JAMES BEARD'S OLD-FASHIONED MEAT LOAF
A meatloaf is capable of infinite variations with spices and ingredients. The combination of meats in this version makes this dish more delicious and firm. Bake it free form on a baking sheet or shallow pan, not in a loaf pan, or it will be mushy. It goes great with mashed potatoes or rice. This satisfying dish is adapted from The New James Beard (1981).

Steps:
- In a large mixing bowl, combine the ground meats, onions, carrots, and spices. Mix well.
- Add in the eggs, milk, bread crumbs, and mix well.
- Place half of the mixture on a greased, shallow baking pan. Place hard boiled eggs (without shells, of course) end-to-end in a line through the loaf. Place remaining amount of mixture on top and form into a loaf with your hands.
- Place strips of bacon atop loaf in an attractive criss-cross pattern.
- Bake at 350 F for 90-120 minutes, depending upon how thick you have formed the loaf.

ORIGINAL ANN LANDERS MEATLOAF
This is the original version my mom handed down to me and has been one of my family staples since the 70s. I occasionally add other ingredients such as bell pepper or fresh onions, or top with bacon or cheese slice triangles. Sometimes I substitute saltine cracker crumbs to give it a different texture. My favorite part is meatloaf sandwiches from the leftovers.

Steps:
- Preheat oven to 350 degrees.
- Mix all ingredients except tomato sauce.
- Shape into loaf and place in ungreased pan.
- Pour tomato sauce over loaf.
- Bake for one hour.

ANN'S OLD FASHIONED MEATLOAF

Steps:
- Saute vegetables in oil until carrots are soft.
- Add garlic and saute about 1-2 minutes longer.
- Remove from heat and set aside to cool.
- In a large bowl, combine beef, bread crumbs, and cooled vegetables.
- In another bowl, whisk together the eggs, salt, pepper, thyme, parsley, Worcestershire sauce and catsup until combined.
- Pour egg mixture over beef and mix with hands, handling just enough to combine evenly.
- Do not overmix, or it will be too dry.
- Pat mixture gently into greased loaf pan, but do not press down too firmly.
- Pour 1/2 cup tomato sauce evenly over the top and bake at 350 degrees for approximately 1-1/4 hours.
- Place on a wire rack and cool for 10 minutes before serving.
- Cut into thick slices and serve warm or cold with extra tomato sauce, if desired.
- I use crushed, canned tomatoes sometimes and that is very good too.
CARROT MEAT LOAF

- Combine eggs, milk, soup mix, bread crumbs and carrots. Add beef and pork; mix well. Shape mixture into a circle with a 9-in. diameter; form a 3-in. hole in the center of the circle. Place in a shallow baking pan. Bake at 350° for 1 hour. Drain. , Combine glaze ingredients; spread over meat. Bake 10 minutes longer or until no pink remains and a thermometer reads 160°. , MICROWAVE METHOD: Prepare and shape loaf as above. Place on a microwave-proof platter. Cover with waxed paper. Microwave on high for 16-18 minutes or until a thermometer reads 160°, giving the dish a quarter turn every 3 minutes. Drain. Let stand 5 minutes. , Meanwhile, in a custard cup, combine glaze ingredients. Spread half the glaze over meat loaf. Return to microwave on medium for 1 minute; remove. Cover remaining glaze with waxed paper and heat in microwave on medium for 1 minute. Serve glaze in center of meat loaf.

ANNE ROSENZWEIG'S OLD-FASHIONED MEAT-AND-RICE LOAF WITH SPICED CARROTS

Steps:
- Blanch the carrots for 3 minutes to soften; drain but do not cool. Combine the chili oil, vinegar and curry powder. Toss the warm carrots in this mixture and marinate for 2 hours. Drain and set aside.
- To make the meatloaf, preheat the oven to 350 degrees. Place the onion, garlic and fresh ginger in a food processor and puree. Warm the butter over medium-high heat and saute the onion mixture until soft, about 5 minutes, stirring to avoid sticking. Remove from the heat and cool.
- In a large mixing bowl, combine the sauteed vegetables with the veal, sirloin, rice, egg, pistachio nuts and salt and pepper by hand, taking care to mush the meat as little as possible.
- Place half this mixture in a nonstick loaf pan. Top with an even layer of marinated carrots and then the rest of the meat. Press to make a solid loaf and bake for 1 hour. Allow to rest at room temperature for 20 minutes before slicing and serving with steamed rice or couscous.
