2 cups fat-free plain yogurt
2 cups pureed fresh strawberries
1 can (14 ounces) fat-free sweetened condensed milk
1 cup fat-free milk
3 teaspoons vanilla extract

Steps:

  • In a large bowl, combine all the ingredients. Fill cylinder of ice cream freezer two-thirds full; freeze according to manufacturer's directions. (Refrigerate any remaining mixture until ready to freeze.) Transfer ice cream to freezer containers, allowing headspace for expansion. Freeze 2-4 hours or until firm. Repeat with any remaining ice cream mixture, Remove from the freezer 30-45 minutes before serving.

2/3 cup strawberry, fresh or frozen unsweetened
2/3 cup sugar
1 (1 1/3 ounce) envelope whipped dessert topping mix
1 cup low-fat milk
1 cup plain nonfat yogurt

Steps:

  • Put strawberries and sugar in the freezer bag.
  • Zip the bag closed, pressing out excess air.
  • Mash strawberries and sugar together in the bag.
  • Add whipped topping mix and milk, zip the bag, then squeeze the mix.
  • Add yogurt to the mixture in the bag, seal it, then squeeze the mixture until well blended.
  • Place in the freezer to harden (about two to four hours).
  • After two hours, remove bag from freezer.
  • Squeeze mixture to make texture creamier.
  • Eat at soft-serve consistency or return to freezer.
  • Makes one quart.

1 lb fresh strawberries, rinsed and hulled
2/3 cup sugar
2 teaspoons vodka (optional) or 2 teaspoons kirsch (optional)
1 cup plain yogurt (whole milk, not light or fat-free)
1 teaspoon fresh lemon juice

Steps:

  • Slice strawberries into small pieces; toss in a bowl with sugar and vodka, stirring until the sugar begins to dissolve.
  • Cover and let stand at room temperature for 1 hour, stirring every so often.
  • Puree the strawberries and their liquid with the yogurt and lemon juice in a blender or food processor until smooth.
  • You may press the mixture through a mesh strainer to remove any seeds; this is optional.
  • Refrigerate mixture for 1 hour, then freeze in an ice cream maker according to manufacturer's directions.

3/4 cup fresh blueberries
1 finely grated orange, juice and rind of
3 tablespoons maple syrup
18 ounces plain low-fat yogurt

Steps:

  • Place the blueberries, orange rind and juice into a food processor or blender and process to a puree. Strain through a sieve into a bowl or pitcher.
  • Stir the maple syrup and yogurt together in a large mixing bowl, then fold in fruit puree.
  • Churn the mixture in an ice cream machine, following the manufacturer's instructions, then freeze for 5-6 hours. If you do not have an ice cream machine, transfer the mixture to a freezerproof container and freeze for 2 hours.
  • Remove from the freezer, turn out into a bowl, and beat until smooth. Return to the freezer and freeze until firm.

I put this together hoping to make a rich frozen yogurt. Instead of plain whole-milk yogurt I used honey whole-milk yogurt so I omitted the 2 tablespoon of honey. My ice cream maker can only accommodate a small amount of ingredients, I reduced the yogurt from 3 to 2 cups.

3 cups strawberries (hulled, halved or quartered)
1 cup sugar
1 teaspoon vanilla
1 pinch sea salt
2 cups Greek yogurt, whole-milk
1/2 cup heavy whipping cream
1 tablespoon corn syrup
2 tablespoons honey

Steps:

  • Preheat oven to 425°F. Combine strawberries, vanilla, salt and sugar in a 13x9x2" baking pan. Roast berries, stirring occasionally, until juices are bubbling, 15-20 minutes. Let cool.
  • Purée berries, juices and remaining ingredients in a blender until smooth. Process mixture in an ice cream maker according to manufacturer's instructions until the texture of soft serve ice cream. Transfer mixture to an airtight container, press a piece of parchment or plastic wrap against the top of the yogurt to prevent ice crystals from forming. Freeze until ready to serve.

Steps:

  • Combine the cster sugar and the water in a small saucepan and stir over a low heat unto the sugar has dissolved. Transfer this sugar syrup to a medium sized jug.
  • Sprinkle the gelatine powder over the sugar syrup and then stir until the gelatine dissolves.
  • Add the yogurt and passionfruit pulp.
  • pour the yogurt mixture into a metal or glass loaf pan, cover tightly with foil and then freeze for approximately 3 hours, until almost set.
  • Scrape te yogurt from the bottom and sides of the pan with a fork, return to the freezer until firm.

1 cup sour cream
1/2 cup white sugar
1/4 teaspoon vanilla extract
1 tablespoon almonds
1 tablespoon pistachios

Steps:

  • Puree the strawberry. Add sour cream, sugar and vanilla extract to the blender and blend well.
  • Cover and freeze for atleast 4 hours. Then take it out and blend the mixture again until soft. Freeze again for 2 hours. Then break the crystals and blend it again until soft. More beating results in a smoothier and creamier texture.
  • Repeat a couple of times until it becomes creamy and soft. For the last time alone, do not freeze it, just refrigerate it for best creamy results. Garnish with chopped nuts.
