PASTA WITH EGGPLANT AND ZUCCHINI
This timeless summer pasta dish was brought to The Times in 1991 by Pierre Franey in one of his 60-Minute Gourmet columns. Like so many of his dishes, it is at once elegant and easy, and no trouble to put together on a weeknight. Sauté the sliced eggplant and zucchini until golden while you make a quick sauce of canned crushed tomatoes, olive oil, garlic and herbs in another pot. Throw everything together, and simmer for about 15 minutes. Toss with cooked pasta and a shower of Parmesan. Dig in.

Steps:
- Heat 1 tablespoon of the olive oil in a saucepan and add the garlic. Cook and stir without browning. Add the tomatoes, parsley, oregano, pepper flakes, salt and pepper. Stir to blend, bring to a boil and simmer for 15 minutes.
- Meanwhile cut off the ends of the eggplant and peel. Cut it into 1-inch cubes.
- Cut the ends off the zucchini and slice into 1-inch thick slices.
- Heat the remaining olive oil in a large skillet. When the oil is very hot, add the eggplant, zucchini, salt and pepper. Cook, tossing, until nicely browned and tender. Add to the tomato sauce. Mix well and cook for 15 minutes.
- Drop the pasta into salted boiling water and cook to the desired degree of doneness. Drain and reserve 1/2 cup of the cooking liquid.
- Return the pasta to the pot, add the reserved cooking liquid, the vegetable and sauce mixture, basil and Parmesan cheese. Toss and serve hot.

- Into a large pot or deep saute pan, add Olive Oil (2 tablespoon) and the Garlic (4 clove) and cook for a few minutes until fragrant.
- To the pot, add Butter (1 tablespoon) and Freshly Ground Black Pepper (to taste).
- Add Chicken Stock (3 cup) and bring to a boil.
- Once boiling, add the Angel Hair Pasta (250 gram). Cook for 4 to 5 minutes, or until the pasta is tender.
- Once the pasta has absorbed most of the liquid, turn the temperature down to medium.
- Add the Fresh Parsley (1 tablespoon), Grated Parmesan Cheese (1 cup) and Cream (3/4 cup) and stir through until the cheese has completely melted.
- Serve as is or as a side dish. You can also add some pancetta or cooked chicken bits at the end. Enjoy!

- Cook and drain pasta as directed on package.

- 1. EGGPLANT: Salt the eggplant slices and let drain in a colander for about 10 minutes. Rinse and pat dry.
- 2. In a medium bowl beat eggs and half & half together. In a separate bowl mix fish fry, breadcrumbs and Cajun seasonings together. Put the flour in another bowl or pie plate.
- 3. Take a slice of eggplant and dust it in the flour, shake off excess, then dip in the egg mixture, then in the breadcrumb mixture. Make sure the eggplant is covered with the coating.
- 4. Set them on a platter lined with waxed paper. Repeat for the remaining eggplant slices. Put a layer of waxed paper between layers of eggplants as they are dipped and coated. Put in refrigerator for 30 minutes to 1 hour. (At this point start the sauce.)
- 5. If you want to fry the eggplants make sure you have enough oil to cover the eggplant slices and fry at 350 for 3-5 minutes or until golden brown. Remove fried eggplant to a platter lined with paper towels to drain. If you prefer to bake the eggplant, place on baking sheet sprayed with non-stick spray (I like olive oil spray) and bake at 450* for 10 minutes, flip slices over and bake for about 10 more minutes until golden brown.
- 6. SAUCE DIRECTIONS:
- 7. Make a light roux by mixing 1 cup butter and 1 1/2 cup flour together for at least 5 minutes.
- 8. In a large heavy skillet or saucepan bring stock, Cajun seasonings and onion to a boil; thicken by whisking roux into stock. Boil 3 minutes, whisk in half and half, wine, and 1 tablespoon butter, bring to just a boil then add cheese. Simmer on low heat.
- 9. In Separate pot sauté garlic in 1 tablespoon butter, add liquid crab boil and shrimp, cook for about 3 minutes until the shrimp just start to turn pink. Pour shrimp and garlic mixture into white sauce and simmer on very low heat for about 15-20 minutes. Sauce should be fairly thick but you can adjust it to your liking. Season to taste with salt, white pepper and Cajun seasoning as desired.
- 10. TO ASSEMBLE:
- 11. Put a serving of angel hair pasta on a plate then top the pasta with 2 slices of eggplant. Ladle enough sauce over eggplant to also blend with the pasta.
- 12. Garnish with sliced green onions, chopped fresh parsley and a lemon wedge. Serve with green salad and garlic bread. Enjoy!

- Cook pasta according to package instructions. Cover to keep warm; set aside.
- Heat 12-inch saute pan over medium high, add 1 ounce olive oil. Sear scallops for 2 minutes on each side, remove from pan and cover.
- Add sliced Margherita® Prosciutto or julienned Genoa Salami to heated pan, saute for two minutes. Add garlic, tomatoes and mushrooms. Saute for another two minutes. Add wine and lemon juice, cook to reduce by half by deglazing the pan. Add salt and pepper, then stir in butter until melted.
- Add scallops back into pan and cook until they are heated through. Add fresh spinach and cook until spinach is wilted.
- Place cooked pasta in the pan. Mix until pasta is well covered in sauce.
- Garnish with fresh basil and serve.

EGGPLANT PARMESAN WITH ANGEL HAIR PASTA
This is one of my most favorite recipes. The key to this is to soak the eggplant slices in warm salt water to take out the bitter taste of the eggplant. This particular recipe you don't fry the eggplant , your bake it until lightly browned , transfer to a lasagna or 9x12 baking dish to finish making this great tasting dish....

- 1. Once eggplant slices have been soaked in warm salted water (approx 2tbs salt) for approx 15 minutes. Rinse and drain eggplant and lay slices on paper towel and blot excess water. Dip each slice into beaten egg mixture, transfer to bread crumbs, coat well , place slices on non stick cookie sheet, parchment paper lined sheet. Bake in 375 degree oven for 12 minutes on each side ... or until slightly browned. Remove from oven, set aside and LOWER oven to 325 degrees.
- 2. Spread evenly approx 2/3 cup of prepared pasta sauce on bottom of baking dish. Place eggplant slices 1 each to cover bottom of sauce lined dish. Place 1 heaping tablespoon of pasta sauce over each eggplant slice spreading sauce over entire slice with back of spoon ( you can add more sauce / your choice) Place 1 heaping tablespoon of shredded chesee over each sauce coated eggplant slice. Repeat this process, (like when making lasagna) layering eggplant slices, sauce and cheese (use all the remaining cheese .. if you like a lot of cheese add extra to final topping). Set aside remaining sauce.
- 3. Bake 30-40 minutes until cheese is melted and a golden brown. Use remaining sauce to spoon over cooked angel hair / vermicelli pasta (or pasta of your choice)
- 4. Suggestion: Serve with garlic bread and Italian style green beans (sold in frozen bags )and side salad. Enjoy !!

- Preheat grill to high. Grill capsicum and eggplant 2-3 minutes per side (until lightly charred). Let cool acut into pieces.
- Put oil into non-stick pan over medium heat.
- Cook garlic in oil, then add chopped tomatos. Cook for 2 minutes until slightly pulpy.
- Add eggplant, capsicum, chives, chilli powder, basil and stock (prepared in 500ml water).
- Simmer for 5 minutes
- Add pasta toss to coat
- Sprinkle with ricotta just before serving.
