- In a small bowl, sprinkle gelatin over 1/2 cup water; let stand 5 minutes. In a small saucepan, bring sugar and remaining water to a boil over medium heat, stirring constantly. Add gelatin; reduce heat. Simmer 5 minutes, stirring frequently. Remove from heat; stir in extract and food coloring as desired., Pour into a greased 8-in. square pan. Refrigerate, covered, 3 hours or until firm., Loosen edges of candy from pan with a knife; turn onto a sugared work surface. Cut into 1-in squares; roll in sugar. Let stand, uncovered, at room temperature until all sides are dry, turning every hour, 3-4 hours. Store between layers of waxed paper in an airtight container in the refrigerator.

- In a small bowl, sprinkle gelatin over 1/2 cup water; let stand 5 minutes. In a small saucepan, bring sugar and remaining water to a boil over medium heat, stirring constantly. Reduce heat; simmer, uncovered, 5 minutes. Remove from heat. Stir in gelatin mixture until gelatin is completely dissolved. Stir in extract., Divide mixture between two small bowls; tint one pink and the other red with food coloring. Transfer to two greased 8x4-in. loaf pans. Refrigerate 30 minutes or until firm., Loosen sides from pan with a knife; turn onto a sugared board. Cut into 1/2-in. cubes; roll in additional sugar. Let stand, uncovered, at room temperature 3-4 hours or until all sides are dry, turning every hour., To Make Ahead: Store candy in a covered container. Refrigerate for up to two weeks., Freezer Option: Freeze candy in an airtight container. To use, thaw, loosely covered, before serving.

GUMDROP CAKE 1975
This recipe was given to me in 1975 by a co-workers wife. I have been making it a very long time, each Christmas. As far as I know this was a Christmas Fruitcake recipe originally .

Steps:
- Chop fruit, gumdrops.
- Yes even the black ones they give an anise flavour.
- Sift flour, baking soda.
- Pour one cup over the chopped gumdrops and raisins.
- Cream crisco, sugar, and egg yolks, well.
- Mix liquid alternating with the dry ingredients.
- Add the gumdrop mixture.
- Beat the egg white until stiff.
- Fold egg whites beaten into the cake batter.
- Line 6 loaf pans with foil.
- Bake in preheated oven 2 1/2 hours- 3 hours at 275 degrees F.
- Remove from oven and let cool.
- Rewrap cooled cakes in the same foil from the pans then double wrap in saran wrap.
- When left for two weeks, foil will come away very easy.
- Note glazed cherries may be used as part of the raisins or gumdrops.
- But a total of 10 pounds fruit should be used.
GUMDROP COOKIES I
A special cookie for the holidays, with spiced gumdrops, raisins and walnuts. For best results, be sure to pick out the black gumdrops.

Steps:
- In a medium bowl, cream together the brown sugar and shortening. Stir in the egg and buttermilk. Stir together the flour, baking soda and salt, add to the creamed mixture, mix until well blended. Stir in the chopped gumdrops, walnuts and raisins. Cover bowl, and chill for at least 1 hour.
- Preheat oven to 400 degrees F (200 degrees C).
- Drop cookies by rounded teaspoonfuls 2 inches apart onto an unprepared cookie sheet.
- Bake for 8 to 10 minutes in the preheated oven. Cool for 2 minutes on baking sheets before removing to cool on wire racks.
