MINI ANGEL FOOD CAKES WITH MARSHMALLOW FROSTING

Mini Angel Food Cakes with Marshmallow Frosting image

Provided by Sandra Lee

Time 35m

Yield 12 mini cakes

Number Of Ingredients 8

1 (16-ounce) box angel food cake mix
2/3 cup coconut water
1 cup sugar
1 tablespoon light corn syrup
1/4 teaspoon cream of tartar
2 egg whites
1/4 cup marshmallow cream
1/2 cup coconut flakes, for decorating

Steps:

  • For the cake: Preheat the oven to 350 degrees F.
  • Beat together the cake mix with coconut water. Fill 2 (6-count) mini angel food can pans halfway with batter. Bake until puffed, golden brown, and toothpick inserted in the center comes out clean, 12 to 15 minutes. Invert the pans onto wire cooling racks and cool completely before removing from the pans.
  • For the frosting: Bring 2 cups water to a simmer in a medium saucepot.
  • In a large glass bowl that will fit over the saucepot, combine 1/4 cup water, sugar, corn syrup, cream of tartar, and egg whites. Place on top of the saucepot and beat for 7 minutes using an electric hand mixer. The frosting will be smooth, shiny, and form peaks when the mixer is lifted from the bowl. Remove from the heat and slowly beat in the marshmallow cream.
  • Frost each cake with the icing and sprinkle the tops with coconut flakes.

NO COOK ICING

No Cook Icing image

Light and fluffy icing. Perfect for an angel food cake. You would swear it was a boiled frosting, all the taste, very little effort! I like to change it up a bit and use maple or peppermint extract instead of the vanilla.

ANGEL FOOD CAKE WITH WHIPPED CHOCOLATE FROSTING

Angel Food Cake with Whipped Chocolate Frosting image

This Angel Food Cake with Whipped Chocolate Frosting is light as a cloud. The frosting is made with freshly whipped cream and plenty of cocoa for a rich chocolate taste. This is a simple recipe my family has been making for decades.

Categories     dessert

Time 1h5m

Number Of Ingredients 8

1 Angel Food Cake
1 teaspoon Vanilla
3 cups Whipping Cream
1 1/2 cups Powdered Sugar
3/4 cup Cocoa
1/4 teaspoon Salt
1 cup of Raspberries
optional: 1/3 cup toasted Almonds

Steps:

  • You can either make the angel food cake from a mix (you just add water), or purchase pre-made from a grocery store. A few notes on making angel food cake: you need to let it cool completely in the pan and you need to let it cool upside-down or on its side. My mother also told me not to use a silicone pan because the cake can't cool property in a silicone pan. Once the cake is completely cooled, remove it from the pan. Then using a serrated knife, cut the top off of the cake, starting from about 1 inch down from the top of the cake. See the photos and this is make much more sense. Then use the knife to cut out some of the inside of the cake. Next, make the frosting. Combine the whipping cream, sugar, cocoa, salt, and vanilla. Beat with a mixer until stiff. Fill the scooped out section of the cake with frosting and raspberries. Place the top back on the cake. Frost the cake! Top with toasted almonds with you like. Keep the cake chilled until you are ready to serve it.

FROSTED ANGEL FOOD CAKE

Frosted Angel Food Cake image

Provided by Ree Drummond : Food Network

Categories     dessert

Time 1h55m

Yield 12 servings

Number Of Ingredients 10

1 cup cake flour
1/4 teaspoon kosher salt
15 large egg whites, at room temperature
1 teaspoon cream of tartar
1 1/2 cups plus 2 tablespoons granulated sugar, sifted 3 times
1 teaspoon vanilla
4 cups powdered sugar
2 sticks (1 cup) salted butter, softened
1/4 cup heavy cream
Yellow food coloring

Steps:

  • For the angel food cake: Preheat the oven to 350 degrees F.
  • Combine the cake flour and salt in a medium bowl and sift together 5 times. Set aside.
  • In a large bowl, with an electric mixer fitted with the whisk attachment, beat the egg whites until frothy (lots of bubbles but still liquid and loose). Add the cream of tartar and beat on high until stiff, 4 to 5 minutes. With the mixer on medium low, slowly sprinkle in the sifted granulated sugar. Fold in the sifted flour mixture gently until it's all combined. Sprinkle the vanilla into the bowl and fold gently.
  • Spoon the batter into an angel food or tube pan (preferably with cooling legs)--make sure there's no grease or butter in there! Smooth the top and bake until a wooden skewer stuck all the way to the bottom comes out clean, 35 to 45 minutes. (Don't open the oven while it's baking!)
  • Carefully remove the cake from the oven and immediately invert it onto its cooling legs (see Cook's Note). Let the cake cool completely while upside-down.
  • For the frosting: Beat the powdered sugar, butter and cream in a large bowl with an electric mixer until very light and fluffy. Add a few drops of yellow food coloring as desired.
  • Carefully remove the cake from the pan and transfer it to a cake plate upside-down, so that the end that was stuck to the bottom of the pan is now facing up. Frost the cake all over.

  • Powdered Sugar. To add some sweetness to the marshmallow frosting, you’ll need one cup of powdered sugar or confectioners sugar. This type of sugar is just granulated sugar that’s been ground finely and blended with a little amount of cornstarch to prevent clumping.
  • Heavy Cream. Heavy cream is whipping cream that contains 36-40% milk fat. When whipped, the cream will double its volume. For the whipped cream frosting, you’ll need two cups of heavy cream.
  • Softened Butter. For the chocolate frosting, you’ll need two sticks or one cup of softened butter. You can soften small chunks of butter by placing it near the warming stove.

  • Remove the stems from the strawberries, and place the strawberries in a pan lined with parchment paper. Sprinkle the granulated sugar over. Let the strawberries roast for 15-20 minutes (along with the cake), until they are soft and juicy. They should be easy to crush with a fork, and juice should be accumulating in the bottom of the pan.
  • Place the strawberries and all excess juice in a blender and puree. (This will smell delicious). Then use a fine mesh strainer to strain the strawberries seeds out. Keep the juice and toss the seeds.
  • Stir the lemon juice into the strawberry juice, and place in the fridge to let chill. This step is important because adding warm strawberry juice to the whipped cream frosting will melt it.

  • For the cake, place oven rack to the lower-middle position and preheat oven to 325º F. Wipe clean a large tube pan (16 cup capacity) with removable bottom. Do not grease!
  • Beat egg whites in the bowl of a standing electric mixer at low speed until the eggs are beginning to froth. Add cream of tartar and salt. Increase speed to medium and beat until whites form soft, billowy, slightly translucent mounds. Keeping the mixer on medium-speed, add remaining 3/4 cup sugar one tablespoon at a time.
  • Continue beating on medium speed until the whites form soft glossy peaks that bend over at the points. Resist the temptation to increase mixer speed, and take care not to over-beat; the batter should still flow when the bowl is tilted.
