Steps:
- Bring a large pot of salted water to a boil for the pasta. Combine the basil, pine nuts, garlic, and olive oil in a blender and blend to a puree. Add the cheese, salt and pepper, and blend again.
- Cook the pasta in the boiling, salted water until al dente, about 3 minutes. Drain and transfer to a large bowl. Add the pesto and toss. Taste for salt and pepper, and add a drizzle of oil, if you like.
ANGEL HAIR PASTA WITH GARLIC AND SPINACH

Steps:
- Heat olive oil in a large saute pan over medium heat. Add garlic and saute until golden brown.
- Add anchovies to pan, and using a wooden spoon, mash and stir them until they dissolve into the oil.
- Add capers and cook and additional minute.
- Add spinach leaves, adding one bag at a time, tossing continuously until it wilts. Add a splash of water or wine if needed. Reduce heat to low and keep warm.
- In the meantime, cook pasta according to package directions. Drain and add pasta to spinach mixture.
- Serve on plates topped with fresh Parmesan and chopped or sliced tomatoes!
ANGEL HAIR PASTA WITH SPINACH
The pasta isn't the only angelic thing about this dish. Pine nuts, olive oil, and parmesan bring loads of fresh flavor to noodles and sauteed spinach.

- Saute pine nuts in olive oil until golden. Remove nuts and set aside. In same oil, saute garlic and red pepper for 3 minutes; set aside. Cook pasta per pkg directions until tender and drain. Reheat oil containing garlic and pepper; add spinach and saute until wilted (about 3 minutes.) Stir in butter. In large bowl, toss pasta, spinach, pine nuts and cheese. Add salt and pepper and serve.

LEMON ANGEL HAIR PASTA WITH SPINACH AND HERBS

- Bring 6 quarts water to a full boil. Salt the water.
- Add the pasta all at once. Stir gently to submerge. Reduce the heat slightly to prevent boil-over, and boil pasta according to the packaging until al dente.
- When the pasta is done, remove and reserve ½ cup of starchy water the pasta cooked in.
- Drain pasta and return the pasta back to the pot you cooked it in. Turn the heat up to medium-high.
- Add the reserved liquid, spinach, garlic, lemon juice, olive oil, salt, pepper and nutmeg. Stir gently but thoroughly until the spinach is wilted and the sauce has reduced and emulsified, about 3 minutes.
- Remove the pot from the heat and fold in the grated cheese and the minced herbs. Correct seasonings.
- Plate and top each serving with some toasted pine nuts.

- Toast pignoli nuts slowly in a skillet, watching carefully not to burn. Remove from skillet when nuts are tan in color.
- Cook noodles in boiling salted water until al dente. Drain.
- Combine heavy cream, clarified butter, 2 1/3 tablespoons butter or margarine, nutmeg, and salt and pepper in a saucepan; heat thoroughly. Add noodles to the heated sauce. Let sauce reduce to a creamy consistency. Top with nuts, and serve.

- Bring a large stockpot of water to a boil.
- In a large saute pan, heat the olive oil. Over medium-high heat, saute the broccoli florets, stirring as necessary, 2 to 3 minutes. Season lightly with salt and pepper. Transfer to a bowl and reserve until needed.
- Deglaze the pan with the stock, and add the thyme leaves. Bring to a boil and reduce by half. Add the butter and the goat cheese and stir together until the cheese melts. Keep warm.
- Meanwhile, add a little salt to the pot of boiling water and cook the pasta until it is al dente, about 1 minute for fresh pasta. (Cook packaged pasta according to the directions on the package). Drain the pasta well and add to the reserved broccoli in the saute pan. Cook until heated through, about 2 minutes. Season with salt and pepper, to taste.
- To serve, divide the pasta among 4 heated plates. Sprinkle with toasted pine nuts and garnish with a sprig of thyme.

- In a 6- to 8-quart pan over high heat, bring about 4 quarts water to a boil; add angel hair and cook, stirring occasionally, just until tender to bite, 3 to 4 minutes.
- Drain pasta, reserving about 1/3 cup cooking liquid; return pasta to pan.
- Meanwhile, large frying pan over medium-high heat, melt butter with olive oil.
- Add shrimp, garlic, chili flakes, pepper, salt; stir for 2 minutes.
- Add wine; stir often until shrimp are opaque.

- Preheat oven to 450°F Once preheated, cook chicken for 20-25 minutes.
- Meanwhile, destem and chop the spinach and tomatoes.
- Heat oil in a large skillet over medium heat and cook garlic for 2 minutes. Add spinach and cook until wilted. Add tomatoes, salt and pepper. Cook until soft. Add red pepper.
- Bring water to a boil and cook pasta according to package directions.
- Put pine nuts in the oven for the last 5 minutes of the chicken's cooking time.
- When chicken is finished, slice or chop and add to the sauce. Simmer until pasta is done, then add the pine nuts and parmesan.
- Top the pasta with the sauce and serve warm.

- mise en place ~ gather ingredient
- warm plates
- bring water to boil - add salt
- toast pine nuts - set aside
- coarsely crumble feta - set aside
- shave parmesan - set aside
- dice and deseed tomato - set aside
- mince garlic and shallot - set aside
- measure out parmesan - set aside
- chiffonade parsley and basil - set aside
- When pot of water it is boiling -
- Add oil to a skillet, when it shimmers, add shallots, just to soften.
- Add garlic - just until fragrant about 20 seconds - careful not to burn.
- Drop angel hair in the pot of salted boiling water for 1 minute to soften.
- Add diced tomatoes to skillet - just to warm through - about 45 seconds
- Off heat - Add in parsley, basil, crumbled feta, salt, and pepper - stir gently.
- Add a little pasta water if needed to loosen dish.
- Remove angel hair from boiling water; drop into skillet toss gently.
- Taste for salt - (remember feta can be salty)
- Place on a warmed plate - when plating use tongs; twist pasta into a mound - this will help hold the heat.
- Top with toasted pine nuts and shaved Parmesan.
- Your welcome.
