ANNETTE'S CAPRESE SALAD BITES
Caprese salad is one of my faves! I loved these because they're bite-sized and a perfect party appetizer. The flavors in each bite are fab. Make sure you grab one or two before you put the plate down. These are going to disappear fast! Our store was out of the mozzarella pearls, so we substituted with regular mozzarella. Still...

Steps:
- 1. Cut tomatoes in half and clean out pulp. Lay in bottom of a dish with a lip on it.
- 2. Season WELL with coarse sea salt and ground black pepper.
- 3. Tear basil leaves and press a piece down inside each tomato half.
- 4. Take a mozzarella pearl and press down on the basil leaf to get it to sit inside tomato half.
- 5. Drizzle with olive oil followed by balsamic vinegar.
- 6. Sit out at room temperature so mozzarella has time to get warm and bring out it's natural flavors. GOBBLE UP and ENJOY!!! Make lots because you won't be able to eat just 5 or 10. You'll want more and more.

Tomatoes, fresh mozzarella, and basil drizzled with a sweet balsamic reduction and olive oil. Easy, impressive and delicious! Most grocery stores now sell prepared balsamic reductions. Surprisingly it's just as good!

- Stir balsamic vinegar and honey together in a small saucepan and place over high heat. Bring to a boil, reduce heat to low, and simmer until the vinegar mixture has reduced to 1/3 cup, about 10 minutes. Set the balsamic reduction aside to cool.
- Arrange alternate slices of tomato and mozzarella cheese decoratively on a serving platter. Sprinkle with salt and black pepper, spread fresh basil leaves over the salad, and drizzle with olive oil and the balsamic reduction.

These are impressive, but almost embarrassingly easy, Think of them as a little appetizer sized Caprese Salad. It makes a huge difference in this recipe if you use good cheese, oil, and vinegar. Adjust the oil and vinegar to your taste, measurements are not exact.

- Cut the stem ends off the tomatoes, and hollow them out with a small spoon.
- Cut mozzarella into small cubes.
- Wrap each cube of cheese in a leaf of basil, and stuff into a tomato.
- Drizzle tomatoes with oil and vinegar, and sprinkle with salt and pepper.
- Try not to eat the whole tray before guests arrive.

- Wash and dry the tomatoes and basil. You can slice the tomatoes which is more traditional for layering, or coarsely chop the tomatoes for a more rustic look.
- Stack about 10 basil leaves together, roll like a tube, and then julienne by slicing on a diagonal. You'll end up with long strings of basil, almost 2" long.
- Slice fresh mozzarella into ¼” round slices. If the mozzarella is large in diameter then cut the round into halves or quarters, basically bite size.
- Place mozzarella on serving tray and sprinkle with about 1/4 teaspoon to 1/2 teaspoon kosher salt. Add the tomato chunks or slices and sprinkle again with1/4-1/2 teaspoon kosher or sea salt.
