MUSHROOM CROQUETTES

This is an excellent dairy lunch or side dish, with an Italian flavor. Use the best fresh mushrooms you can find.

Number Of Ingredients 9

1 1/2 lbs fresh white mushrooms, divided
1 large onion, quartered
1 clove garlic
3 tablespoons olive oil, divided
1 3/4 cups Italian style breadcrumbs, divided
3 tablespoons grated parmesan cheese
1 egg, lightly beaten
1/4 teaspoon ground black pepper
1 (17 ounce) jar spaghetti sauce or 1 (17 ounce) jar alfredo sauce

Steps:

  • Trim mushroom stems.
  • In the container of a food processor, combine 1 pound (about 6 cups) of the mushrooms, the onion and garlic.
  • Pulse just until coarsely chopped.
  • In a large skillet, heat 1 tablespoon of the oil until hot.
  • Add mushroom mixture.
  • Cook and stir until mushrooms are tender and most of the liquid has evaporated, about 10 minutes.
  • Remove from heat.
  • Spoon into a large bowl.
  • Stir in 1 1/4 cups of the bread crumbs, the cheese, egg and pepper.
  • Form into ten 3-inch long croquettes.
  • Place remaining 1/2 cup bread crumbs on a plate or sheet of waxed paper.
  • Coat croquettes with bread crumbs.
  • Slice remaining 1/2 pound mushrooms; set aside for later use.
  • In a large skillet, over medium heat, heat 1 tablespoon of the oil until hot.
  • Cook croquettes on both sides until browned, about 5 minutes.
  • Meanwhile, in a medium skillet, over medium heat, heat remaining 1 tablespoon oil until hot.
  • Add sliced mushrooms; cook and stir until tender, about 5 minutes.
  • Stir in spaghetti sauce; cook until hot, about 2 minutes.
  • Serve over croquettes.
  • Sprinkle with Parmesan cheese, if desired.

One of my most loved recipes! I make this for nearly every big holiday, including Passover - always a big hit, never any leftovers for the next day!

Number Of Ingredients 6

1 (14 3/4 ounce) can pink salmon
2 eggs, lightly beaten
1 small onion, finely chopped
4 tablespoons matzo meal
salt & pepper, to taste
oil, for frying

Steps:

  • Separate salmon but save all juice.
  • Remove bones and skin (if any) from salmon, and then shred the salmon into fine pieces.
  • Place salmon into mixing bowl adding the juice from the salmon, beaten eggs, onion, salt, pepper, and matzo meal - mix well.
  • Form mixture into patties and fry on medium heat on both sides until golden brown.

This recipe actually belongs to a wonderful woman named Annice Grinberg. We met on a cooking list about 10 years ago, and I've admired her recipes on the Internet for years. I actually had a chance to meet her a few years ago, and we discovered that I went to high school with her daughter. Any recipe that has Annice's name on it is a winner, like this one.

1 1/2 lbs potatoes, peeled and chopped
5 cups water
1 onion, peeled and chopped
1/4 lb mushroom
1 teaspoon oil
1 tablespoon water
salt and pepper
1 cup matzo meal
1 teaspoon oil

Steps:

  • Boil the potatoes in the water til tender.
  • Drain and mash the potatoes.
  • In a separate pan, saute the onions and mushrooms in oil over medium-high heat for three minutes.
  • In a large bowl, mix mashed potatoes, sauteed onions and mushrooms, seasonings and matzo meal together.
  • Form 10 croquettes.
  • Heat oil in a large non-stick frying pan over med-high heat and fry croquettes for 8 minutes on each side.
  • Serving size is 2 croquettes per person.
