CHICKEN PICCATA WITH ANGEL HAIR PASTA
This classic piccata sauce is also a traditional accompaniment to veal medallions.

- Whisk together flour, black pepper, and paprika in a shallow dish. Dredge the chicken pieces in the flour mixture, coating evenly; set aside. Heat olive oil in a large skillet over medium-high heat; stir and cook the garlic until light brown, about 1 minute. Remove the garlic from the skillet and set aside.
- Place 2 tablespoons of butter into the skillet with the olive oil. Cook the chicken pieces in the oil and butter over medium-high heat until brown, about 5 minutes per side. Remove the chicken from the pan and set aside.
- Pour the wine into the hot skillet and bring to a boil over high heat, scraping the browned pieces from the bottom and sides of the pan. Boil the wine until it is reduced by half, about 5 minutes. Whisk in the chicken broth, reserved garlic, lemon juice and capers. Cook for 5 minutes over medium-high heat. Stir in the remaining 2 tablespoons butter and parsley. Return the chicken pieces to the skillet and continue cooking over medium heat until the sauce thickens, about 15 minutes.
- Meanwhile, fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the angel hair pasta, and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, 4 to 5 minutes. Drain well.
- Remove the chicken pieces to a serving dish and drizzle with a few tablespoons of the sauce and capers. Place the cooked angel hair pasta into the skillet with the remaining piccata sauce and toss to coat.

- Prepare angel hair according to package directions; drain.
- Heat oil in large skillet over medium-high heat.
- Add asparagus; cook and stir 10 minutes or just until tender.
- Add Barilla sauce and chicken; cook until heated through.
- Add chicken mixture to cooked angel hair in large bowl and toss well.
- Garnish with chopped parsley, if desired.

SPRING ASPARAGUS ANGEL HAIR PASTA
Another recipe for a not so local Farmers' Market here in our state. Wish I could go to it every Saturday. I've not tried this but don't want to misplace the recipe.

Steps:
- Rinse the asparagus and remove the bottom inch of the stem.
- Cut the tips into 2 inch pieces.
- Cut the remaining piece julienned.
- Set the asparagus aside.
- Bring a large pot of water to a boil, add salt.
- In a large nonstick skillet, saute the garlic, shallots and red pepper flakes in olive oil, until tender but not browned.
- Add the lemon juice and reduce by half.
- Drop the pasta and the asparagus tips into the boiling water.
- Cook until the pasta is ala dente, about 3 - 4 minutes.
- Drain for a few minutes and add to the pan.
- While the pasta is cooking add the remaining asparagus to the pan with the shallots and saute until they begin to wilt.
- Toss in the chives, the pasta and cook until the remaining water has evaporated.
- Season with salt and freshly ground pepper.
- Remove from heat and add the Parmesan cheese.
- Serve immediately.
- (When I make this a second time, I'm going to add a little lemon zest in step 7).

- In a large pot of salted boiling water, cook angel hair pasta until it is al dente, about 8 to 10 minutes. Drain, and set aside.
- In a large skillet, heat oil over medium-high heat. Saute the onions and garlic. Stir in the tomatoes, chicken, basil, salt and hot pepper sauce. Reduce heat to medium, and cover skillet. Simmer for about 5 minutes, stirring frequently, until mixture is hot and tomatoes are soft.

- Heat the oil in a pan and add the garlic and shallots.
- Cook until tender.
- Add vermouth and herbs.
- Simmer uncovered for about 5 minutes until the liquid is almost all evaporated.
- Add cream and peppers and simmer about 5 minutes.
- Remove from the heat and stir in parmesan.
- Steam the asparagus until just tender and add to the sauce.
- Cook the angel hair pasta in a large pot of boiling water until al dente.
- Drain the pasta and add it to the asparagus sauce.
- Toss it through gently until well combined.

- Lay chicken breasts on a plastic cutting board. Set a folded paper towel under each to prevent slipping while you cut the chicken into culets. Place a hand on top of one of the breasts and with a large, sharp knife, slowly slice lengthwise down the center of the chicken. About halfway through, the chicken may start to wiggle, at this point, you can peel the top half back with your hand and continue slicing all the way through. Do the same for the second breast.
- Working two or four at a time, cover the chicken with parchment or plastic, and pound with a meat tenderizer, rolling pin, or small pan, until the chicken is about 1/4-inch thick. Sprinkle both sides of the chicken generously with sea salt and pepper.
- Set a large cast iron skillet over medium-high heat. Add grapeseed oil and butter, and stir. Add two chicken cutlets and cook until a rich golden brown, 2 - 3 minutes per side. If pan starts to smoke, edge heat closer to medium. Keep cooked chicken warm on wire rack in a 200 degree F oven.
