INSIDE-OUT GERMAN CHOCOLATE CAKE



Inside-Out German Chocolate Cake image

1 ½ cups granulated sugar
1 ½ cups unbleached all-purpose flour
9 tablespoons unsweetened Dutch-process cocoa powder (I used Droste.)
3/4 teaspoon baking powder
3/4 teaspoon baking soda
3/4 teaspoon salt
3/4 cup whole milk
6 tablespoons unsalted butter (melted)
1 large egg
1 large egg yolk
3/4 teaspoon vanilla extract
1/8 teaspoon almond extract
3/4 cup boiling-hot water
7 ounces sweetened flaked coconut
4 ounces coarsely chopped pecans
28 ounces sweetened condensed milk (2 14-ounce cans)
1 tablespoon vanilla extract
pinch sea salt
20 tablespoons unsalted butter
10 ounces fine-quality bittersweet chocolate (60 to 70% cacao, finely chopped)
3 tablespoons light corn syrup

Steps:

  • Preheat the oven to 350°F. Set racks in the upper and lower thirds of the oven.
  • In the medium bowl, sift together sugar, flour, cocoa powder, baking powder, baking soda, and salt into a large bowl. In the bowl of the stand mixer, mix on low the whole milk, butter, whole egg, yolk, vanilla, and almond extract just until combined. Add the flour mixture to the egg mixture and mix on low speed until the dry ingredients are wet, then beat on high speed for 1 minute. Add the boiling water and mix on low speed just until combined. The batter will be very thin.
  • Pour the batter into the three prepared cake pans, dividing it evenly. Put pans in the oven, two on the lower rack and one on the upper rack and bake for 12 minutes. Switch the pans and rotate them 180°, then bake for another 10 to 12 minutes, until a toothpick comes out clean. Watch the cakes carefully so that they do not dry out.
  • Cool the cakes in the pans on a wire rack for 15 minutes. Run a thin knife around the edges of the cakes and then turn them out onto the wire rack. Carefully peel away the parchment and allow to cool completely.
  • Move top rack to the middle of the oven. Reduce oven temperature to 325°F.
  • Spread the coconut in the rimmed baking sheet. Bake until golden, 12 to 18 minutes, stirring occasionally. Remove pan from oven.
  • Increase oven temperature to 425°F.
  • Pour the condensed milk into the 9-inch deep-dish pie plate and cover tightly with foil. Put the pie plate in the roasting pan and fill with hot water until the water reaches halfway up the pie plate. Bake for about 45 minutes, then add more hot water to the pan as necessary. Bake until the milk mixture is thick and brown, about 45 minutes more. Remove pie plate from water bath. Stir in the coconut, pecans, vanilla, and salt. Cover with foil and keep warm.
  • (Make while the dulce de leche is baking.) Melt butter in the 3-quart saucepan. Turn off the heat and remove the pan. Stir in the corn syrup and chocolate until the chocolate is completely melted. Pour 1 cup of the ganache into the small bowl and chill for about 1 hour, until it is thick and spreadable. Keep the remaining ganache in the pan at room temperature.
  • Put 1 cake layer on the covered cake round and set it on a rack over a baking pan. Set a spatula in the cup of water. Drop half of the dulce de leche filling by spoonfuls evenly over the layer and gently spread with the wet spatula. Continue dipping the spatula in the water so that the filling spreads more easily. Add the next cake layer and top with the remaining dulce de leche filling, spreading the same way.
  • Add the final cake layer and spread the chilled ganache evenly over the top and around the side of the cake. Warm the room temperature ganache over low heat, stirring, until glossy and pourable, about 1 minute. Pour the ganache over the top of the cake, making sure that it flows evenly over and around the sides. You can gently shake the rack to help distribute the ganache. Chill the cake in the refrigerator for 1 hour, them serve at room temperature. Keep any leftovers in the refrigerator.

This candy will satisfy any sweet tooth. Your friends will never guess it takes less than 30 minutes to make. This recipe is adapted from Velvety Pecan Candy in 1001 Ways to Cook Southern.

2 1/2 c pecans, coarsly chopped
1 1/2 lb vanilla almond bark, coarsly chopped
1 can(s) sweetened condensed milk
1/4 tsp salt
1/2 tsp pure vanilla extract
1/2 tsp almond extract

Steps:

  • 1. Preheat oven to 350 degrees
  • 2. Spread chopped pecans on cookie sheet and bake for 8-10 minutes until toasted.
  • 3. Line a 15x10 inch jelly roll pan with wax paper; lightly spray with Pam or Bakers Joy
  • 4. Microwave candy coating, condensed milk and salt together in microwave safe bowl at high for 2-4 minutes. Stir at one minute intervals until melted and smooth.
  • 5. Stir in vanilla, almond and pecans; spread in an even layer on prepared pan.
  • 6. Cover with wax paper and chill until set - about 1-1/2 hours.
  • 7. Turn candy out onto cutting board and cut into squares. Cover and store at room temp.

SOUTHERN PECAN DIVINITY CANDY

I don't recall exactly how the conversation came about, but as a new bride, I discovered that my husband loves Southern Pecan Divinity Candy. Divinity is a traditional nougat-like Southern candy made with vanilla and pecans.

Number Of Ingredients 7

2 1/2 cups granulated sugar
1/2 cup light corn syrup (I use Karo)
1/4 teaspoon salt
1/2 cup water
2 egg whites
1 1/2 teaspoon vanilla extract
1 1/2 to 2 cup pecans (chopped)

Steps:

  • Combine sugar, corn syrup, salt and water in a 2 quart saucepan. Stir only until the sugar dissolves. Cook to 260 degrees (hard ball stage). I highly recommend using a food thermometer to make sure you get the syrup to the right temperature.
  • With an electric mixer, beat egg whites until stiff peaks form. When the syrup is ready, slowly pour it over the egg whites while beating on high-speed. BE CAREFUL! The syrup is hot and it will burn the fool out of you if it splatters.
  • Add vanilla and continue beating until the candy holds is shape.
  • Add pecans, mix well.
  • Drop by teaspoons onto waxed or parchment paper.
  • Let the candy dry on the paper before attempting to stack it in a candy dish or storage container.

2 cups melted butter (4 sticks, one pound)
3 cups white sugar
1 1/2 cups brown sugar
4 teaspoons vanilla
4 teaspoons baking soda
2 teaspoons salt
4 beaten eggs
5 cups flour (no need to sift)
3 cups chocolate chips
4 cups chopped pecans

Steps:

  • Preheat oven to 350 degrees F., rack in the middle position.
  • Melt the butter. (Nuke it for 3 minutes on high in a microwave-safe container, or melt it in a pan on the stove.) Mix in the white sugar and the brown sugar. Add the vanilla, the baking soda, salt and mix. Add the eggs abd stir it all up. Add half the flour, the chocolate chips, and the chopped pecans. Stir well to incorporate, Add the rest of the flour and mix throughly.
  • Drop by teaspoons onto greased cookie sheets, 12 cookies to a standard-size sheet. If the dough is too sticky to handle, chill it slightly and try again. Bake at 350 degrees F. for 10-12 minutes or until nicely browned.
  • Let cool two minutes, then remove cookies from the baking sheet and transfer to a wire rack to finish cooling.

2 cups sugar
1 cup water
1 jar (7 ounces) marshmallow creme
1 teaspoon vanilla extract
1-1/2 cups chopped pecans

Steps:

  • In a large heavy saucepan, combine the sugar and water. Cook over medium heat, without stirring, until a candy thermometer reads 250° (hard-ball stage). , Remove from the heat; stir in the marshmallow creme, vanilla and pecans. Continue stirring until candy cools and begins to hold its shape when dropped from a spoon. , Quickly drop by heaping teaspoonfuls onto waxed paper-lined baking sheet. Store in an airtight container at room temperature.
