CAJUN SAUSAGE & GRITS



Cajun Sausage & Grits image

4-6 Andouille Sausage Links
8 ounces sharp white cheddar
1 red pepper, diced
1 yellow pepper, diced
1 green pepper, diced
1 sweet Vidalia onion, diced
1 tbsp Tony Chachere's
1 tbsp tomato paste
1 cup grits
3-4 garlic cloves, pressed or finely chopped
Green Tobasco to taste
1 tablespoon canola oil
3 cups chicken stock

Steps:

  • Pour the chicken stock into a large saucepan and set to medium-high to bring to a boil. Stir in the grits, reduce heat to low, and cover. Simmer for 8-10 minutes, stirring occasionally.
  • While you're waiting for the grits, heat oil in a large skillet. Add the peppers, onions, and garlic, sprinkle with Tony Chachere's and sauté in heated skilled for 2-3 minutes until they've softened.
  • While peppers and onions are cooking, slice the sausage links at a diagonal angle, about 1/2 inch thick. Add the sausage to the sauté pan with peppers and onions and cook 3-4 minutes, stirring occasionally.
  • Add the tomato paste and stir together with the sausage and pepper mixture until blended. Reduce heat to low and cook for another 3-4 minutes until the sausage is cooked through.
  • When the grits are done, remove from heat and stir in cheddar cheese. Add salt and pepper to taste.
  • Serve a heaping spoonful of grits, top with sausage and peppers, and add Green Tobasco to taste.

15 Minute Andouille Sausage and Grits image

A delicious Cajun Andouille Sausage dish made in 15 minutes and served over Cheese Grits.

1/2 medium onion {chopped}
2 cloves garlic {minced}
13 oz. Andouille Sausage {chopped}
1 14.5 oz. can petite diced tomatoes
1/2-1 tsp cajun seasoning {more or less depending on how spicy you prefer the dish}
1 cup roasted chicken {optional}
1/4-1/2 cup chicken broth
2 cups water
2 cups chicken broth {optional-can substitute with water}
1 cup 5-minute Grits
2 cups shredded cheese {I used cheddar/jack}
1/2-3/4 cups milk or heavy cream

Steps:

  • In a large frying pan over medium-high heat, add 1 tablespoon of olive oil. Once heated, add onion and garlic. Cook until translucent. Add chopped Andouille Sausage to onion and garlic and cook until the sausage is slightly browned. Add the petite diced tomatoes and Cajun seasoning, cook for 2 minutes. Add the roasted chicken {optional}. If the mixture is too dry, then add 1/4-1/2 cup of chicken broth. Simmer until Grits are ready.
  • Bring water and chicken stock to boil. Slowly add grits to boiling water/broth mixture. Reduce heat to medium-low and cover. Cook for 5 minutes or until the grits are thick, stirring occasionally. Remove from heat and add shredded cheese and milk. Stir until smooth and cheese has melted.
  • To serve: Spoon a helping of Cheese Grits into the bottom of a bowl and top with a large spoonful of Andouille Sausage mixture, sprinkle with sliced green onions and eat.

1 cup quick-cooking grits
2 teaspoons vegetable oil
1/2 pound andouille sausage, sliced into 1/4-inch rounds
2 garlic cloves, minced
2 scallions, white and green parts separated and thinly sliced
4 teaspoons all-purpose flour
1 1/4 cups low-sodium chicken broth
1/4 cup heavy cream
1 pound medium shrimp, peeled and deveined
Broiled Tomatoes, optional
Coarse salt and ground pepper

Steps:

  • In a medium pot, bring 5 cups water and 1 teaspoon salt to a boil over high. Whisk in grits and cook, stirring constantly, until thickened, about 2 minutes. Reduce heat and simmer 15 minutes.
  • Meanwhile, in a large skillet, heat oil over medium-high. Add andouille and cook until golden, 3 to 5 minutes. With a slotted spoon, transfer andouille to a plate and reduce heat to medium. Add garlic and scallion whites to skillet and cook until fragrant, about 30 seconds. Stir in flour. Whisk in broth and cream. Cook, stirring and scraping up browned bits from skillet, until thickened, about 3 minutes. Add shrimp and andouille and cook, stirring constantly, until shrimp are opaque throughout, about 5 minutes. To serve, top grits with shrimp mixture and sprinkle with scallion greens. Serve with tomatoes if desired.

4 tablespoons (1/2 stick) butter
8 ounces andouille sausage or hot links, cut into small cubes
3 3/4 cups (or more) low-salt chicken broth
1 cup instant grits

Steps:

  • Melt 1 tablespoon butter in heavy large saucepan over medium-high heat. Add sausage and sauté until brown, about 3 minutes. Add 3 3/4 cups broth and bring to boil. Gradually whisk in grits. Reduce heat to medium and simmer until mixture is thick, stirring occasionally, about 8 minutes. Mix in more broth by 1/4 cupfuls to thin, if desired. Stir in remaining 3 tablespoons butter. Season grits to taste with salt and pepper and serve.
