SAUCE:
2 12 oz containers strawberries, hulled
1 12 oz container blueberries
1/3 cup sugar
1 tbsp fresh lemon juice
1/4 cup amaretto
CAKE:
1 1/4 sifted cake flour (sifted, then measured)
2 tsp vanilla extract
2 tsp fresh lemon juice
1/2 tsp almond extract
14 large egg whites, room temperature
1 1/2 tsp cream of tartar
1/2 tsp salt
1 2/3 cups sugar

Steps:

  • SAUCE: Place half of strawberries in medium bowl. Crush with fork or potato masher. Slice remaining strawberries and add to bowl. Add half of blueberries to same bowl. Place remaining blueberries in medium saucepan and crush; add sugar and lemon juice. Stir over medium heat until sugar dissolves and juices become syrupy, about 4 minutes. Cool. Add to strawberry mixture. Stir in amaretto. Let stand 20 minutes. CAKE: Position rack in center of oven and preheat to 300 degree F. Sift sifted flour into medium bowl. Combine vanilla, lemon juice, and almond extract in small bowl. Using electric mixer, beat egg whites in large bowl at medium speed until frothy. Add cream of tartar and salt and beat until soft peaks form. Add sugar 1/3 cup at a time and continue to beat until whites are stiff but not dry. Fold in vanilla mixture. Sift flour over in 4 batches, gently folding in each addition. Spoon batter into ungreased 10" diameter angel food cake pan with removable bottom. Bake until top of cake is golden brown and springy to touch, about 1 hour 10 minutes. Immediately invert center tube of cake pan over neck of narrow bottle and cool cake completely. Using sharp knife, cut around sides of pan and center tube to loosen cake. Holding center tube, lift cake from pan sides. Cut cake free from pan bottom. Turn cake out onto plate. Using serrated knife. cut cake into wedges. Place on plates. Spoon berry sauce over. Garnish each with whole strawberry, if desired, and serve.

1 tablespoon cornstarch
2 cups frozen whole strawberries, partially thawed, quartered
1/4 cup sugar
1 tablespoon orange marmalade
1 prepared angel food cake
non-dairy whipped topping (optional)

Steps:

  • Stir orange juice into cornstarch in medium saucepan.
  • Add strawberries, sugar and marmalade.
  • Bring to a boil, stirring occasionally.
  • Reduce heat to low; cook 2 minutes, stirring, or until sauce thickens.
  • Cool or chill.
  • Cut cake into 12 slices.
  • To serve, spoon sauce over each slice.
  • Garnish with whipped topping, if desired.

2 pints fresh strawberries
1 pint fresh blueberries
1/3 cup sugar
1 tablespoon lemon juice
1/4 cup amaretto liqueur
1/4 teaspoon almond extract
1 lb angel food cake

Steps:

  • In a food processor, pulse 1 pint strawberries to coarse puree. Pour into a large bowl. Slice remaining strawberries and add to bowl along with ½ of the blueberries.
  • In a small saucepan, combine remaining blueberries, sugar and lemon juice. Bring to a boil. Cook until sugar dissolves and becomes syrupy, about 3 minutes.
  • Pour blueberry sauce into bowl with strawberries. Stir in amaretto and almond extract. Cover and refrigerate 8 hours.
  • To serve cut cake into slices and spoon berry sauce over top.

1 plain angel food cake, baked and cooled
1 (8 ounce) package cream cheese, at room temperature
1 (12 ounce) can condensed milk
1/3 cup lemon juice
2 teaspoons almond liqueur or 2 teaspoons almond extract, plus
1/2 teaspoon almond liqueur or 1/2 teaspoon almond extract
2 1/2 cups sliced fresh strawberries
1 cup heavy cream
2 tablespoons confectioners' sugar
strawberry, stems removed, as garnish

Steps:

  • Using a serrated cake or bread knife, carefully cut the top 1-inch from the cake. Carefully remove and set aside. Using the tip of the knife, cut into the cake along the inner and outer edges, leaving a 1-inch border of cake intact. Using your fingers, carefully hollow out the cake between the two cuts, leaving an empty "tunnel". Tear the removed cake into bite-size pieces and set aside.
  • In a large mixing bowl using an electric mixer, beat the cream cheese until light and fluffy. Add the condensed milk and beat until thoroughly combined. Stir in lemon juice and 2 teaspoons of the liqueur. Gently fold in the cake pieces and strawberries. Spoon the mixture into the tunnel in the center of the hollowed out cake, and cover with the reserved cake top. Cover cake with plastic wrap and refrigerate at least 8 hours or overnight.
  • When ready to serve the cake, whip the cream until it begins to form peaks Add the confectioners' sugar and remaining 2 teaspoons of liqueur. Whip until the cream forms stiff peaks but is not dry. Frost the cake with the whipped cream and decorate with reserved whole strawberries. Refrigerate for up to 1 hour, or serve immediately.

3 tablespoons butter, melted
2 tablespoons balsamic vinegar

Steps:

  • In a small bowl, toss strawberries with sugar.
