ANIMAL CRACKER TRUFFLES
Did you ever buy those humongous bags of non frosted animal crackers? Yeah..not the cookies, but the plain old crackers. We are talking...no frosting..purely plain? Well...here you go....

Steps:
- 1. In food processor, combine cracker crumbs and cram cheese. Roll into walnut size balls.
- 2. Melt the chocolate (couple of methods to doing this). Dip balls into melted chocolate one at a time. Top with fun sprinkles.
- 3. Place in refrigerator until hard.
- 4. Melting chocolate: Using a microwave safe container (I like using pyrex glass measuring cups) start at one minute on 50% power. Stir. Add additional 30 sec intervals as needed. Double boiler: Place chips in top pan over simmering water. Do not let the pan touch the water. Stir until smooth.

- In a food processor, pulse the circus animals a few times, and then blend them down until they are just crumbs. It might be easier to do this in two batches (even if you don't have a food processor, you can still make these.
