MAMA'S MEATLOAF

I discovered the basic recipe years ago, and improved on it over the years. My southern mother was horrified that it wasn't made with milk, but when she tasted it she agreed it was an exceptionally good recipe. It's a family favorite, and I'm asked to take it to picnics and pot lucks.

1 lb lean ground beef
1 onion, diced
1/2 cup progresso breadcrumbs
1/2 cup catsup or 1/2 cup tomato sauce
1 egg
1 1/2 tablespoons Worcestershire sauce or 1 1/2 tablespoons honey tamari soy sauce
1 -2 tablespoon flat-leaf Italian parsley, finely chopped

Steps:

  • Some cooks put all ingredients into a loaf pan "raw", but I prefer to sauté the onions first to take the "bite" out of them.
  • Drain and set aside to cool.
  • Into a large bowl place the ground beef, bread crumbs, catsup, egg, Worcestershire sauce and parsley.
  • Add the sautéed onions to this mixture.
  • Wash your hands and delve into this mixture like a mad man, squish it between your fingers and mix it very well.
  • Form a loaf in a baking dish, leaving at least 1-inch around the sides so fat can drain off.
  • Bake at 350°F about 45 minutes or until done.
  • Serve this delicious meatloaf as is or with my recipe for curry sauce.

Better Than Mom's Sweet and Savory Meatloaf image

I never thought I'd find, let alone be able to make, a meatloaf better than my mother's electric skillet recipe. But when I wanted to make it last night, I realized that I didn't have her recipe. So I came to recipezaar and read a few popular ones and came up with my own based off my ingredients at hand and the popping flavors of herbs that I personally love. Well, don't tell mamma, but I think I'll be making it this way from now on. I'm telling you, this was the most moist, flavorful, savory and sweet (even a little spicy) meatloaf I've ever had. And I can't believe I just made it up! (I'm a little new at this.) The sauce is on the sweet side, but the herbs and spices inside give it a little kick which creates a perfect balance. Use less and more of what you need to get the taste suited to your liking. Chili powder might give it even more of a kick. Enjoy! Tip 1 - The moisture factor: A lot of meatloaf recipes call for milk, tomato paste, condensed milk, or water to add moisture. I was out of milk, didn't want to open full cans of paste or condensed milk just to waste the rest, and I didn't want to have to settle for boring water, so leftover chucky pasta sauce was a perfect substitute. It not only added some veggies, but the additional seasonings and vinegar already in the sauce meant that I didn't have to use additional vinegar, veggies, or waste full cans of ingredients just to get what I needed. Tip 2 - The healthy and economic factors/alternatives: I've had gastric surgery and as such found that ground beef was a little too fatty for my liking. I'm going to try this with ground turkey next time. I'll need to up the moisture (pasta sauce) content and will probably need to use a nonstick cooking spray (unnecessary when using fatty ground beef) on the loaf pan so that the sides won't stick. I eat a slice and then cut and freeze the remaining slices to take as lunch or have for future dinners for the rest of the week. Saves me a ton of money!

1 1/2 cups ketchup
1/2 cup orange juice
1/4 cup barbecue sauce
1/4 cup Worcestershire sauce
1 tablespoon packed brown sugar
1 1/2 lbs ground beef (may substitute ground sirloin or ground turkey)
1 medium onion, diced
1 tablespoon garlic, minced
3/4 cup chunky pasta sauce (I used tomato, onion, garlic variety. You may need to add more if you use a less fatty meat.)
1/2 tablespoon parsley
1/2 tablespoon basil
1/2 tablespoon garlic powder
1/2 tablespoon marjoram
1 cup breadcrumbs (or ground croutons)
1 tablespoon kosher salt (regular salt is just fine)
1 1/2 tablespoons black pepper
2 eggs, lightly beaten
2 tablespoons packed brown sugar

Steps:

  • PREP: Place oven rack on middle setting and preheat oven to 350 degrees. If using a less fatty meat, use a non-stick cooking spray to lightly coat the inside of your loaf pan. (If using ground beef, it is unnecessary to spray or grease your pan.). Lightly press the separate 2 tbsp of the packed brown sugar into the bottom of your loaf pan. Put like ingredients into prep bowls for ease in mixing later - this helps when you'll only have one hand (especially at least the dry ingredients of bread crumbs, salt, and pepper). Hint: thaw meat fully and bring cold ingredients (eggs, pasta sauce, sauce ingredients, etc) to room temperature prior to combining - this will aid in even cooking and correct cook time. (Waiting for items to reach room temperature is the bulk of your prep time, so your actual "work" prep time v. "waiting" prep time is about 5 min of work and 15-20 min of waiting.).
  • SAUCE: Stir the remaining tbsp of brown sugar and the rest of the sauce ingredients in a bowl until combined. Sauce should be slightly runny. With a spatula, lightly drizzle some rows of the sauce over the brown sugar in the bottom of the loaf pan. Do not fully cover. Set the remaining majority of the sauce aside.
  • LOAF: In a small skillet, sweat the diced onion over low heat. Half way through, add the garlic. (The onions and garlic do not cook inside the loaf and therefore you must heat them before.) Do not let them brown or carmelize. In a large mixing bowl, gently break up the meat with one hand (keep your other hand free and clean to hold the bowl and add in your other ingredients). When they are cool enough, slowly add in the onions and garlic until completely folded. Then add the pasta sauce, parsley, basil, garlic powder, and marjoram until blended. Next, you will alternate combining the dry ingredients (bread crumbs, salt, pepper combination) and half of the beaten eggs. Repeat dry ingredients and eggs until fully mixed. Shape mixture into a loaf and transfer it into your loaf pan. Gently press the loaf down and against the sides until you have a flat top service (as the meat cooks, it will pull away from the sides and form the classic "loaf" shape"). Pour the majority of the sauce over the top of your loaf and spread it evenly until covered (I like to keep just a tiny bity of sauce to drizzle over the loaf when there is about 10 min of cook time left, but you can add it all at this point if you like).
  • Bake for 1 hour to 1 hour 15 minutes, checking occassionally. Add more sauce when and if necessary. Let cool for at least 10 minutes before serving.

With raspberry preserves and Serrano chili's, this ain't your mama's meatloaf recipe! I always found the traditional meatloaf bland and boring. Try this one with a side of creamy Gorgonzola Mashed Potatoes and buttery greens.

3/4 cup ketchup
1/4 cup balsamic vinegar
2 tablespoons Dijon mustard
1 tablespoon sriracha sauce (or any other chili sauce with a kick)
1/2 cup raspberry preserves (or other dark, tart berry preserves)
3 tablespoons olive oil
1 large onion, diced
1 stalk celery, diced
1 carrot, diced
1 sweet bell pepper, diced (any color but green)
1 serrano chili, diced
5 garlic cloves, crushed
1 tablespoon fresh thyme
1 teaspoon dried ancho chile powder (or paprika if unavailable)
1 pinch kosher salt
1 teaspoon fresh ground black pepper
1 lb ground beef
1 lb ground pork
2 eggs
1/2 cup breadcrumbs (more on reserve if needed)
1/4 cup tequila (optional)
fresh sage leaf
pecorino cheese (optional)

Steps:

  • Preheat oven to 425°F.
  • Combine first 5 ingredients in a small bowl and whisk until smooth.
  • Heat a heavy skillet over med-high heat and add oil once hot. Sauté onions, pepper, celery, carrot, and Serrano until soft (5+ minutes). Add garlic, thyme, Ancho chili powder, a large pinch of salt, and several turns of pepper. Sauté an additional 2-3 minutes until fragrant (careful not to burn the garlic). Remove from heat and set aside to cool.
  • In a large bowl, combine half of the sauce, beef, pork, eggs, breadcrumbs, tequila, and sautéed vegetables. Mix with hands until homogeneous. Add more breadcrumbs as needed if the mixture is too liquidy. Careful not to over kneed, as the meat will become tough if overworked. Form the mixture into a loaf on the heavy skillet (if oven proof) or a Pyrex baking pan. Coat the loaf thoroughly with the remaining sauce, and cover with an arrangement of fresh sage leaves (you don't need a ton, just enough so that every slice will have one or two leaves).
  • Bake uncovered for 10 minutes at 425F then lower heat to 350F and bake for another hour or until the internal temperature is about 160°F Cover and rest for 10-15 minutes, slice, sprinkle lightly with grated Pecorino cheese, and serve.

A stick to your ribs, delicious slice of comfort food. Great cold for sandwiches the next day! I sometimes substitute matzo meal or bread crumbs for the oatmeal.

1 lb lean ground beef
1 lb sausage (such as Bob Evans or Jimmy Dean, the kind that comes in a tube)
1 small onion, finely chopped
1 cup uncooked oatmeal
1 egg
1 1/2 cups ketchup, divided
2 tablespoons brown sugar
1 teaspoon dried mustard
cooking spray

Steps:

  • Preheat oven to 350.
  • In a large mixing bowl, combine ground beef, sausage, chopped onion, egg, oatmeal and 1/2 cup of the ketchup.
  • Mix together thoroughly. The best way to do this is with your hands!
  • Spray a large baking dish with cooking spray, then form the meatloaf into a loaf shape in the baking dish.
  • Bake for one hour.
  • Mix together one cup of ketchup, the dried mustard and the brown sugar.
  • Spoon over the meatloaf, then bake for 10 more minutes.
  • Allow the meatloaf to rest 5-10 minutes before slicing and serving.
  • Enjoy!

1 cup dry bread crumbs
1 teaspoon salt
1/4 teaspoon pepper
2 large eggs, lightly beaten
1-1/2 pounds ground beef
1 teaspoon dried minced onion
1 can (15 ounces) tomato sauce, divided
1/2 cup sugar
2 tablespoons brown sugar
2 tablespoons cider vinegar
2 teaspoons prepared mustard

Steps:

  • In a large bowl, combine the bread crumbs, salt, pepper and eggs; crumble beef over top and mix well. Add onion and half of the tomato sauce. Press into a 9x5-in. loaf pan. , Bake at 350° for 50 minutes. In a saucepan, combine the sugars, vinegar, mustard and remaining tomato sauce; bring to a boil. Pour over meat loaf; bake until no pink remains and a thermometer reads 160°, about 10 minutes longer., Freeze option: Securely wrap and freeze cooled meat loaf in plastic wrap and foil. To use, partially thaw in refrigerator overnight. Unwrap meat loaf; reheat on a greased 15x10x1-in. baking pan in a preheated 350° oven until heated through and a thermometer inserted in center reads 165°.

This is the meatloaf recipe that I grew up on, and no matter how many different one's I try, I always go back to this. Since I really don't like to measure too much, I usually put the meat, egg, onion, bread, milk, and pepper all together in the bowl first and then squirt the ketchup all over the top. Then, I do the same with about half the amount of golden brown mustard. The leftovers also make great sandwiches with some ketchup!

5 slices bread, broken up
1 egg, beaten

If you are looking for a meatloaf that is slightly different with a sweet twist. This is perfect. My family doestn't like the traditional meatloaf. It's funny because my husband will bring this recipe up to people he doesn't even know sometimes and there for awhile my one teenage son was asking for it at least twice a week. That always makes me feel good. Anyway... Give it a try and I hope you like it as much as my family does.

2 lbs ground beef
2 1/2 cups butter flavored crackers
1 onion
1 carrot
1 stalk celery
1 bell pepper, any type
2 eggs
3/4 cup ketchup
1/4 cup brown sugar
1 cup water
1 cup ketchup
3/4 teaspoon salt
2 tablespoons mustard
1/2 cup brown sugar

Steps:

  • Cut up the onion, carrot, celery and bellpepper and put it in a frying pan with water on medium to cook until it is soft and the onion starts to look a little translucient. If you need to add a little more water that is okay but when you add them to the ground beef mixture DO NOT add any liquid that is left. I turn them off to cool a bit while I start adding the other ingredients in a bowl.
  • In a large bowl mix the ground beef, crackers(or saltines). Make sure you crush the crackers real good. Add the eggs, 3/4 ketchup, 1/4 brown sugar and the veggies that you cooked. Mix together until blended.
  • Press together into a square pan. I use a larger pan instead of a meatloaf pan because I sometimes will add a little bit more meat and I like the room for the sauce.
  • Bake for 1 hour at 350 degrees in a preheated oven. While the meatloaf is cooking mix together the ingredients for the sauce, 1 cup ketcup, salt, mustard and 1/2 cup of brown sugar.
  • After 1 hour drain any excess grease from your pan and add the sauce on top and cook for an additional 15 minutes.
  • Enjoy !
