ground cloves
2 dried red chile pods (Guajillo are easily found)
1/2 pound frozen posole
2 cups Hatch Green Chile (roasted, peeled, coarse chopped. About 8 - 10 peppers.)

Steps:

  • If using dried posole, soak overnight in enough water to cover by two inches. If using frozen hominy you don't need to soak overnight.
  • Cut pork roast into large bite sized chunks. Remove excess fat as you cut.
  • Heat a 6 - 7 quart soup pot, or Dutch oven over medium high heat. Once the pot is hot, add the oil. Once the oil is shimmering, add pieces of pork. Don't over-crowd and sear in batches. Searing both sides. As you sear, remove the pork to a plate and continue with remaining pieces of pork.
  • Add all of the browned pork back into the soup pot. Add remaining ingredients. Add more water or broth if needed to cover all the ingredients.
  • Bring to a boil, turn down heat to a simmer and cover with a lid, leaving lid ajar.
  • Cook on low for 2 - 3 hours or until pork and posole are tender. If using canned Hominy, add the drained hominy once the pork is tender. Simmer for another 15 minutes.
  • Remove chile pods and bay leaf. If you want to take the time. Place cooked chile pods into a grinder, along with 1/4 cup of the broth. Grind to a smooth consistency and return to the soup.
  • Ladle the posole into bowls. Pass with the cilantro, onion, jalapeño, chopped tomatoes or even some thin sliced cabbage, and lime wedges at the table. Traditionally a long-simmered stew, this Mexican-inspired stew is quick and easy, thanks to canned hominy. Searing the pork loin in the pot before making the stew gives you a great base of flavors so the stew seems as if it indeed simmered all afternoon. Garnish with chopped cilantro and serve with warm tortillas on the side. Yum, yum, yum.

1 pound pork loin, chopped
salt and ground black pepper to taste
1 tablespoon canola oil
1 onion, diced
2 tablespoons water
4 cloves garlic, minced
2 serrano peppers, minced
2 teaspoons ground cumin
2 teaspoons ground coriander
2 cups water
2 cups chicken broth
1 (14.5 ounce) can diced tomatoes
¼ cup cornmeal
2 (15 ounce) cans hominy, drained
¼ cup chopped fresh cilantro
1 lime, juiced

Steps:

  • Season pork with salt and pepper.
  • Heat oil in a pot over medium-high heat. Cook and stir pork in hot oil until browned, 5 to 10 minutes. Transfer pork to a plate and return pot to heat.
  • Reduce heat to medium-low. Cook and stir onion and 2 tablespoons water in hot pot until water has evaporated and onion is soft and golden brown, 5 to 7 minutes. Add garlic, serrano peppers, cumin, and coriander; cook and stir until fragrant, about 1 minute.
  • Stir 2 cups water, chicken broth, and tomatoes into onion mixture. Whisk in cornmeal and bring to a simmer over high heat, stirring often; add hominy, pork, salt, and pepper to taste. Reduce heat to medium-low and cook, stirring occasionally, until onion is soft and hominy mixture thickens, about 30 minutes. Stir in cilantro and lime juice.

This is a quick and interesting recipe to prepare posole for unexpected guests or to take to a potluck party. My husband loves it. I have played around with this recipe A LOT. You can use 1 (10 ounce) package of frozen corn instead of hominy, or delete the chilies or olives. I prepare mine depending on whether children are going to eat it or not.

1 tablespoon olive oil
1 large onion, thinly sliced
2 cloves garlic, minced
2 teaspoons dried oregano
½ teaspoon ground cumin
2 (14.5 ounce) cans chicken broth
1 (15 ounce) can white hominy
1 (7 ounce) can chopped green chile peppers, drained
1 (2 ounce) can sliced black olives, drained
¾ pound skinless, boneless chicken breast meat - cut into cubes

Steps:

  • In a large pot over medium heat, combine oil, onion, garlic, oregano and cumin. Cook, covered, 5 minutes, until onions are tender.
  • Stir in broth, hominy, chile peppers and olives. Bring to a boil, then reduce heat to medium. Stir chicken into pot. Cover and cook until chicken is no longer pink, 5 to 10 minutes.

This authentic Mexican pozole recipe is easy to make and perfect for families eating on a budget. As a bonus, it tastes just as good or even better the next day!

4 pounds pork (pork shoulder, cut into bite-size chunks)
water
1 bay leaf
1 tbsp salt
3-4 cloves garlic (crushed)
28 oz chili sauce (red)
1 tbsp chili powder
1 tsp ground cumin
48 oz hominy (drained)

Steps:

  • Place chunks of meat to a large Dutch oven, sear as I did if desired. Add enough water to cover the meat plus another inch or so. Add bay leaf, garlic, and salt and bring to a boil and reduce heat to low simmer. Continue to cook on low for at least 4 hours.
  • Once the meat is tender and shreds easily, shred the pork to your desired consistency and add remaining ingredients. Continue to simmer for another 30 to 60 minutes.
  • Serve with sour cream and avocado if desired.

1 quart Basic Chicken Stock or store-bought low-sodium chicken broth
1/4 cup guajillo chile salsa, such as Frontera
1 (15-ounce) can hominy, rinsed and drained
1 1/2 teaspoons sherry vinegar
1 cup shredded cooked chicken
Kosher salt and freshly ground pepper
Cilantro sprigs, for serving

Steps:

  • In a saucepan, bring stock to a simmer. Stir in salsa, hominy, sherry vinegar, and chicken. Cook until chicken and hominy are heated through, about 1 minute. Season with salt and pepper. Serve with cilantro.

This is an easy meal to put on the table. I love to make this in the fall and winter. The chile powder from New Mexico makes a lot of difference, but you could make your own chile powder from chile pods, or buy it at the store. NOTE: If you buy chili powder (like McCormick) from the store, it is a blend of ingredients. Omit the oregano if you use it.

2 (15 ounce) cans hominy, undrained (I use one yellow, one white)
2 teaspoons dried oregano leaves, crushed
1 teaspoon salt
1/2 teaspoon garlic powder
1 -2 tablespoon chili powder (preferably New Mexican red chile powder, or store bought chili powder)
1 onion, chopped
cooked chicken (shredded or cubed) (optional)
cooked pork (shredded or cubed) (optional)
cilantro, chopped (optional)

Steps:

  • Combine all ingredients in a large pan.
  • Bring to a boil over medium heat.
  • Reduce heat and simmer on low, covered, for 20-25 minutes. (Add water or chicken stock, if necessary).
  • May garnish with cilantro, if desired.
  • For Vegetarian omit the Chicken and the Pork.

  • In large saucepan melt fat over medium-high heat. Saute onion until golden brown, about 10 minutes. Add garlic and cook briefly, just until aroma is released. Add chicken stock, hominy and carnitas. Reduce heat and simmer, uncovered, about 10 minutes. Add tomatillo salsa and bring to a boil Reduce to a simmer and cook and additional five minutes. Season to taste with salt and pepper.

  • Trim as much visible fat as possible from the pork butt. Cut the remaining meat into 1-inch cubes, reserving any bones.
  • Place the pig's feet, neck bones and pork bones from the pork butt in the bottom of a 6- to 8-quart stock pot and add the cubed meat on top. Add the onions, garlic, bay leaves and chile. Fill the pot with water. Bring to a boil and skim any scum that floats to the top. Reduce the heat to very low and cook 4 hours. Remove from the heat and refrigerate 8 hours or overnight.
  • The next day, using a slotted spoon, skim the congealed fat from the top of the stock. Remove the onions, bones and bay leaves and discard. Remove the pigs feet and separate the meat from the bones. Chop the meat (including the skin) coarsely and return to the pot.
  • Place over low heat and cook another 2 hours. Add the pozole corn and cook until the kernels open and the meat is falling apart, another 2 hours. If the soup becomes too dry, add more water. Season to taste with salt and plenty of pepper. Add the oregano. Stir and cook 30 more minutes to let the flavors meld.
